I had the Roma sandwich today. The tomatoes are roasted and drizzled in olive oil. Then they are places between slices of Asiago cheese bread slices with butter & parmesan, Mozzarella, Provolone, Romano and Fontina cheeses for a soft delicious center between perfectly crisp and toasted bread, all done on their flat top grill. My favorite Gouda Girls sandwich is still, and likely forever will be, their Wisconsin Cheese Steak, served with grilled onions, fresh mushrooms, and choice of cheese, which now includes a new and exclusive beechwood cold smoked gouda. That cheese is amazing and I loved it on my cheese steak! Today's mac n cheese flavors included chipotle cheddar with Andouille sausage. I've had that one before and it rocks! The Gouda Girls are often at Chill on the Hill in Bay View, members nights at the zoo and other events and corporate locations. Find them around town and eat their food! read more

GLUTEN FREE GRILLED CHEESE. Need I say more? My gluten free tribe knows how hard it is to find these foods. Ever since the closing of the late, lamented Melthouse on Kenilworth, there has been nowhere for a gluten free foodie to get a gourmet grilled cheese sandwich in Milwaukee. Search no more!! They have a large menu of hot sandwiches, most of which can be made gluten free. On my first visit I tried the Havarti Hottie, a fabulous combination of Havarti and ghost pepper cheeses, thick bacon, and fig jam, all grilled to toasty perfection on GF bread. The sweetness of the jam nicely cut through the slight heat of the pepper cheese. I was blown away by how delicious the sandwich was. I know I have to come back and try all the other ones. I highly recommend this spot as downtown's best kept secret. Great place to meet people for lunch. Easy and ample (metered) street parking nearby. Tons of sunny (indoor) seating. And it's a mini food court, with three other restaurants so your friends have choices. One week later: I returned to try the Cheesesteak on gluten free bread. I got it with all the fixings:. Onions, peppers, mushrooms. I must say, everything was great EXCEPT the steak. For one thing, it was cut in chunks, which I thought was weird for a Cheesesteak. Worse, the meat was all gristle. I could not chew it. I ended up taking all the meat out of the sandwich and eating it that way. Also, the sandwich would have been easier to eat if it had been cut in half. So anything that has to do with cheese is pretty much great in my book. Grilled cheese is one of my favorites but I always seem to have an issue with paying a lot for something that doesn't cost much to make. I tried the Roma sandwich at Chill on the Hill this week and it was pretty tasty. I feel like for $5.75 (or close to that) there should have been more tomato on the sandwich. I could really taste the roasted flavor and just wish there had been more slices or thicker slices of tomato. And maybe even thicker bread with a nice pesto spread or something. The ladies working were very friendly. I didn't try anything else so I can't speak to the rest of the menu. Overall, good food but if they are charging that much I wish they would amp up the sandwich a little bit. read more

Truly wish I could rate Gouda Girls food...was dying and have been dying to try their Triple grilled cheese sandwich, but as a former resident of Milwaukee who moved out to the country prior to The Gouda Girls existence, I figured it would be a only-when-I-went-to-the-big-city happenstance. That occasion finally came earlier this summer when one of my nieces was "interested" in a food truck event in Milwaukee and my husband and I agreed to meet her there. Looking at the food truck line-up, there was The Gouda Girls. I practically drooled when I saw their offerings and with an overwhelming appetite for grilled cheese and plans to get some information for another niece who was getting married and looking for an innovative caterer/fun food truck for her reception, we hit the road to sample the best of Milwaukee's food trucks. And maybe that is why they weren't there... See, I can't tell you if they are the best, worst or somewhere in-between because The Gouda Girls were a no-show. Sadly, this has now officially become a pattern for The Gouda Girls as I just returned from the Taste of Fond du Lac and guess what? The Gouda Girls were a no-show...again. No warning, no bi-polar Facebook messages that go from ultimate praise for their employees to lamenting how their employees let them down again or a health inspector mandates their truck be parked by a specific time and poor time management just doesn't make that possible. YOUR business, YOUR problem and if YOU can't keep YOUR commitments, do not expect those with no stake in the claim to keep them for you, or overextend YOUR business to the point you can't handle it. Is all the PR from signing up for events you do not show up for worth the loss of customers who have simply given up or developed such contempt they would not consider ordering from you if you were the last food truck on the planet? Maybe this is your marketing plan...odd, but I recommend you go the route of actually delivering on promises and letting people judge your food and not the lack of. I definitely would not and cannot recommend The Gouda Girls for any sort of event at this point, not unless you are a masochist and want to be disappointed. For their grilled cheese? I wouldn't know...and am giving up after putting far too many miles on my car trying to find out. read more

