This place lives up to the hype! We arrived about 5 minutes before the doors opened and the line was already into the parking lot. It took about an hour to reach the front of the line but the wait was worth it! You can smell the smoke and food as soon as you get out of your car. There are a variety of sides to choose from. We opted for the potato salad, beans, and Mac and cheese. All sides were delicious! The potato salad was rich and creamy. The beans had a ranch style flavoring with added pieces of their sausage which paired well with each other. The Mac looked a little plain but the taste was excellent, very cheesy! We chose the brisket, beef sausage, and beef rib as our meat choices. The brisket was seasoned perfectly and was not overly smoked. It was also super tender and passed the pull test. The sausage had a really good flavor, but we found the casing to be a little tough. It was a challenge to cut the sausage with a plastic butter knife and a little chewy at times. The beef rib was tender and moist. Sometimes it can be a challenge to get a beef rib right but these guys nailed it. Absolutely NO sauce was needed for anything!!! The cherry on top was the staff. Brisket was amazing! Pork ribs were awesome! They were out of the beef ribs by 1PM (Boo!). The sides - beet salad, potato salad were good. Not a fan of the cold green beans, nor the Fideo Mac n cheese. Jalapeno sausage was dry. BUT the line was not long so wait was doable. We spent $99 but tried most of it. IF the wait had been longer than an hour, it's not worth the wait. BUT if it's less than that, then ok. read more

Friends told us we needed to try this BBQ place out. It's about a 14 mile trip so we decided to give it a go. There's no shortage of decent enough BBQ joins here in the RGV but hey, one more wouldn't hurt. We arrived a little late;12:15, due to a wreck on I-2. Once inside we were met at the door and shown where the END of the line was. It was pretty crowded but I noted a number of empty tables, inside and outside. The line progressed a bit slowly. It's a typical BBQ joint, in that once you reach the counter, you place your order, pay and then find a spot to eat. From the time we got in line to the point we paid and were seated with our food... 45 minutes. Not horrible but... was it worth the wait? More on that later...... I ordered the Texas Two Step, a platter with 1/2 pound of brisket, 1/2 pound of ribs (spare ribs) and one sausage link. I chose the Jalapeño Cheddar link. It comes with two 8 oz sides, I chose the tallow roasted potatoes and white cheddar Mac n Cheese. We also ordered two soft drinks and the wife tried their dessert, some sort of cobbler looking concoction with small diced up strawberries on top. At the table they have an assortment of house made bbq sauces - mustard based, sweet and spicy and a smoky sauce with just a touch of heat. I tried all three and all were decent. Nothing out of the ordinary here in Texas. The brisket was sliced WAAAAAY thicker than I've ever seen brisket sliced. Our half pound consisted of one big slice and one smaller slice. The large slice was over 1/2" thick! It had a good bark, a nice smoke ring, was fairly tender and was a little less moist than what I'd hoped. Serviceable, but not outstanding considering the 45 minute wait in line and the cost. Did I mention the cost? 1/2 pound of brisket runs $17 or $34 a pound. Our Two Step platter minus the drinks and dessert was $48 plus tax and tip. Anyway, back to the food. The sausage and the Mac n Cheese was the best I've ever eaten, no doubt. Excellent cheesy flavor and creamy and the sausage was super juicy. The casing was a bit tough but what lay inside was DELICIOUS! The roasted potatoes were paprikas and salt forward and ok. I wish I'd tried the potato salad. The dessert was so so according to the wife. She wouldn't order it again she said. So... our total with the two drinks and dessert, plus tax and tip was ... wait for it... $74. That's steep for lunch. We did take home leftovers. Was it worth the wait? Not in my opinion. We have several BBQ joints that are closer, less expensive and I've never waited close to 45 minutes, even for supper. If I'm in the area then maybe I'll stop by but otherwise I'll stick with my nearby options. read more

In a nutshell shell: It was a great experience. Breakdown: Long line (cuz the food is good obviously), but they give free beer while you wait. Good atmosphere and welcoming staff. The brisket is tender and juicy. I didn't get to try the sausage cuz they ran out but I guess that says something. In substitution of sausage, we got the pork burnt ends. It had an Asian flavored twist that went very well with it. We also got the ribs, nicely seasoned and fell off the bone. Sides: The Mac and cheese wasn't too heavy and had amazing flavor that didn't taste artificial. The charro lentils were awesome and had really good savory flavor. (I don't like lentils but I liked these) We got the corn bread that was moist and had a honey butter sauce on top. Came with fluffy bread that wasn't dry, onions, and of course pickles. The pickles were a bit sweet for me but I'm not complaining. Also, the sweet tea is bomb if you aren't worried about your diabetes. Staff: The staff were super welcoming and nice. If I could, I would give them more stars! I was in Weslaco for business and checked to see if I was close to a Texas Monthly top 50 location. One in Weslaco which was closed and GW's in San Juan. I had to wait in line, but it was shady with ample fans. The gentleman at the door was engaged with customers as they traversed the line. When I took my place at the head of the outdoor line, we had a nice conversation about what they had and what he recommended. After a much shorter line indoors, I selected the Wagu beef ribs and jalapeño sausage. They cut me a nice rib and weighed it up. They then chucked the small outer rib on my plate free of charge. When they learned I was 1000 miles from home, they insisted I try a nice slice a brisket on the house. I try not to fall for sides, as they are a diversion, but the beef tallow roasted potatoes thwarted my plan. The gentlemen on the floor bussing tables were engaged with customers the whole time. I believe the "hostess" and the buss boys were probably the owners. More restaurants should try this model to get closer to the customer. With a drink, tip, and cc convenience fee, lunch was ~$43. I have a huge appetite, but I carried more out in a box than I did in my stomach. This is a must stop!!!! read more

They are very friendly people. Didn't like their bbq though. The meats were over seasoned and very salty as well as the pork belly rice I had. The mollejas were mushy and had a sticky texture. The brisket was dry. The only thing I liked was the potato salad. The cornbread was too sweet and very dense. Maybe i went on a bad day. Who knows. I would not go back. read more
