After hiking and driving through Mesa Verde, we were starving and started looking for food. Gustavo's had by far the most interesting menu out of all the Mexican places in Cortez and we decided to stop by for an early dinner. Chips & Salsa (Complimentary) - The chips are served warm with a small tinge of oil sheen. Very even in thickness. I think these are commercial chips, but the menu states they have homemade corn tortillas, so maybe they fry the leftover ones into chips? The salsa is nice and refreshing with just a hint of spice. A good start to the meal. Horchata ($5) - This drink actually isn't on the menu, but I noticed it available in Gustavo's online ordering system. I asked the waiter if they had horchata and they did! I happened to be sitting at the table right next to the fridge and I saw the waiter remove an unlabeled plastic jug filled with white liquid and fill up my cup. I guess this must be home made? Very nice rice flavor, sprinkled with cinnamon and spices on top. A lot of horchata I've had in the past have been almost cloyingly sweet, this one is not too sweet in comparison. It has a smooth texture that isn't too gritty and is generally delicious to drink. (5/5) Corn Salad ($8) - This is a very simple salad with cilantro, black beans, red bell peppers, and corn in a very, very tangy and vinegary dressing. They top it with a slice of red onion and some queso fresco (per the menu, although I thought it was dry and aged like a cojita, but I'm not expert) crumbles. There is a bit of liquid at the bottom, but it's easy to drain. The server gave us four griddled tortillas to make rolled tacos if desired. I found this to be a little too acidic for my tastes. (3/5) Two Chile Relleno Crispy ($17) - This dish comes with small ramekins of rice and beans, both perfectly seasoned. The rice is cooked until very tender and fluffy with diced carrots, tomato, peas, and corn. The beans are excellent - the best I've eaten in recent memory. They're super light like they've been whipped and have the fragrance of lard. The beans are perfectly seasoned, and while light in texture, are very heavy on the stomach. I swear, it must be like half lard.... The chile rellenos are very interesting. Instead of being battered and fried, these large maybe 6inch long green peppers (hatch, perhaps?) are wrapped in a dough square and deep fried. The square almost reminds me of an egg roll wrapper, except developing plenty of micro bubbles while being fried, lending a crisp when dry. The rellenos are stuffed with plenty of cheese, very stretchy, mild tasting, milky, and doused in a green chile sauce, which softens the wrapper. They pile lettuce and tomato on top, followed by a drizzle of sour cream, guacamole sauce and crumbled queso fresco. Overall the taste profile is very tangy and a bit spicy. Additional green salsa is provided in a squeeze bottle on the side, although I didn't use it as the dish is flavorful enough. (4/5) Gustavo's Mexican Restaurant & Bar was a very good choice for our dinner. We both left happy and full even though we didn't even order two entrees! I would revisit if I'm ever in Cortez again. Highly recommended. We ate here a year ago for lunch while staying in Mesa Verde - it was one of the only places open. We didn't have high expectations- but it was fabulous. So good that this year, we're nearby, and we made a special effort to eat here again. It doesn't disappoint. Friendly service, nice Mexican atmosphere. Warm chips, zesty salsa with a kick, and scrummy flavorful guacamole with bits of onion and tomato inside. The food was good. I ordered the 3 street tacos-Baja fish. It was quite tasty. There was three different sauces on them. One had a coleslaw vibe. The food was great but the restroom was really gross. I am not sure what I accidentally stepped in but I'm pretty sure it was vomit because it smelled like vomit. And I honestly think it didn't get cleaned up the entire time I was there and I even witnessed workers go and use the bathroom too which I was hoping they'd get someone to clean it. We chose the fajitas for two with chicken and shrimp, out of four protein options. We found it a little odd that she brought out the tortillas and our plates of rice and beans, guac and sour cream quite awhile before the steaming platter of meat, onions, peppers, and mushrooms arrived. Are you a fan of flavorful sauces that pack some heat? Then eat here! Carnitas tacos and birria tacos are my favorite dishes. Chile verde burrito and Hatch stacked enchiladas are my husband's go-to plates. The margaritas are spot-on, too! The wait staff are friendly, funny, and very helpful (one time we forgot our wallets and they taught us how to use Apple Pay). For a downtown restaurant, it's unusually nice to have the parking lot next to the building instead of having to hunt down a spot on the street. read more

