Food was very very salty. Probably an accident there is no way it could have been on purpose. Service was not good. They were well staffed and not overrun. We were waiting over half hr after eating before we could flag someone even though we were at the 'bar' seating, and even after it was another nearly 20min. I used to be a server I am very patient and undemanding. These guys had the vibe of ppl who were annoyed to have to do their jobs, like surly teens. They had time to dance around and sing, and honestly it's great they were happy but when my date and i asked politely to pay our check they were huffy like how dare you interrupt. Was weird bc we had not voiced a single complaint and I didn't see anyone else giving them a hard time either. I think the food is probably good normally, my salad was nice, and I'm guessing the salt issue was a one-off. If you are prepared to sit forever to order food, get drinks, and pay, this is the place for you. read more

We ate: * Bruschetta with Chicken Liver. The liver pate had a drippy, watery texture -- kind of gross. * Veal tongue. The veal was tough, it had no taste, and the sauce was basically oil and vinegar. The few chick peas on top had more taste than the veal. * Rigatoni with sausage. The rigatoni was overcooked and kind of boring. * Matsutake mushrooms. These were okay, but not great. The other dishes made more of an impression, because they were so bad! It was hard to choose from the menu, since we try not to eat pork. And there were out of several items on their small menu. We finally gave in and ordered the rigatoni, so we'd have something to eat! Each dish cost about $12 and was relatively small for that price, except the pasta, which was reasonable. Overall, the food was unimpressive and tasteless. You can do much better. The good parts? They're open late and the waiter was nice. read more

I visited How to Cook a Wolf on Thursday with colleagues who were eating there for the second night in a row. The manager, having met them the night before, gave them his number and told them to call ahead. At a restaurant that does not take reservations, this sold my colleagues on a second night's visit. Needless to say, we were well cared for. I can't rave enough about the cozy sophisticated atmosphere and great staff. It is hard to recommend selections at How to Cook a Wolf as they choose their menu daily. With limited refrigeration space in the small kitchen and bar area, ingredients come in fresh daily, the menu is figured out around 4pm and the food is served as fresh as it gets. Between three of us, we sampled seven small Plates and one pasta. The meals, as sophisticated as Escolar Crudo with( Olive, Radish, Parmesan and Lemon), Beef Tongue and Ocean Trout Tartar (with Pickled Fennel, Cucumber and Fried Shallot) were decidedly simple but infused with big succulent flavor. Everything was a bit unpredictable, but amazingly worked flawlessly. The Skate Wing, served on the bone was served in Capers, Brown Butter with fingerling potatoes (flawlessly cooked) and arugala on the side. Our Pasta course, a Strazzopretti with bacon, onion and egg, was not overly rich and perfectly portioned for sharing. Lasly, the wine selections are wonderful and the martinis are stirred with care. This place is best of the best on my list and I will be back the next time I am in Seattle. read more

I'm a guy and this place was just a bit too hipster for me. My wife liked the atmosphere though. It's a really small restaurant with typical hipster decor. The taste is good with a lot more volume then I expected. The one thing that this place made me realize is that the underlining taste for restaurants in the North West is very similar and this has made me bored and tired of eating out at most of these restaurants. read more

We got recommended by chance, in Portland when we sat next to Mr. Stowell and his brother at a restaurant not knowing who he was, and he recommended How to Cook a Wolf on our trip to Seattle that next week. Wow, they treated us to a delicious medley of tastes that were absolutely over the Moon. Loved the burnt butter/sage pasta, beet salad was Wow, great wine list that does not break the bank and a full bar. I've been to this place a few times now, and I love that the menu is different every time. A nice cozy restaurant with a good balance of basic but chic decor & semi-exposed kitchen. They seem to do a good of of really getting the flavor of each ingredient used in every dish. They don't take reservations so the wait can be a while but plent of bars to hang out & wait down the street. uh, not really much to say about this place that hasn't already been typed, except that you're all completely right. this place has really good food/service. i'm not going to say anything about how great everything was, because you can just look at all the reviews below me (except for the few folks that got really shitty service; sorry, that really sucks!) and glean what you want from those. i will say that the spaghetti (pepper flakes/anchovies/garlic) was my highlight. The only thing that sucks is that it's kinda cramped. wouldn't recommend it for anyone that doesn't like talking over/under neighboring conversations or claustrophobics. and, of course, the gf and i felt so classy by the end of the dinner that we walked next door to the safeway and grabbed a 22 of corona before heading home, just to even things out. read more

