I like a focused menu, and Noodleholics has just a few different options that they do and do well. We opted for the spicy Chaoshou Dumplings as well as a bowl of the Taiwanese Beef and The Guilin. The Chaoshou Dumplings were good but just okay, with me hoping for an oilier type sauce to better coat each dumpling, though the sauce definitely has a kick. The noodle soups though... Wow. Both soup bases were savory rich and nourishing, packed full of fresh protein and veggies. I liked the wide wheat noodles more than the thinner rice noodles in the Guilin, but really enjoyed the mixture of pickled veggies and crunchy peanuts that often don't make it into dishes outside of a true Chinese restaurant. I do think the beef and pork could be more tender, but they really perfected the crispy skin of the pork. The beef was tender and full of bright flavor, and the mix of fresh herbs, crunchy veggies, and a little jalapeño heat made every bite pop. My husband and I split the sandwich and we both loved it.
