    Tried the brisket from the truck at the Tastes of Wisconsin festival and damn! This was some pretty good brisket. Loved the sweet and tangy BBQ sauce

    Drove by their truck when they were parked on Hwy 100 in West Allis one night and decided to stop. They were just getting ready to close, but were nice enough to take our order. We tried the ribs, pulled pork nachos and the brisket. The ribs were delicious and done correctly where the meat still stays on the bone and is not falling off. Their brisket was served shredded and had good smoke flavor to it. Their coleslaw was probably some of the best I have had. Unfortunately they ran out of beans; will have to try next time.

    Finally got to try this truck at the West Allis a la Carte fest on Sunday. I ordered the 4-meat sampler, which includes 3 oz. of beef brisket, pulled pork, pulled chicken, one spare rib, and corn bread. Everything tasted pretty good. The chicken appeared chopped and was premixed with one of their house BBQ sauces. The chicken was very tender, had good flavor from the sauce, and I did not encounter any dry pieces. The pulled pork had a hint of smoky flavor and was served without a sauce, as it should be. The meat was mostly tender and with good flavor from the seasoning. The beef brisket was also served without sauce and was chopped instead of sliced, which I commonly see. With this method, they combined the fatty part of the brisket with the lean part to balance out the texture and prevent dry brisket. I thought it was clever and resulted in great flavor from the seasoning and fat mixed in. The platter included one pork spare rib and two pieces of rib tips. I was fine with the sauce on the rib tips, but would have preferred the rib served without the sauce, so I could taste the flavors of the rub and smoking process. The meat was also very tender and fell off the bone, which a lot of people like, but in the smoked BBQ world, it means the ribs were over cooked and could lead to dry meat. I did have one dry bite, but that is minor. You should have to gnaw on the rib bone a little to get the some of the meat off. Still, I liked the flavor of the sauce. I will ask for no sauce next time. The corn bread was very soft and moist (sorry to those who hate that word, but there isn't a better word to describe it, and I didn't invent it), so another hit there. Solid smoked BBQ from this food truck. I would eat their food again and recommend you try them.

    I threw 80 of this in the trash. Oily, boiled ribs in whatever this sauce is supposed to be was the biggest disappointment of my bbq life. Piece of cornbread was good.

    The pulled chicken sandwich, bigger than normal because Alex was killing off what he had left with killer beans and cornbread.

    Ok I have finally had every meat on the menu now and the pulled chicken sandwich was today's offering with the fantastic beans and cornbread. TODAYS pulled chicken sandwich PICTURE shows a bigger than normal sandwich because Alex said he was killing off the last of the pulled chicken and piled on my sandwich. The pulled chicken chicken came on the plain white bun like all the other meats so the meat speaks for it self. Once again the pulled chicken was moist with a nice smoke flavor like all the meats, I will admit that Alex has great consistently with the quality and moistness of his BBQ. My final thoughts on Firewise BBQ and why it's my favorite local BBQ place is I really like the taste of his smoke flavor coupled with the moistness of the meats, no sauce is needed because the meats really stand on there own but on the sandwiches I like a couple splashes of the tangy BBQ sauce just a complement. Alex also does something that any one who reads my BBQ reviews knows is a pet peeve of mine, poor sides and even though Alex does not offer very many, he does have great beans and cornbread. Alex puts out great quality BBQ with consistent quality with everything he serves, he will be missed at seasons end.

    I had Fire Wise Barbecue at the Red, White and Barbecue festival in Westmont, IL We had the "4-meat special" which was a sampler platter of pulled chicken, pork and beef with a rib and biscuit. Very nice platter for $19.00 it's too bad there were SO many different BBQ facilities at the festival because I believe many of the locals went for "local fair"rather than trying the "out of stater".

    I found their trailer in the Menard's parking lot on May 7th, 2020 around 3pm. Now let say I only have three stars because they were out of many menu items due to being sold out. I guess I should have found them earlier. We were able to order pulled pork sandwiches from the few items left. The meat was shredded beautifully and still moist. With some sauce that they offer it was a perfect sandwich. I did add a little salt which is just my preference. I will be back to visit them soon so I can share more insight she feedback.

    It was a rainy day in the Menards parking lot when I happened across FBC. Was super excited for some BBQ. Ordered a pork belly sandwich and some grits. The grits were insanely salty. No stranger to salt but these were just way over salted. The Pork Belly sandwich was ok, very fatty. Pork could have used some time on the grill to crisp up a bit. Liked the tangy BBQ sauce. Will have to try again some time.

It's open Tuesday-Saturday for lunch and dinner. Parking is on the street and is free for 2 hours which is plenty of time to dine here. It's nice inside and has a full bar. I ordered the Smokehouse Half Chicken platter for $18. It came with cole slaw, cornbread and one of their side dishes. I chose the Smokehouse Beans and it took about 10 minutes for the meal to arrive. While I waited I checked out the 4 sauces that were on the table and liked the KC mild the best. When the food arrived I noticed the large 1/2 chicken and the sides. The chicken was juicy and delicious with a smokey flavor. Paired with the KC mild sauce, it was yummy (4). Yes, their chicken is very good but it was the side dishes that really impressed me. The beans were rich in flavor and savory. Perfect (5). The cole slaw was creamy and smooth tasting making an excellent palate cleanser (5). The cornbread was soft and warm with that original cornmeal aroma (5). And finally, I ate the 2 pickle slices added on the plate. Fresh tasting with a firm texture and perfect flavor (5). The table service by Maxie was friendly and efficient. I wish I could have had one more meal here to test other menu items before giving this score. My experience has found that many bar b q restaurants prepare very good meats but it's their side dishes that make some of them stand out. The chicken was very good and I would order it again but the side dishes really impressed me. Even the pickles! For those reasons, I give Double B's a 5 score. This is as good as it gets.

What type of customer service is that and why would you not try to remedy it? My guess is that they gave one of our burgers away and had to now lie to us. We did what this store told us to do to make sure we got burgers when we ordered. This isn't the first time this location has done this before we picked up after we called and didn't have all 3 burgers we ordered. How rude can you be when this was something you told us to do! I will never ever go here again and that sucks because we support veterans and loves this place! But the customer service supersedes all, I won't be treated disrespectfully especially after you told us to order ahead of time but 1 hour. Then the manager (African American bigger man) as my husband was leaving wants to be slick at the mouth and say have a wonderful day, just to agitate him more and it worked because my husband now cussed back at him.

I ordered the meat only for $10 because the sides didn't interest at all and did my car smell so good so I pulled over because I couldn't wait to try them. The rib tips had a nice looking bark that was seasoned nicely and tasty I thought. The rib meat had that little chew that I like because I don't like the mush fall off the bone meat. The rib tips were meaty and not all cartilage with most of the meat chopped off like some places. The meat was very tasty with that bark and a deep grilled flavor that I really liked, like a backyard bbq. I really like that he uses charcoal to cook his food because it's so hard to find places that cook with charcoal anymore and he seems like a like a really nice guy and he let me take my pictures which helps his business. I didn't even use the bbq sauce because the meat stands on its own by the way. There is no bbq in the immediate area that I can think of so this is a nice addition to the neighborhood if your looking for some tasty rib tips here you go. I would definitely go back for some rib tips again because as much as I like ribs I do like doing tips from time to time.
