What a huge disappointment. I hunted a bison and brought it to Hudson to have it processed. I had…read moredone this previously about three years ago and the results were satisfying. This time it's a horror show. I had the bison carcass cut at the ranch where I hunted it with a specific purpose of allowing the meat processor to have tomahawk steaks cut from it. I specifically told this to the person taking my order in Marble Falls when I dropped the carcass off in late January He said they couldn't do it in Marble Falls, but they could do it in Austin and he would send it there. I told him at the time if they could not do the tomahawks to tell me because I would bring it to another processor. He assured me they would get it done. As I had with my prior bison, I also ordered that the scraps be turned into sausage and ground beef. This time I also decided to try some breakfast sausage as well. And then I said I would also like to try a little of their jerky like meat, but by no means a lot of it. I showed up today to pick up the order. To my surprise, there were no tomahawks. They had neglected to tell me that they couldn't cut those in Austin either. They should've done that because I could've ordered something else be made out of those cuts. Instead, they took it upon themselves to give me multiple cases of breakfast sausage, regular sausage, and four cases of these snack sticks that are like jerky but aren't. Oh, and they gave me a balled up frozen backstrap hunk and two loosely bacon wrapped tenderloins. No ground beef. No other steak cuts No ribs. And all the guy could say at the store was "sorry." Oh and you took a little bit off of my otherwise $1800 tab which is actually $2000 when you factor in my deposit. So now I have two freezers full of sausage meat, a balled up hunk of frozen backstrap meat, two frozen tenderloins with a little bit of bacon wrapped around them, and four cases of these snack sticks that I refuse to refrigerate or freeze because it's not what I ordered. Of course I paid for it. I will seek a refund of this, but I know I'm not likely to get it. I'll probably end up donating them to a church or a veterans group or something like that so they don't completely go to waste. An expensive donation. What giant screwup by Hudson. I planned the bison hunt in January specifically so I could have this meat by summer. And now I have no ground beef, no steaks, no ribs, and enough sausage to choke a dozen horses. Never again. Do not go here. Ever. There are so many other meat processors in this area of the Hill country, I think it will be quite easy for me to find a better alternative in the future. let's see what this merchant does to try to rectify this epic cluster______. I would give Zero stars but that's not an option provided on Yelp.

We ordered custom-cut ribeye steaks, elk medallions, stuffed jalapeño poppers, and prosciutto-wrapped asparagus. The ribeyes were beautifully cut and had excellent marbling. The elk was tender and delicious, and everything we purchased tasted fantastic. The customer service was equally impressive. Andrew was friendly, knowledgeable, and took the time to help us select exactly what we wanted. They clearly take pride in both their products and their customers. It's a 50/50 blend of beef and bacon + bacon jam. The patty is nestled on some shredded iceberg and melted American cheese on top with the jam. Overall, the burger was very good but leaned too sweet with the bacon jam for my liking. Very rich. I think arugula would be a nice touch to cut the richness.

We were just coming through on our way to a funeral in Kingsland so we passed it on the way and made a point of being sure we came back that way so we could stop! I can't wait to taste my purchases. It was quite evident that about two out of every three customers were repeat as they knew Keith and he knew them by name! I bought stonewall peaches, a nice basket of freshly picked green beans, fresh ears of corn, and beautiful slicing tomatoes (Oh yes, great tomato sandwiches with either mayo or miracle whip coming right up!) I also got one of the Mason County sweet cantaloupes. The watermelon looked awesome but not sure who I could share it with so did not get it this time. Hoping they are still in season when we return! Keith Lee Mills is the owner operator and evidently quite often on site helping customers with their purchases. My gosh he even helped me to the car with mine! When we visited her this was the 1st place on our list. The restaurant is right next to convenience store next door. The place is quaint and cozy.
