Fiscalini Cheese is the absolute best! We first discovered them several years back when we stumbled across San Juaquin Gold at the Oakville Grocery in Napa Valley. Unable to find these quality cheeses locally in Austin, TX, we now have it direct shipped from the farm. They take great care to make sure it arrives safe and sound. One afternoon my son went to the store and came back with a piece of Craft Beer Cheddar among other things. He said "I got some Beer Cheese!" I said "You mean like 'Pub' Cheese?" He said "No, there's actually Beer IN the cheese!" "No way," I thought. "WAY," he said, grinning. That was our introduction to Fiscalini Farmstead, a dairy and Cheese maker Par Excellence, here in California's Central Valley. Needless to say, on future shopping escapades, we sought out the "Beer cheese," when one sad day, they were OUT! [Sad face]. I found their website and proceeded to promptly order their 'Everything but the kitchen sink" variety pack, adding an extra Craft Beer Cheddar for good measure. We're about through that assortment and, wow! This is some excellent cheese. The Farmhouse Cheddar we started sampling first, is good, but the San Joaquin Gold and Aged Cheddar were great!. We also enjoyed the Purple Moon and Habanero Cheddar, and to a lesser degree the Balsamic & Onion and Truffle Cheddars. Say cheese! I love cheese, pretty much every kind except for Swiss. Not a fan. To me, it smells like stinky feet and tastes icky. Fiscalini Farmstead has placed Modesto on the map with it's award winning cheeses. That's right...award winning. Their cheddar is now number one in the world. It is the first time an American cheddar has won the coveted award. I've noticed Fiscalini cheese on the menus of some fine dining restaurants in Nor Cal and So Cal. The cheeses are really yummy. Artisanal cheese? Yes, please! Fiscalini Farmstead is fromage-tastic! Not only is the cheese SO delicious and fresh, but the Fiscalinis are all super nice and made our tour group feel so welcome. I came here on a college field trip for a History of Food course and John Fiscalini personally gave us a tour of the farmstead. He was very informative about the process of making cheese and his master cheesemaker was also very friendly and willing to answer all of our questions. Best of all we got to eat fresh cheese curds! YUMMY! I love their San Joaquin Gold cheese and it's not surprising that it's won several international cheese awards (didn't know there was such anything before my visit). The Purple Moon variety is also very tasty and it's purple outer layer makes for a fun and unique presentation. You can order all of their different cheeses from their website, and I've also seen Purple Moon at Costco and Safeway. Can I just say how much I LOVE their object shaped cheddar cheeses (check them out in the picture section)? They have a cow and a heart, and a snowman and Christmas tree for the holidays! Fast shipping, great packaging. The purple moon cheese I purchased was good, but not what I expected after trying some at a restaurant in Las Vegas. This one came packaged with wine over the cheese and a sharper flavor. It is still good, but not what I expected. The SanJoaquin cheese was great and would definitely buy again. This is some of the finest cheddar cheese out there. I have always been a huge fan and made a point to buy their delectable cheeses whenever I saw them in local markets. Also, when I visited the farmstead, the man who greeted me couldn't have been lovelier. WOW! This place is the shit. I am proud to say that they have the best cheese in the world and they have the Gold medals to prove it. I am not a big fan of just eating cheese,crackers and sipping on wine. I wanted to get my honey some cheese. I had just recently took a fun field trip to a dairy farm in Modesto, Ca (in the fertile San Joquain Valley), where a small local artisnal cheese producer also makes its home--FISCALINI FARMSTEAD CHEESE. Here I got to watch a shift make a batch of cheese, cuz I was invited by a friend, tours are available through appointments only, though the website fiscalinicheese.com will save you the travel, but not the experience. All the milk that produces their cheeses come from their cows on the farm. Only about 10% of the milk production goes to the making of their quality cheese, the other is sold as a commodity to wholesalers. So they are a dairy first who eventually got into the cheese CRAFT. (Notice that's Craft with a "C" not KRAFT with a "K") Important point because they are trying to create a gap between them and industrial food producers as KRAFT FOODS, INC. All their cheese uses super fresh raw milk (the cows are within viewing distance), and raw meaning unpasteurized. This type of milk produces a very unique and unfiltered type of cheese which is full in flavor and texture. Refer to their website for their offerings, but I will recommend a few here which were memorable. Cheddar is one of their specialties, but it is not the orange variety. They offer white cheddars of different ages, all differing in characteristics. The youngest, round 6-8 months aging is tangy yet creamy. The BANDAGE WRAPPED AGED CHEDDARS ranging from 18-24 months are drier in texture, but more complex in flavors. I tend to eat these with nuts and fruits with wine for dessert after a good meal with friends. The SAN JOQUAIN GOLD is a fontina style cheese but made unique by Fiscalini. It's semi firm with a mild but nutty flavor. Great for snacking or traditional cooking applications ie salads/sandwiches. The LIONZA an alpine style swiss cheese was a total treat. Less salt than the cheddars but just as complex and satisfying. The melting quality is exceptional, so this melted on bread or potatoes is yum-o-riffic. Their product is in limited distribution, select Costcos, Whole Foods, and specialty cheese markets. If you can't find it, you can get it shipped through their website. There is one product which is distributed quite greatly which is their PURPLE MOON cheese which is their young cheddar soaked in red wine. It has a purple exterior but creamy in the middle. Though it isn't bad it just seems more like a marketing tool for them, since it is a good seller. But to me they have so many other products which are more worthy in an epicurean sense. Are you concerned about exposure to Genetically Modified foods? Fiscalini is feeding GMO Corn & Soy to their animals. You can verify this by emailing the company, they will inform you that yes they do feed the GMO feed to their animals and they are proud of it. Since we don't have labels the only way to know is ask before buying and assume it does have GMO ingredients unless it is organic. read more
