I've been to Hildee's 3 times - twice for brunch and once for lunch and keep going back! Solid service, beautifully plated dishes, incredible cocktails and a homey vibe, make this a must-visit spot every time. They have a playground for your kiddos to enjoy too! They have a huge covered outdoor area for outdoor dining. Inside is thoughtfully decorated and fun. Always start with the cornbread and pimento cheese. I usually get a cocktail with tequila or mezcal. A friend tried the nitro cold brew and loved it. There is a 2 glass limit on it. I had the fried chicken thigh and honey butter biscuit this visit and it was to die for. The biscuit was perfectly flaky. The fried chicken was so juicy. I loved the hot glaze all over it too. We stayed on Wimberley last weekend and wanted to find somewhere good to do brunch with a group of 6 and 2 dogs. They had plenty of outside space that worked well for us. I had a bloody mary and my fiance had a bluebonnet fizz. Her drunk was really good and mine was as well but a bit small for the price. We shared a hot chicken sandwich and a mchildee. Both tasted pretty good but it was weird they don't include a side for the price it was. Overall: good service, good drinks and good food. Underwhelming food but nice covered patio and friendly service I've been wanting to try Hildee's since they opened but when I think of BBQ I always pick Salt Lick in Driftwood. But I finally opted to go to Hildee's - it was a beautiful night and I was looking forward to seeing the outdoor patio & bar. We didn't know about the live music so it was a nice surprise- until we sat down and realized it was way too loud for the small patio. We were hoping they had additional seating away from there music but the lower level area was just a children's play area. Since the music was only until 8 and we were so hungry we decided to stay. Unfortunately, once the live music was over it was just more unwanted noise - kids screaming and speaker blasting even though the patio emptied out. The one bright spot my boyfriend loved the cheesecake cobbler. I was disappointed with the chocolate mouse cake - very dry and no flavor. Our server was so wonderful but there was a 15-20 minute delay after we asked for the check (no explanation or apology for the long wait - she just disappeared and when someone else brought us our dessert to go we had to remind them we were still waiting to pay. Usually not a big deal but I specifically said we wanted to get home for the dog (hence the desert to go) But the patio is dog friendly if you want to bring them. Here is a good tip - my dog would never be able to handle a visit to Salt Lick - she is obsessed when we bring it home...she was not begging for the Hildee's leftovers. The fried chicken was heavily seasoned - good but nothing special. Although I will say my boyfriend really liked the fried chicken. My mashed potatoes came out completely cold, so I asked for it to be heated up - it was a long wait and although hot this time they were just bland and very dry - I love creamy masked potatoes and these seemed like store bought not homemade. My boyfriend liked his bbq and loved the honey biscuit...I thought it was dry and unappealing. The Queso was okay but definitely didn't agree with either of us later on (enough said). As for beverages, I ordered the Pinot but it was too fruity for me. Luckily my disappointment got me another trip to Fredericksburg to do wine tasting so I can find some local favorites. And my boyfriend was very happy they serve Ghost Note - it is one of our favorite breweries! I would recommend sharing plates so you can sample and find what you like. I really wanted this to be a great meal from a stylish spot and welcome a new "go to" spot to Wimberley. Unfortunately, it fell short. I look forward to trying it again to ensure it's not a fluke. But for now, it's just an Ok place. We came at about 5:00pm on a brutally hot summer day. Easy to get parking and, unsurprising, no one outside. They have a ton of outside seating under cover & fanned that looked enticing. I'll wait for fall when the temp is below three digits. I can easily see this as a great place for an after hours drink and listen to some live music in cooler weather. Inside was sterling. They did a great job designing and styling the inside. Almost all the tables were either 2 or 4 chairs, so if you come with a crowd it might be tough. Unless of course you all sit at the ginormous bar! They had two initial touches that really started to make me excited about a good meal. First off, plenty of staff. In a world of underpaid folks, they don't seem to have any problem finding people and that's a great leadership sign. And they all seemed happy, motivated and