Came here on a Sunday for lunch. This is completely outdoors only and they're technically a food truck. It was pretty empty when we got there but filled in as time went on. Nice thing about them was they gave us samples when we were curious about an item on their menu. Their brisket was excellent. It was seasoned just right, not too fatty (you can request to get the fat cut off too if you want) and tender. You can order pork ribs by number of ribs instead of weight strictly. Their hatch Mac n cheese was fire. They add jalapenos to it and it was very creamy. Their beans had bits and pieces of brisket in them as well. Overall, a great BBQ place. We stopped by for some BBQ on our way back to Austin after a day of floating the comal and were pretty worn out and expecting to relax in the AC so it was a bit of a surprise to find out it was an outdoor food truck. I guess the photos on google/yelp showing an indoor location are from their previous spot, though they did say they will be going back to brick and mortar spot at some point. Happily it wasn't too steamy outside so we decided to stay though the fact that there are no bathrooms at all was a definite negative (two of our party had to go to the pizza place next door and buy something to use their restrooms!). That being said the staff was very friendly and even offered us a free sample of the turkey while we were deciding which honestly is what convinced us to stay! It was super moist and flavorful. I ordered a half pound of pork ribs, ended up with .6lb which was only two ribs- but they were big and ended up being a surprising amount of meat. Ribs were tender but not falling off the bone, no complaint there I don't want the meat to be mushy; flavor was good and sauce was decent though nothing special. The green chili Mac was pretty tasty though extremely creamy, I'm not exactly complaining lol but I like more cheese heavy. The potato salad was solid and they gave us plenty of onions and pickles. Other members of our party approved of the chicken, brisket, and jalapeño cheese sausage. I didn't hear anyone say it was the best bbq they'd ever tasted but it was solid, flavorful, and satisfying fare. Every single person we spoke to at Hays County BBQ was abundantly friendly, patient, informative, and wonderful to talk to! I was so impressed how every person was more than a pleasure to talk to! Their food truck (more like a motor home) was VERY nice, and I loved their set up! Plenty of picnic tables to eat at, umbrellas to cover us from the sun, easy to read menu/screens, and the comforting smell of smoke is the 1st thing that welcomes you once you walk onto the property. While my kiddo didn't like the ribs, it was because the seasoning had a larger gradient than other BBQ joints nearby and he's 10, so sometimes he gets a little picky. My hubby and I, on the other hand, really enjoyed the ribs! I liked that they were nicely rendered/trimmed so I wasn't eating a huge chunk of fat off each rib. The brisket was consumed far too fast and left me panting from the meat sweats. Delicious, nicely seasoned, not painfully salty whatsoever, simple and tender, nice and moist. I could eat that brisket all day, and so could the boys! We all enjoyed the sausage as well, especially the jalapeño cheddar link! Not too salty and not overly greasy. I enjoyed the chicken. I was surprised at how moist and tender it was, and it had a nice subtle smoke flavor. I wish I could put my finger on what that chicken was missing, but regardless, I would happily order that chicken again for lunch, especially at that price! We didn't get any sides, but the boys had to have the banana pudding. My kiddo, who not 3 minutes before almost consuming the entire order, said he was full. He got one bite of that pudding and cornered my hubby out from having a single bite. Hubby FINALLy got two bites at the end and said it was one of the best banana puddings he had since getting to Austin! Hands-down, the best barbecue spot we've ever been to. We had the brisket, which was packed with flavor and perfectly juicy. At first, we weren't sure what to order since it was our first time, but the owner kindly offered us a rib sample--and wow, that sealed the deal. We ended up ordering the ribs, and they were absolutely phenomenal. We also tried the twice-baked potato, which quickly became my favorite. The potato salad and mac & cheese were both delicious as well--comfort food done right. Everyone was very nice! The atmosphere was great! I still can't get over how incredible those ribs were. My dad was craving for some