The mole was the best we have had from Zihauatanejo to Canada to Costa Rica. The Chile Releno was a bit greasy, but the cheese inside was smooth and tasty. The Tamale was spiced with red Chile throughout the pork and the masa. No sauces on either the Releno or Tamale. Probably would stick with the mole next time. read more

I try not to give a 1-Star unless the place is atrocious and our lunch was a bummer. Here's are the reasons this place truly deserves just 1-STAR: 1) Food was so bad- had to spit it out after gagging on it. Also someone else spit their mouthful of food out in the women's bathroom sink. 2) Portions of said gross food were very small compared to any other Mexican restaurant I have ever been to 3) Waitress was at the front door when we walked in and instead of greeting us she spun away did a 180 and wandered off. The manager had to come Out and direct her to seat us. 4) Prices were very high for food that fails to even pass as mediocre with small portions. 5) The food is not authentic Mexican- the food is an insult to the Mexican culture Ever had a meal so bad, that you remember it in dread detail for several years to come? Visited at noon on 7/7/21. Waitress right out front when we entered, BUT instead of greeting us as we were all right there, she turned her back onus, and decided to wander around the restaurant doing chores- anything besides acknowledging we were waiting to be there. It was clear that seating us was her last priority to the point, that eventually the manager had to come out from the back to direct her to seat us. The waitress was a brat. Service was average. To say something nice here- it was a hot day and I was very dehydrate, and the servers were nice and brought me a few refills of ice tea, which I very much appreciated. That was the only good experience there though. Ordered a plate of enchiladas- $17. CRAZY OVERPRICED. Also small portions- like noticeably small. Another local Yelp review complained about Gustavo's changing to small portion sizes. The enchiladas were served in a small oval ramekin to make it look fancy instead it looked like a child sized portion. Regardless I wrote the review because the food was gross, otherwise I may not have been mad enough to bother. FYI We officially moved to town today, and signed the paperwork for our home, so today we officially became "locals". Until today I had looked forward to eating at Gustavo's; however, from now on, I will probably wince whenever I drive by it on Main St. because of our sickening experience. ORDERED A HATCH CHILI ENCHILADA PLATE TO SHARE: At first glance before the first bite the enchiladas visually looked good; HOWEVER: the meat was mostly grizzle all covered in sauce. At one point I took a bite of grizzle which was literally inedible. I gagged on it because I could not swallow the slimy glob, and while choking I had to fish the nasty glop out of my throat to stop choking. The previous bites had been grisly as well, and I was hoping for some edible meat bites. After grossly gagging my wife said that she had stopped eating before me because after a few bites she saw the meat was just disgusting- grizzly and chewy. Also ordered a $14 margarita, which was also small and mediocre more like a $2 Monday Margarita night drink. Definitely NOT the fancy drink described on the menu. And I should mention, that the hatch chili was spiny- it seemed like every bit of the peppers were used just like the meat included parts you do not eat or serve. Tasted like the skin and the stem were left in. The margarita tasted cheap And watered down. After choking we both examined the gloppy grizzle. My wife looked at me and said "This is bad". She stop eating after a few bites. It is embarrassing to have to spit food out on your plate because you cannot swallow it and you don't want to either. WARNING- DISGUSTING BATHROOM EXPERIENCE DETAILS: Before leaving my wife went to use the restroom. While washing her hands as the water ran from the faucet sink it caused food that someone had apparently spat down the drain to pop up, and o start floating around in the clogged sink. Not sure what was going on here, BUT apparently I was not the only customer spitting out food (although spitting food out in a sink is weird with a toilet and trash can available). What I do not get is why this place has a good rep, and mostly good reviews. Something does not add up. Even if the food wasn't awful it was again super overpriced with small portions. If I had to make a wild guess it would be- new very bad management, BUT for all I know this is the way it's always been. The only good thing I can say is that the next time I eat out some place decent- I will appreciate it all the more. I am really glad that most all Mexican diners, food carts, and even food courts serve far better food. read more