Every meal here always comes with a surprise dish. The menu, although simple, is delightful enough to express a feeling that must be shared with neighboring patrons, enthusiastically. I haven't even mentioned what we ate yet. The service is as smooth as the escolar crudo followed by a red and yellow beet salad. Then a small but filling seared and broiled white striped bass set over cannelloni beans and bacon. A bit salty for my taste but it brought the flavors out of the fish filet. Probably the trendiest restaurant currently on Queen Anne Hill, and I think it will make many yuppies who don't want to be hassled by homeless panhandlers in Belltown happy. The place is small, with an open kitchen, and a trendy, urban ambience. I find it a bit pretentious, but the food makes up for it. The pasta is good, but not spectacular. However, the appetizers are quite good (I had the scallops). Overall, I would recommend it. It gets quite crowded, so be ready to wait. read more

When you are really looking forward to a meal at a new place and the food is zero-stars horrible, at least you have this sort of giddy shock, like at the end of Memento. What's almost worse is when the food is just totally unremarkable, which reflects my experience last night at How to Cook a Wolf. The yellowfin crudo was fantastic, but only due to the incredible quality and freshness of the fish and not to any skilled preparation. The heirloom tomato salad was the second best dish we had. It was fine. The two pastas we had, the manila clam linguine and radiatore with pancetta and rapini, were, yes, rustic and simple. They were also almost completely absent of flavor. To have something buttery, cheesey, and baconey be so bland is, to say the least, a failure. Everything was cooked properly. I just kept thinking as I ate that it resembled something I would make, and taste, and say to myself, "something's missing." So, recap. Nothing was bad, per se. But I saw none of the brilliance that has elevated Ethan Stowell to the top echeleons of American culinary talent, and it was sorely disappointing. read more

I've had an eye on this place ever since I lived in Queen Anne 3 years ago and had never made it in until now. The food was good, the service was fantastic, and the atmosphere was wonderful. It's a small place, but doesn't feel crowded. Sometimes smaller places can get loud quickly, but even with a full house the noise level was such that you could still have a nice conversation over dinner. I will certainly try this place again, and recommend it for the service level alone. I love that in Seattle you can go to a restaurant with nice food and amazing service and still dress casually. read more

"How to eat like a wolf" Yeah...good! Food: OMG! Yes! Oh Yes! Papardelle is so tender and deliciously buttery. The beets! These are heavenly, delicately minty, morsels of beet goodness (with pistachios)! Ooh, and hazelnut chocolate cake is just the right amount after 2 courses. Drinks: Definitely somewhere I'll want to go again. Some places just make GOOD drinks. This is one of them. I tried the Mario and the brando. Very strong, a tiny sweet, but not typical. A friend of mine recommended this place to me. We tried it and would absolutely go back! The food was really delicious and the service was great. It's a small restaurant but they do take reservations which I didn't know (should've checked :-)). It's clearly a popular place so even though we got there fairly late there was still no table available right away. So make sure to make a reservation first. I highly recommend the bruschetta. They made what's seemingly a mundane dish interesting - it was unusually good. I was hesitant to try beef tongue but it turned out to be really good, also highly recommended. I really liked the fish too but I don't see it on the menu now. The pasta dishes were pretty good (gnocchi and ravioli) too but I liked the non pasta dishes more. The portions were pretty generous - the two of us couldn't finish all 5 dishes even though we were both really hungry to begin with. It was such a good experience. Extremely disappointed. Very bad service given how famed the restaurant / Ethan Stowell is. I went there with my boy. We were unable to get our waitress' attention to make our order after she first checked on us upon arrival. It took several attempts to get another waiter to take our order finally. The restaurant staff refused to lower their shade because he wouldn't be able to get to the patio seating without bending. So my son and I had to sit in full sunlight and squint. My boy eventually had to sit under the table to avoid the heat and bright light. Then we waited a *long, long* time for our pasta to arrive. My son was very hungry and waited patiently for his pasta after downing most of our focaccia bread appetizer. Our waitress and waiter did not give us a good reason why our food had not been ready after such a long wait. Especially my son noticed that people who came after us were already eating their pasta!!! We eventually left the restaurant without my son getting his dinner. The bill came to $23.50 before tax - for a bread appetizer, a lemonade for my son, and my pasta (soaked in grease and I could only take one bite of it). The worst part of this whole experience was that non of the staff we came in contact with ever apologized for their bad service. My son asked if we could give them a zero star (instead of 1 star). Worst dining experience I have ever had. We were taking a couple out as our guests to what we thought would be a lovely dinner. It was just a nightmare. There are no reservations and we waited patiently over three hours to be seated. Although patrons had long since finished their meals, the staff was indifferent to seat us. Basically rude in a passive way. DON'T EVER GO THERE. I WISH SOMEONE HAD WRITTEN A REVIEW LIKE THIS THAT I COULD HAVE READ BEFORE HAND, AND I DEFINITELY WOULD HAVE STAYED AWAY. In all fairness, I cannot post a preview to comment on the food at this restaurant. My review is in regards to the service or lack thereof that I experienced prior to visiting the restaurant. We had a reservation for Friday evening to enjoy dinner at the restaurant. My phone rang the night at about 10 p.m. Which is late for me, since I work at 5 a.m.. Needless to say I was more than a little bit upset by receiving such a late phone call, and when I listened to the voicemail it was from the restaurant asking if they could move my reservation to later in the evening. Beyond yummy. I cannot believe what this restaurant produces from such a small kitchen. The Cassarccia short rib was abundantly flavorful and paired perfectly with a Pinot Noir from the Willamette Valley. My son loved the conchigile, a wonderful savory dish with delicious small clams. Well Probably one of the best places Ive been Especially in Seattle place is small only 25 seats very contemporary. We were greeted by a friendly hostess who sat us at the bar. Personally i always eat at the bar,( Better vantage point). We started off with The Castelvetrano Olives. They are the bright Green Olives from Italy. I always get them when I see them on a menu. They were very good. We then had the Hamachi Crudo which is sliced Hamachi with Avocado Lime and Jalapeno and a little Chili moil. Freaking great! the next course was The Chioggia beets with Mandarin, Fennel and Pistachio also outstanding. Next was The Bruchetta which was Ceci bean puree and Sultana, (which is a type of greek seedless grape) and Saba , a sweet grape syrup, I really didn't get that flavor but it was good. Next the Frisee salad which was fingerling potatoes,bacon Chives and a fried egg on top. You cut up the egg to get this gooey version of potato salad. Nice. The striped bass was next with a very crispy skin , fingerling potatoes English peas and pea vines. This dish was one of my favorites the fish was perfectly done , crispy on the outside and completely moist in the center. Next was the Pork Belly with Marrow bean, Califlower and Taggiasca olives. Excellent! Lastly a pasta dish which had beef short rib Oregano and Tomato. This was very good however it needed a bit more short rib. All in all Outstanding spot to eat! Bravo! read more