Texas BBQ so we ended up trying this spot on 4/4/24 since we were in the area. First off when we arrived at noon time the parking lot was almost packed and all of the car parked there are the Ford trucks. We almost couldn't get a spot. What's with all the big ford trucks here? Now for the food. This was our first time trying the BBQ from this location. When you first enter you pick up a tray and select the sides and desserts before you head over to the counter to get your meat, drinks and to pay. We ordered the following: - 3 servings of potato salad = $2.99 each - 1 serving of jalapeño cream corn = $2.99 - 1 serving of beans = $2.99 - 1 serving of cole slaw = $2.99 - 1 pie = $3.69 - Sausage = $4.49 - Sausage = $4.49 - Turkey (0.480 lbs) = $9.12 - Pork Ribs (1.66 lbs) = $20.13 - Brisket (0.550 lbs) = $16.50 I didn't notice the 2 total prices on the receipt. They charge $3 more if paying with credit card. Our total came to: $82.66 (cash) or $85.14 (credit card). I'm not much into the brisket and the pork rib. I tasted a little bit of it and it was good. My dad liked the pork rib and thought the brisket tasted ok. I liked the sausage. It wasn't oily and tasted good. My uncle said the sausage to him tasted kind of dry. He liked the turkey. Potato salad was so good, this was the highlight for me. The cream corn with jalapeño was so spicy, I couldn't eat it. My mom said the beans lacked seasoning. Here we are visiting another Top 50 joint with Hays Co in San Marcos. This spot is in a large and very clean location with all the classic bbq decor one would expect. But before I get to the food, I have to talk about the excellent and ultra welcoming customer service we received from the staff. We came in with our dog and walked to the outside patio in blazing hot summer heat, and the gentleman behind the counter brought us a bowl of water for our pup. Plus he was super helpful with any questions and recommendations. Just super nice people all around. Ok food time. I bet if we didn't walk in around 4pm the brisket would have been less dry. But for 4pm, the brisket was still pretty dang good. The jalapeño cheddar sausage was good and cheesy. It was in a tight and chewy casing and the meat inside though moist was still a little crumbly. But still over all pretty good. The ribs though were next level! Good quality meat. Excellent seasoning. Good tug with the meat coming off the bone. But don't sleep on the turkey either. Smoked turkey in most joints tends to be super salty and moist if your lucky, but this turkey was absolutely exceptional. The green chile mac and cheese was creamy and did the trick but I wasn't getting much green chile. I hope you get to Hays Co as quick as you can! read more

Tried Hays barbecue for the first time. Everything was amazing and we tried every type of meat that they had. My favorite was the pork ribs. The potato salad is the best I've ever had from a restaurant. The sweet pickles that they sell are very good as well. everything was amazing. Doesn't matter what you get it's all good. Staff is very very friendly there and again the barbecue is high-quality barbecue. My only complaint would be the barbecue sauce. They have a spicy barbecue sauce and a mild barbecue sauce. The barbecue sauce is tangy tart & vinegary I like my barbecue sauce, sweet and they didn't have a sweet barbecue sauce, but other than that I highly recommend trying out Hays barbecue ! read more

Took a trip to San Marcos yesterday for the first time and decided I wanted to try this place out. They have great reviews online and are even listed on some lists for best BBQ. Being from the Midwest, I am picky about my BBQ, specifically my brisket. I focus more so on the flavor of the meat by itself, not necessarily the sauces that are offered to compliment the meat. The restaurant is very kitschy with stuff hanging from the walls that are reminiscent of old cars and gives a home grown kinda feel. It's set up cafeteria style so grab your tray and make your way to the cooler with the chilled side items! I grabbed the potato salad, my friend grabbed the same as well as pickles and a banana pudding too. Once at the counter, we ordered a pound of brisket, Mac and cheese and two waters. We figured a pound was enough to split. The waitstaff was wonderful, incredible friendly. Note there is a discount if you pay with cash and an up charge if you pay with plastic, so if you're thinking about coming here, bring the Benjamins! Now for the taste! Brisket was tasty, but could have used a bit more flavor. Nice marbling and definitely falls