very competent. Most importantly - water! My pet peeve is never seeing the waitress and not getting your refill until the meal is over. They started with a nice large bottle of water for the table and refilled it when it went empty. GREAT measure of a waiter/waitress's skills. Unfortunately, the food didn't live up to the style. Either the chef was off or needs more focus on flavor. It looked great! But I thought I was eating at my in-laws on a low flavor diet. It started off with the Burnt End Rangoons. If it were advertised as Cream Cheese Rangoons, it would be closer to the mark. No smokey or savory taste at all. The thing looked great, but even the dough was dull. I did taste a lot of mint/ginger, but in the center of the cosmos when it comes to "Hill Country BBQ" - why even advertise Burnt Ends unless it's all hype. For the entree, I had the Fish & Chips. My deepest concerns came true: the lack of rich flavors didn't end with the Rangoon. The dish looked great but that was the most boring cornmeal crusted catfish I've ever had. I don't recall asking for no/low sodium or no pepper or no any seasoning or flavor, so something wrong there too. I have never added salt to a dish, but I was thinking of breaking precedent with this one. Even the tartar sauce was meh-ok. Add some pickle relish perhaps? The coleslaw on the other end was just so over spiced that I couldn't eat more than one bite. And I like some spice/heat. It's just that the entire thing was so over done. Maybe I was supposed to eat a little bite with each piece of catfish. Maybe I shouldn't have eaten the polar extremes separately! Lastly we had a side of green beans and blue corn grits. Usually I balk at that as a trend to monetize customers (aka, dig customers for more money). In this case, there was a TON of it. So, if you go, there's plenty to share. Likely each will serve 2-3 people depending on appetite. The green beans were very good. It had a nice flavor hit of garlic and were likely the best dish we had. The blue corn grits were very solid and the goat cheese (?) on them really added a great twist. I'm looking forward to going again to try something different in hopes of some solid flavoring, but this one didn't work as well as I had hoped. read more

Excellent decision to stop and try this place out! The guys ordered the Hildee's Burgers with tots. The ladies ordered the Hill Country Cobb Salads. Hildee's Burger 9/10 - they are: DOUBLE PATTY, 1/2LB. TEXAS WAGYU, SMOKED CHEDDAR, TOMATO AND SMOKED PORK JAM, LTO, HILDEE SAUCE, POTATO BUN. Wow! Pretty good overall, however mine needed a little salt and pepper to make the flavor pop. The included Tater Tots were excellent. A little crispy, like Hashbrown Tots. Hill Country Cobb Salad 10/10 - they are: FARM GREENS, NESTFRESH EGG, SMOKED PORK AND CHICKEN, HOUSE PICKLES, FETA CHEESE, GREEN GODDESS DRESSING. The ruling on these were they were extremely good. Reminded my wife of the epic salads at Supper at the Pearl. Definitely a must try! Service 9/10 - Zoey L was our server and did an excellent job. She was friendly, attentive and helpful. The food was superb. A small group of us got together for a late lunch today and selected this place as it was new and had lots of great reviews by our neighbors. It was spot on. The only misfortune, but still not a bad thing, was that the dining offerings were limited to a lunch menu. We had all shared the menu ahead of time and were excited to taste different things, but were narrowed down to only those on the lunch menu. As an appetizer we had the cornbread - candied jalapeno cornbread with house made pimento cheese. It was so different and refreshing. We all loved it. Each got something different for lunch and each raved about how good their selection was. Chop Beef brisket was sweet and tasty. Fried Pork Sandwich looked as good as our friend said it was. Hildee's Burger & Tots was a tad salty and though the tots were good, sneaking chips from the other plates made you wish the burger also had the house chips. All choices were good and without a doubt made us think that no matter what we selected, we would have not made a bad choice. We topped our meal off with a shared Peach cobbler cheesecake among the 5 of us. It was so delicious and plentiful that each of us was able to take a few spoonfuls 2-3 times around. What a tasteful experience. We loved it so much, we requested the Pastry Chef to come out and talk to us. Caroline joined us and shared some of her recipe with us as well as secrets to her talent. The food was excellent but the service was a little slow. However, overall this place is great. The cornbread and house made pimento cheese was delicious and the same goes for the balsamic reduction