So after trying to get a bit of Gouda Girls' offerings for probably close to a year, I learned that they just opened up a store location (rather than just their regular food truck). It is located at 1125 N 9th St Milwaukee, WI 53233. After such a long wait and so much anticipation, I was not disappointed. The Triple was bastion of gooey goodness. It may not be good for you, but it tastes GREAT. For all you traditionalists out there, this grilled cheese will not disappoint you. For all you adventure seekers, this grilled cheese will demonstrate that adding sauces, meats, and other items to the grilled cheese isn't always necessary. I really wanted this to be better. I've heard about the Gouda Girls, but last week was the first time I ever saw them at Schlitz Park. I was ecstatic they were there, even so much so that I walked out in the rain to hit them up. I grabbed the Pig and Tom.....smoked turkey and bacon and it was.......decent at best. Maybe I was at fault for comparing it to something like Tom and Chee or the Melthouse Bistro....but it wasn't very good at all. In an effort to save time, the sandwiches are made up ahead of time, so you don't have a choice on bread at all. The whole grain bread just didn't do it for me. I kind of felt like the sandwich was microwaved, but I thought to myself that it couldn't be. Not satisfied with that sandwich, I decided to pony up another 3 bucks for the basic grilled cheese and man.....that was just awful. Everything I have tried has been great. They are constant in relation to flavor or basically everything they offer. I'm actually happy when I can catch their restaurant being open. My schedule doesn't allow me to swing by as often as I would like. Also, their macaroni and cheese is by far the best mac & cheese I have tried in the city of Milwaukee. I just love their PBR mac. Well-executed sandwiches, served with a smile. I'm going to track the truck down this summer, and I'm bringing friends. This RV-sized food truck was at Sassy Cow Creamery's 5th anniversary. A friend and I bought sandwiches for ourselves and our kids, and were delighted with what we received. My BLT-C was amazing. A hoagie roll held slices of smoked Gouda, apple-wood bacon, baby greens, and tomato slices. The smoked Gouda harmonized with the bacon, elevating this beyond any BLT I've ever had. The Triple was a great take on the standard grilled cheese, incorporating Colby/jack, cheddar, and muenster. Nothing pairs with cheese like more cheese. My youngest really enjoyed The Mac, which had slices of cheese and a layer of mac & cheese between the bread. My friend's black bean burger was tasty and appeared to be "homemade", but even the avocado couldn't bring it up to the level of the cheese sandwiches. read more

Gouda Girls (formerly Chubby Cheese Truck) is a frequent lunch option at my place of employment. They also happen to be my favorite. They have an extensive menu with a variety of grilled cheese and other sandwiches of which the main ingredient is cheese. They also have a few other fun things like a philly cheesesteak and a veggie burger. I love love love the philly cheesesteak. They also serve a variety of specialty rice krispy treats. The staff is all very friendly. Their prices are reasonable for lunch - especially when I don't have to drive to get it. read more

The Gouda Girls, formerly the chubby cheese truck, used to come to my place of employment in Menomonee Falls. It was LOVE at first bite, the food and service are excellent and I could not wait until the next time they came to our workplace. The prices are reasonable and the food is fresh and delicious. I have tried almost everything on their menu and have loved it all. This was the first time I ate from this truck. I was at the courthouse and thought I'd give it a go. Unfortunately, it was not great. I had the Cheesesteak and you could tell the quality of the meat was not good. I remember seeing them on TV once (I think it might have been Real Milwaukee or something like that) and they said they use prime rib on the sandwich. That made me excited to try them. Unfortunately, the meat used is ABSOLUTELY NOT prime rib. I'd say it is something like formed and sliced chip steak or some lower cut like that. Do not tell people it is prime rib if it isn't. Gouda Girls is seriously as good as it gets. My employer uses food trucks since we do not have a cafeteria and I make sure I go every Tuesday. I have not found anything on the menu that I don't like. My absolute favorite is the BLT-C but with this awful weather I decided to try their soups. They are delightful! Katherine and her staff are gems. I would have never thought you could get such wonderful customer service and gourmet food from a food truck but I stand corrected. This is the 2nd event I've been at where the food truck has been invited to. For the 2nd time they ran out of 1 of their 2 offerings, no cheese steak left. Really poor planning IMO with no way to fix it. The Mac and Cheese is subpar at best, not very cheesy and definitely mushy. I get its harder in this setting but this is what you do, how about learning how to manage your supplies and manage what is cooked when to avoid mushy mac and cheese? I would never recommend them for any events I plan in the future and suggest you avoid them unless you already know you like them and then you can seek them out. I love some great Mac N Cheese so I came here for lunch. Man was this disappointing. I ordered the large Mac n cheese, it was around $6 something. For that price I was expecting something more fresh made, this was scooped out of a pre made batch right in front of me. It was a pretty small portion for the price and it was just plain boring mac. Better then kraft, but not by much. It tasted like something you may get from a cafeteria. Very plain, not seasoned and not ooey or cheesy. I wouldn't order this again. read more

Oh how I've wanted to try this. I was doing some volunteer work one evening and saw the Gouda Girl truck. I was so thrilled that I didn't have such a long line to stand in. I placed my order: The Triple. Wonderful Cheesinessthe. The smell of grilled cheese sandwiches danced in my nose. The anticipation was building, building.....Oh how happy I was to receive this Beautifully toasted bread, perfectly buttered and browned!! And then...I took that very first bite, savoring the flavors that were rolling on my tongue...and THEN.......BAM!!! My mouth woke up and was not Happy!! The 3 cheeses together did nothing for me. It was like a glob of goo that suddenly seemed like a mouth full of greasiness that made NO sense. ...Gouda, Colby / Jack, and Havarti...simply gross! What a waste of good Havarti!! And Gouda..And yes even Colby/Jack. If it was not for another food truck nearby that gave me some hot sauce, the entire sandwich would have been tossed. My daughter got some mac n cheese and refused to share it with me! She devoured it and then begged for more. I wouldn't write this review if my daughter hasn't been trying to get in touch with them for 2 weeks now.....no return phone call or email.