apart! The potato salad and pickles were pretty good, the pickles surprised me as they weren't my choice, my friend picked them LoL The Mac and cheese was a miss for me, as it didn't really have any flavor at all. Overall, this was very good BBQ with very good sides. We got it to-go, and part of the less-than-5-stars was the wait. The line wasn't long, but it was slow. The flipside to this comment is once you get to the front to order, service is very personable and they get everything just right for you. Great folks and they did a good cut of lean brisket for me, which isn't guaranteed at many places. Still, I think they could move the line along a little faster. The other less-than-5-stars part is the cost. $30/lb for brisket is brutal. I know costs are up, but ouch. So the remainder of the review should be a giveaway, since I listed 2 dings and I gave em 4 stars. The food is GOOD. VERY GOOD. The lean brisket was excellent. I only use BBQ sauce is the brisket is dry or simply not great, and I didn't even try theirs. Everyone agreed the smoked turkey breast was also stellar. I don't waste space on much other than meat when I BBQ, but everyone else loved the mac n cheese. My small side of beans was excellent - and spicy! So heads up - definitely not sweet BBQ baked beans. They be spicyyy. We ordered a LOT of food - over $100 worth of cue - for a pretty small group, expecting leftovers... and leftovers were scarce. That's some good BBQ - but a splurge for sure. Plenty of room to spread out and separate from stranger danger, even during their booming lunch hour. Food quality was high and prices are reasonable. Texas Monthly has included Hays and 2M in their list of top BBQ establishments. My personal favorite in the area is Blacks San Marcos by far. The decor is typical of upper level BBQ restaurants - homey but tasteful. I ordered two small beef ribs and a half pound of brisket both were good but not outstanding. Again I much prefer Blacks San Marcos or Rolling Smoke in Vegas for beef ribs and brisket. Good beef ribs and brisket should be super tender, well marbled, and have that extra kick of smoke and caramelized fat. Time to update the review since I haven't been in a LONG while. Certainly not since they made the Top 50 of Texas Monthly. It was pretty good BBQ and I enjoyed the experience. A group of work friends left for an early lunch and to avoid the lines. When we arrived at about 11:20am on a Monday there were about six folks in front of us already ordering. The line is very short before hitting the door, so that was a good sign. I expect you'll be waiting outside if there's any line to note. The crew taking the orders and cutting up the meat were super motivated, enjoying themselves and had the easy banter of a crew that loved their jobs and were managed well. The outside dining is right at the end of the line and the indoor is a bit looping around. If you need napkins utensils, it's kind of a weird loop to get it and then go outside, but no problemo with no mobs. Plenty of nice clean dining spots inside and out. They have a separate venue if you want to rent for a private gathering. That was a good sign. They may also use it for musicians, but we weren't sure. I started off with a half pound of the brisket. It was good, but certainly not up to the acclaim of it's peers that I've been eating lately. I had to do two cardinal sins. First I had to use a plastic knife as I wasn't able to just cut it up with the fork. Sign of a little bit of an over cook, or something. Second, I just had to cave and help it down with BBQ sauce. The mild was very good and the spicy was only a bit of a kick up in gear. Both worked well. I also had the mild version of the jalapeno cheddar sausage. It was good and a lot of it. Definitely something to share. For the sides I started with a potato salad. Pretty good there. Not supper unique but just well executed. Same thing for the jalapeno creamed corn. Maybe a notch down because it was straight up creamed corn with jalapeno cut into it. Maybe if it could have marinated a while it would have done better. All in all a very good BBQ joint. However, it really isn't/wasn't something I would have traveled cross country for. read more