fried brussel sprouts. The ribeye cfs was thick and tender with no shrinkage. I should have ordered it extra crispy because I like the crust to be crunchier, didn't get a pic of the blueberry olive oil cake with toasted buttercream icing was to die for. The inside tables were still going to be a half hour wait so we sat at one of the open outdoor tables. It was super hot but the fans did a decent job. The only reason I had to knock off one star was the steak :/ I always have high expectations when ordering a steak... I at least expect it to be cooked the way we asked. But I also expect certain cuts of meat to not be served to customers at all... We were pretty surprised when it came out and it was very well done (not what we ordered) and very fatty as well. Hardly any meat. It sucks bc the other food and cocktails were great- yummy burger, creamed corn, tots, rangoons, lavender lemonade, and margarita! The steak just really kinda ruined it for us. Hildee's is an awesome casual eatery located conveniently along the Blue Hole Trail and away from the congested downtown section of Wimberley. The restaurant features both indoor and outdoor space, and there are live music performances offered at times in the patio. The restaurant uses many ingredients sourced from Texas including locally raised beef that is either a blend or hybrid including Wagyu. The food trends toward what I'd call new American, with refined versions of pub cuisine on the menu. We started with the chilaquiles verdes, featuring fried pork belly and a spicy tomato salsa, all served on fried tortillas. The level of spice was perfect with a bit of heat. We also enjoyed the smoked salmon, served with capers, soft boiled egg, and a tangy lemon dill sauce along with toasted baguettes. The burgers were excellent too, a bit overdone for my taste but still excellent with the smoked cheddar and Hildee's sauce on a potato bun. We also enjoyed the fried chicken thigh and honey butter biscuit sandwich, just oozing with that honey butter. The biscuit was very light and fluffy and the chicken was cooked just right and was juicy and flavorful. Dessert consisted of the peach cobbler cheesecake, with a very tender cake more like a mousse consistency and not your typical firm cream cheese. The cake was topped with a crunchy crumble and the fresh peaches were well carmelized and very delicious. I appreciate that the dessert was not overly sweet so you could enjoy the flavor of the peaches. We ate on the patio but the interior has a comfortable seating area and a long bar as well. Service was excellent with the server making many trips to clear plates, refill the water bottle and making sure that she took care of our needs. Prices were on par with other local establishments. I had lunch there with a friend where we had one drink each the bill came to $65 and then you're expected to pay another $10 for a tip of course. $75 for lunch. We have now had several dine-in and takeout experiences at Hildees and I just can't say enough good about the food and service for both! I'll start with the food: We've had (in no particular order) wings, burgers, risotto, pimiento cheese and cornbread, chicken fried steak and meatloaf. We've repeated most. When we dine in, we are always tended to promptly and thoroughly. Last night we did take out again and had wings, tater tots, pimento cheese and cornbread and cucumber salad. Cornbread has just a touch of heat and is so very fresh-every single time! Wings are perfection. Always. Cucumber salad is fresh, crisp and lightly dressed with a touch of dill. Because we've been keeping our 18 month old grandchild we lost our mind and splurged on Hildees Bars and Cheesecake and we are not sorry at all. They both are over the top delicious and gave us the sugar rush we needed! As I write this I'm enjoying a small piece of a Hildees Bar. It's a lovely treat on a Sunday morning with a cup of coffee. Both were tasty and well prepared. The meh: slab brisket Was generic and dry. It tasted more like a Sunday roast than central Texas brisket. Average food, high prices, but glad to see they changed the original, bland menu. We have sent multiple dishes back on separate occasions, only for the manager to argue with us about it. Same guy both times. First two times we went the menu was very boring and bland. They recently changed it almost entirely, which was nice to see. For the record, I've never sent queso back before in my life, but they managed to mess that up. Cornmeal catfish is just bad. Frito pie was atrocious. Burger is tasty, and nice to see they finally added tots to go with the $16 burger. Elote was burnt, tiny and flavorless (sent it back, manager argued with us). Wings were good. Recommendations: stop trying to be "elevated hill country dining" and just be better than what we can cook at home. I'll continue to come back merely to support small local business - probably for the wings and a drink. Hope these guys figure it out. Stop arguing with customers, big guy. read more

