They also veered towards light in terms of sriracha mayo and shoyu which preserved the taste just right, and I poured a bit of ponzu to suit my own taste. Only minor feedback would be that rice was a bit blocky-cooler than I'd have liked so took wee bit more effort to eat together with the toppings... but not a big deal. Before the meal even started, we were graciously given Za'atar (a popular Middle Eastern spice blend with an earthy, tangy, and nutty flavor, toasted sesame seeds, and sumac, with salt).