The one BIG thing, this is a food trailer... we assumed from looking on Yelp and reading reviews, it was a sit down restaurant. It was certainly one of the better ones I've had in Texas, with nice service and amazing decor, and a lot of the different meats were absolutely delicious and juicy and perfect. I was partial to the sausage but they were all damn good. The one complaint that I had honestly was that some of the other customers, who seemed to be travelers from other parts of the state or country, were a little judgmental and rude and borderline abusive towards my beautiful girlfriend. But that's okay, because it doesn't really have much to do with the restaurant. Maybe it's something about the type of crowd that the restaurant attracts. Anyways (or should I say Anyhays), this is still one of the better BBQ experiences I've had in one of the best barbecue states in the world. Come and see for yourself. And if you're in a Frat or Sorority, come here as part of your Hays-ing experience. I've had a lot of BBQ, and during our recent trip to the German towns in the hillsides of the San Antonio area, I have to say this BBQ was excellent. I had the brisket, and asked for extra char which was happily provided. I tried two sides, Mac and cheese which was great, and the baked beans which were true Texas style (not my favorite, as I like sweeter.) I also had the sweet tea, which was Just the right amount of sweet. No waitresses, noisy but nicely kept newish free standing building. We were in New Braunfels, which was a 15 min drive to come here. The second day we went back rather than gamble on what became so many mediocre BBQ restaurants. Rounds up to I'm a fan. We found ourselves within walking distance so why not? It was maybe 2.30pm on a Monday with so many parking spaces available I worried they were closed Monday as so many other restaurants. Right off I-35, miles of parking, lots of tables inside. Plenty of sides to choose from and packed up in different sizes so you can easily make your picnic to-go for one or half a dozen. The ladies at the counter were friendly, hilarious, and efficient. We tried 1/2lb each of moist brisket and pork ribs, which meant five slices and 2 ribs. We'd grabbed sweet pickles, cheese, potato salad and pecan pie from the display, requested green hatch mac n cheese at the counter plus some bread (wheat and white are available). Also got standard onions/pickles in little trays. Mexican Coke and a can of some local pilsner. Over $40 after tax. Servings are well sized, not wasteful. Mr R is spoiled by his time in Georgia where they obsess over pork as Texas does with beef; he said these were perfectly respectable if less tender and I agree. The brisket was tasty by any local standard. Neither of us were nuts for the bbq sauce, but we don't habitually hose our entrees down with it either. All the sides were good, green Chile mac and pecan pie were probably the best. Mr R took care of our trays and didn't see any options for recycling, boo, so I took my bottle home. Price wise, this was more than I usually spend feeding us bbq but we were splurging with more sides, more lb meat/person. Per lb, it costs less at San Marcos BBQ where we eat it without current faux-rural decor. I think Hays Co aims at selling an experience as well as the food, but I understand how more modest meals like the sandwiches could be part of local families' weekly menus, especially if the location's convenient to them. San Marcos BBQ is still our favorite flavor but we don't regret trying this place at all and I'd be happy meeting friends here. read more

Stopped on our way home from Austin because I had seen it on Elder eats. Did not disappoint! The brisket was juicy, tender and no fat! My daughter is picky about brisket and she said it was the best she had ever had. Turkey was so good! 5 STARS! Everything was wonderful! Hard to know where to start. The pinto beans are the best ever. With a garlic and oregano base the flavor pops majorly and the juice is thick not runny so the flavors last til the last drop. The green beans had the same amazing result. So well seasoned and cooked perfectly as in not too mushy and not too crisp. The mac n cheese was also not over cooked or sitting in a pot drying out. It was moist and cheesy. The mac could use a tad more salt in the cheese. The potato salad was just like it should be. It's not a mustard base but might have a tad in it. It's a great all around crowd favorite. The brisket melt like butter. Smoke flavor was apparent but not over done. The pepper was also not over done. Needed a pinch of salt but that's personal taste. It was likely the most juiciest I've ever had. Ever. The seasonal glazed pork belly was a delicious dessert of a meat lol. The sweet glaze and pepper combo was such an awesome mix. Great work all around as I could almost let the pork melt and slide down my tongue. The turkey was nice and lean. Lacked