VERY DISAPPOINTED! My boyfriend made plans for us to have dinner at Hildee's for New Year's Eve. He spoke to them twice on the phone and was never told that it was a set menu at $120 per person! Since we drove 45 mins to get there, we decided to stay even though we weren't happy with the cost. To start things off, they were out of Pinot Grigio and Coke. IT'S NEW YEAR'S EVE! You should have popular drinks like this available. Secondly, the portions were SO small it didn't fill either of us up. Everything was sliver size, including the dessert. We had Christmas dinner at a beautiful five-star resort in San Antonio, which was an explosive buffet including all the crab, shrimp, salads, meats, sides, desserts, etc., you could eat, and that was only $75 per person. This was price gouging at it's worse. The food was just okay, certainly not worth the money. We won't be going back again. Major fail, Hildee's. read more

Today was my first time, and most likely my only time, to eat at Hildees. The pros first! The building is new, clean and organized well. The young women who was our waitress was polite and responsive to us. The cons- the menu is a major issue. In an attempt to be trendy they overdo and make excessively complicated simply lunch items. While eating I felt like I was paying per word on the menu and not for the taste and quality of the food. Likewise, with a limited menu, which I tend to prefer what you offer has to be excellent. I saw a significant difference between items and was disappointed. Finally quantity does not equate to quality. Serve better food and I would not be frustrated with the price. Likewise, charging for very basic and simple sides feels like customer bleeding. It will require a significant change and report on those changes for me to return. read more

Missing the Wow.....But not the Price Tag Based on the menu and the prices, we expected some sort of wow. I will say the food and the service were both acceptable. The main issue is the price to food ratio. The wine appears to be a reasonable price but it is maybe a 5 or 6oz pour at best. The red wine was also served warm in the same sipper glass as the water. We had the burnt end rangoon that were good but the sauce cup didn't allow for dipping. My wife had the $12 single patty burger that was again good but a single patty burger for $12 with no side? The sides were $7 to $8 dollars which would have made it a $20 single patty. I had the pork collar steak. It was really good but with a side of creamed corn, it was $27. All in all, we left not finding anything that we would go back for. While everything was ok, the prices were not. It was just an odd mix of atmosphere to price to taste. My wife and I came here for dinner recently on a Saturday evening. For cocktails, she ordered a Lavender Fields, one of the specialty cocktails on the menu. She really enjoyed it. I ordered a simple dry Waterloo #9 gin martini. My martini arrived with heavy greenish-yellow tint which no regular martini should ever have. This cocktail (I'm not calling it a martini) was mostly vermouth with a bit of gin. I returned it and they made me another. This one still had a lot of vermouth and was by no means dry. Contrary to what you may think from reading this review, I actually *rarely* complain or send anything back, so I just drank the second martini. For an appetizer we ordered the cornbread & pimento. The flavors were good. My only criticism is that there's a mismatch in textures such that it's difficult to spread the pimento on the cornbread muffins without the muffins falling apart. If I was able to keep the muffin together, then I wasn't pressing the pimento spread on hard enough to stick on the muffins long enough to get it to my mouth. One of either the cornbread texture and format or the pimento texture ought to be changed (likely the former). For entrees my wife ordered the special Iberico pork schnitzel, and I ordered the chicken fried steak. The chicken fried steak was okay; the breading wasn't terribly crisp and the mashed potatoes had a few unwieldly unmashed potato chunks: I'm ok with a few chunks in my country mashed potatoes but I had to remash some big chunks with my fork before eating. The spaetzl that came with the schnitzel was really good. However, my wife cut into her schnitzel and some parts were cooked, while other parts were near raw. Keep in mind that this is pork, not beef. I like my beef medium-rare but