The interior of the restaurant is cool, its pretty small. Theres a bar section for people to order drinks and enjoy food in a more social aspect. Then there are a few tables behind. The place is pretty dark with candle light dining. The menu is pretty small and straight to the point. We ordered the roasted beets, geoduck crudo, grilled baby octopus and gnocchi. A rather lighter meal since we have been eating all day. The roasted beets first came out and it seemed like your normal roasted beets with goat cheese type of dish but instead with ricotta cheese, walnuts and endives. The red onions were a bit over powering with the rest of the dish. Second the geoduck crudo was one of my favorite dishes because it was light and crisp. Everything on the plate worked well together. The grilled baby octopus was light as well. The gnocci was tasted pretty good as well. The only reason I gave this place a 3 instead of a 4 was there was no WOW factor in the dishes. read more

Definitely go early! The place is small and fills up fast - we arrived at 5:30 and got the last table (I think there are only about 10 tables plus bar seating). With all they hype one would believe this place was pretentious but it was the opposite. The staff was friendly, and our waiter helpful. Don't go expecting to order one large meal, the menu is made up of small plates, meant to share! I love that they don't rush you and they bring out one plate at a time so you can enjoy each dish. My favorite was the Buffalo Mozzarella, the Soft Boiled Eggs, and the Gnocchi (not the Gnocchi you'd expect). The Lemon Gelatto was like eating butter out of a cup, so yummy! All that makes a good meal is what you cannot see here...flexibility and a two way experience between the diner and restaurant. From the kitchen the Chef made tiny plates for me so I could sample more of their menu, there was an eagerness to please and participate from every side - the bartender took the liberty to surprise me with little accoutrements off menu here and there, and finally the coup de gras was split at the end between an impossible achievement of gluten free pasta that was supple and yielding to the mouth...and the coffee that came with Aperol....because to quote my server "we know you don't f$&@ck around". My boyfriend and I were luckily able to find 2 seats at the bar as this restaurant was PACKED with no reservations available on a Wednesday night. Everything on the menu is served tapas style, and was made fresh to order. The bartender was wonderful - knowledgeable about the food and the area, and incredibly friendly. Since we were sitting at the bar, we were able to watch the chefs prepare dishes. My boyfriend and I shared the chicken liver mousse, pappardelle, ramp and ricotta Agnolotti, and another dish that I can't remember at the moment. The drinks were well made and complimented our meal.
