The wine and pairing of chocolate was by far one of the better tastings in Fredericksburg. The owner and staff are very hands on and knowledgeable and yet still give you your space to enjoy your tasting at your own pace. This for us was a 10 out of 10. We've been driving around town looking for this place and finally found it. It's not hard - it's just a little out of the main drag of tourists spot, Main St. Find Industrial Loop off 290 and you will get there. Once you get there, the choices are enormous and oh, so tasty! My wife and I booked the wine and chocolate pairing experience at Hill Country Chocolate in Fredericksburg, and without question, it was the best tasting experience we've ever had. We were greeted immediately and escorted upstairs to a beautiful tasting room where we spent nearly two hours enjoying an unforgettable experience. Dan is one of the most knowledgeable and passionate business owners I've ever met. He walked us through not only each DKM wine and handcrafted chocolate pairing, but also the fascinating story behind how the business came to be and the meticulous process that goes into making every product. His professionalism, attention to detail, and genuine love for his craft were evident in every minute of the experience. And the products? Absolutely phenomenal. I can honestly say every single wine and every single chocolate was outstanding. The Moscato, sparkling wines, and red wines were all incredible. The chocolate pairings elevated everything even further. The turtles, brittle, chocolate-covered raisins, chocolate-covered strawberries... every bite was memorable. It was one of those rare experiences where you keep waiting for something to be "just okay," but it never happens because everything is exceptional. The factory itself is spotless, beautifully designed, and it's amazing being able to look through the windows and watch the production area where everything is made. The retail shop is equally impressive, filled with beautifully packaged chocolates, wines, gifts, and treats. We told ourselves we weren't going to buy much... that lasted about five minutes. There was simply no way we were leaving empty-handed. What impressed me most was the precision and care that Dan and Melanie have poured into every aspect of their business. From the presentation, to the storytelling, to the products themselves, every detail has been thoughtfully crafted. I'd come back to Fredericksburg just to visit Hill Country Chocolate again. We did the Premiere Wine & Chocolate Experience & it was worth every penny. Melanie and Dan who led the experience are two business owners who understand the true meaning of hospitality. We walked out of there STUFFED! They kept the wine coming and even gave us to go boxes for all the food and let me just say, it was ALOT. We got to try some experimental pairings and give feedback & even some samples that weren't a part of the original tasting. I cannot recommend Hill Country Chocolate enough. This place is such a gem in the hill country with some truly amazing chocolate and sweets. We originally tried the jalapeño peanut brittle at another winery as a pairing and we immediately bought multiple bags and made it a point to check out hill country chocolates actual store on our next trip. They will offer you a sample when you come in, and you can either do a tasting or just do some shopping there. These chocolates are elite and are priced accordingly. The owner came out and talked to every table while we were there and provided Us with additional samples. Everything was delicious with amazing flavors. The greeter was waiting on us as we arrived & sat us promptly & explained everything in detail. The downstairs was cute & they also had a display of several items to purchase & I wanted to buy it all. However, let's get to the reason we came...chocolate tasting: what gorgeous chocolates, almost too pretty to eat. Dan McCoy, the owner made an appearance & kindly brought us chocolate covered strawberries, chocolate covered marshmallows, & jalapeno peanut brittle. I failed to snap a pic. We also got to taste their jalapeno peanut brittle & the caramel popcorn. I had their Lambrusco & the hubs paired with Pinot Noir. Whenever we go on vacation anywhere I always google, "best chocolate in ___" and make a point to put that on our itinerary. I was not expecting to find such an upscale chocolate boutique in Fredericksburg, TX but boy was I delighted! The storefront is about a 10 minute drive from the town center and we popped in on Saturday afternoon on our way back from a winery. Upon entering the staff asked if it was our first time and when we told her yes she said they would bring out some chocolate to sample. The chocolatier himself brought out a little board of chocolates for us to sample. Dan was so friendly and enthusiastic about his products answering any questions we had and bringing out additional samples of things he thought we might like. We ended up buying a box of truffles and bonbons to take home with us along with a couple of the macarons. Such a charming gem! The employee here was so professional and kind. She brought out these 2 chocolates for us to taste, and they were both phenomenal. One was a truffle with a fruit flavored center and the other was a caramel. My husband and I participated in the factory floor experience on our anniversary trip to Fredericksburg and it was the favorite thing we did all weekend! This experience is so much more than a tour. It combines a tour with a little bit of education and lots of hands on experiences. The class size is limited so you really get the best experience possible. We started off with a brief intro on making chocolate and different types of chocolate along with some tastings. Then we learned about tempering chocolate, including how to do it at home ourselves, and we got to dip and decorate strawberries. Making caramel pecan turtles came next followed by a lesson on how their chocolate coating machine works. They actually allowed us to run the machine and cover a variety of goodies in chocolate like caramels, graham crackers, and the turtles we made earlier. We learned about their caramel making process then got to participate in making caramel covered popcorn. They plated up a beautiful plate of chocolates that we had made along with decorations they had demonstrated making, which we then were able to pack up and take home with us. This was an all-around wonderful, enjoyable, and unique experience that provided a great change-up from all the wineries and shopping. The staff were all super kind and helpful as well. Dan did a wonderful job enlightening us on all things chocolate and how this business came to be. We learned a lot and really enjoyed helping to make the chocolate-covered caramel and the caramel popcorn. Afterward, we had a very nice time sipping wine and enjoying the charcuterie boards upstairs. And the icing on the cake was being able to take home some of the caramels and popcorn we helped make!