that's a no-no for pork. We informed our waiter and he returned the schnitzel to the kitchen. The manager (I presume, since he was in a random t-shirt rather than a staff uniform) returned with the schnitzel. He informed us that it wasn't really undercooked, that it's just pink because Iberico pork has a pink color to it. However, he didn't offer an explanation for why, after he had the chef cook it longer, lo and behold the pink is gone. I guess I should've taken a picture before sending it back but I didn't expect to have a disagreement about pork doneness with the manager of a restaurant. I grill a lot: Maybe three times a week, pretty much year around. I know what underdone meat looks like. It's not just the color, it's whether the flesh is bleeding. Parts of this pork schnitzel was done, but parts were bleeding, like maybe cooked to 125 degrees. It was the thicker parts that were less done. Maybe the meat was really cold/partially frozen when they started, which would account for a large variance between the thicker vs thinner parts as well. Also, schnitzel ought to be pounded out to unform thickness to avoid this sort of thing -- that's one of the hallmark characteristics of schnitzel. Regardless, I'm extremely disappointed (to say the least) that the manager tried to pass this off as an Iberian pink attribute rather than coming clean and trying to compensate for the mistake. Last, for what it is, our dinner felt like it's 30-40% overpriced: two cocktails, one cornbread appetizer, one ok entree and one undercooked entree for $109. The wait staff is young, but they are enthusiastic and work hard. The manager on duty is in the wrong line of work. read more

Very cute modern rustic barn style, with indoor and outdoor seating. All the staff are super friendly, sweet, and attentive. The tostada is a small plate (so more of a snack) and the burger was incredible (a little messy so beware) and the tater tots that came with it were crispy and seasoned. Venue: Out on a country road on the edge of The Texas Hill Country. It's new and pretty and inviting. We are on the patio area which was perfect! Food: Very nice variety of food choices without being overwhelming. Everything I tasted had a special touch to make it extra delicious. Service: Super friendly. The portions are small yes, but the point is to get the large- DELICIOUS sides! Our waitress, Vanessa, who we've had both times is excellent. She is quick, sweet, attentive and patient. The atmosphere makes it the complete package- away from all the noise/traffic of the weekenders in town but beautiful in its design and ambiance. You can see there was a lot of love poured into this establishment, and you can feel it too. We'll be back for sure!!! To note on the review about the septic, there was no smell... must have been a bad Friday and to the reviewer- welcome to the perks of owning a business in the beautiful hill country! To all the cheap people on here complaining about prices, keep in mind you can always go to McDonalds or Burger King. You can also easily look at online menus to decide if a place is above your standards. I've been to Hildees 3-4 times and the staff is great, ambiance is perfect and the food is really good. I don't mind paying for a good meal and adding in a nice tip as well. Some of you need to get off your high horse. You ain't that special. read more

there is no doubt the food is great here. However the pricing is no where near in touch with reality. My lady and I split a plate of fajitas. It came with 2 (regular sized) tortillas, so of course when we were ready for seconds we requested more tortillas. The wait staff said they would be an additional $2.00 for two tortillas. I get they need to charge or not just give them out. Come on. The meal way already on the pricey side. This was the tipping point for us. I refuse to go back to a place that wants to Nickle and Dime their clients. read more

Food was tasty. Waitstaff refused to seat our party of four at 5:30p because of "reservations" and said it would be an hour. We ordered food to go, ate it all in the parking lot, and still saw empty tables when we left. Poorly managed seating/service. read more

Second time here. Was very good, again. Clean restaurant with great indoor and outdoor space. Nice playscape for the kids. Staff are very friendly and attentive. The food was delicious. This place is exactly what this place should be, they're not trying to be something they're not like we see with many new hill country restaurants these days. Each dish is well thought out using fresh ingredients. After today's meal I thought to myself, was this really the best burger I've ever had? The tater tots were probably the best tots I've ever had.