a tad of overall flavor but turkey is bland in general. I always order it for the healthy folks. Super moist and lean! The jalapeño cheese sausage is both spicy and cheesy. You would almost think you were eating a perfect meal in itself. A great side meat! Juicy as well. Pork Ribs! Meat slid off the bone where it needed to and stuck where it should. This means it was perfectly cooked as well. I should of tried the beef ribs but maybe next time. A job well done all around! Upgrade to plates to make it easier to serve. Great Barbecue spot. The brisket and the beef ribs are wonderful. I had the pork ribs last time and they are wonder also. I didn't like the jalapeño & cheese sausage. Likely it's just my tastes. The side were good but not spectacular. Between 2 visits I tried the potato salad, beans and twice baked potato sides. When I'm back in the area again, I'll definitely go back for the ribs and brisket. read more

I'm from Frisco Tx area.. stop by San Marcos to have dinner at this place let's just say the pork chop was better then dry brisket no flavor. I would prefer outback sorry guys. Mac and cheese would not recommend there pickles are better. Try Hutchins in Frisco Tx now that's Texas barbecue. read more

Slap yo momma good! This place was out of this world. Moist, mouth watering brisket, finger licking sausage & fall off the bone ribs. The sides didn't disappoint either. The staff was kind and friendly. We even had a chance to meet the owners, Michael and Asenette. Good people. We loved the atmosphere and all the attention to detail. We go out of way from Bastrop, Texas just to eat Hays Co. You must also try the to die for pork belly. Wash it all down with a Mexican Candy drink. Don't sleep on this BBQ joint. After an early wakeup to witness concrete being poured for the foundation of our house (which incidentally took 17 truck loads of concrete and lasted about 7 hours to finish), my wife and I were looking for a hearty late lunch before we headed back to our rental. We've heard friends and neighbors rave about Hays County BBQ and read about how they made Texas Monthly's list of Top 50 BBQ joints in the world (and when they say world, they mean Texas)...so off to Hays Co. BBQ we went for a late lunch. We got to the place around 2:45 PM and noticed a few EMS vehicles parked in the parking lot...must be a good place to be in case of injury as you have the EMS folks there to respond. Upon entering the newish and spacious building, one gets the distinctive whiff of the smokiness that fuels the operation. The sides are located before one reaches the counter for placing orders. This being our first time there, we weren't aware of the protocol. I ordered the 1/2 lb brisket with potato salad for a side while my wife ordered their pulled pork sandwich with a side of potato casserole. It looked like the brisket was kept in a covered chafing dish and the sandwich was prepared earlier and not made then and there. We were asked if we liked onions and pickles as well as bread with my brisket...of which I was given 2 slices of wheat bread and a heel. The brisket was good, smoky and tender...although drier than I expected. My wife's sandwich was OK. I don't know if it was because it was a very late lunch, but I thought I had juicier, more tender brisket elsewhere. While we thought the food was pretty good, we'll stop way short of declaring their offerings any kind of gold standard for BBQ. We definitely DIDN'T THINK this would be the ONLY BBQ joint for us. We've driven past this place so many times and every single time we say next time. Well today we stopped. We liked everything we tried. There is just some major competition in town. On this edition of our BBQ pilgrimage we "pitted" Hayes County BBQ against Blacks. Really tough competition! Ordering was a breeze , the line was pretty short. We ordered brisket, jalapeño cheese sausage, turkey, and pork ribs. My favorite was the sausage and turkey. My hubby liked the sausage. The brisket and rib had a rub we thought had too much cinnamon in it. Both meats were incredibly moist and tender. The sides were great here! I ordered the green beans and loved them. Hubby ordered potato salad. This potato salad rivals Rudy's, which by far is a favorite. The cubed cheese was a good option and you can also buy all the fixings to make guacamole...Interesting! Another time I might try this. Another plus is they have Pepsi products! Yay! Definitely worth stopping here if you don't like standing in the long lines down the road, want ample parking and plenty of seating. read more
