    all the pancake syrup your blood's A1c can handle

    I'm giving this place 5 only because it was an unavoidable late night stop that resulted in exactly what I wanted. unavoidable because nothing else in this town is open after about 9 pm but this is open 24 hours on friday and saturday. so at 2 am what to do is stop at ihop. turns out it's also the only place in this town where you can eat eggs in any other form than scrambled and those are usually encased in a "croissant" or biscuit or english muffin. it's fast food or this place for breakfast. really i can't leave town soon enough, but this served the purpose for what i wanted that evening which was eggs over easy, not so easy to find as it turns out here. what really caught my eye was the menu which centers around, obviously given the name of the place, before the healthy marketing folks decided to de-emphasize the term "pancakes" with ihop. if there's a less healthy thing to eat other than pork skins fried in lard, it's pancakes. and to add insult to injury, ihop provides a bottomless carafe of "maple syrup"-like pancake syrup. that's where ihop and i part ways even if this is the only place to get eggs over easy at 2 am on saturday morning. pancake batter is a versatile material. it's of course the basic requirement for a pancake, but there are other uses. funnel cakes are a great example. my friend frankie, died recently of a coronary which i believe was actually an occupational hazard for him, made quite a "healthy" living as a food vendor at fairs, football games, street festivals, even had a permanent location on the jersey shore. from knowing him i must inform you that you should never feel superior to that apparently beleaguered guy you see selling hot dogs in a tent at the fair. he's probably making more in a year than you are in two, and he doesn't have a boss. now if you substitute funnel cakes for hot dogs, triple or even quadruple that net income because the food cost to make a $4 funnel cake is about a dime. so fine for franknie, but what's wrong with pancake batter from your point of view is the way the body handles flour and sugar: sends a blast of glucose almost as fast as a blended margarita, and after that how do you spell pre-type 2. the ihop people provide all the high fructose corn syrup you can pour on those pancakes. really, it's not a healthy place to eat and i'm not a particularly squeamish guy about such things. but here's where i suggest you draw the line. unless you happen to be a sleepless out-of-towner driving aimlessly around in east texas at 2 am. then go for the eggs over easy. As for the rest of ihop that's a solid 1 star.

    Service was excellent our waitress was kenlee a bubbly red head. Oh and food was great also.

    It takes FOREVER for anything. The food takes forever to come. Waiters take long to come back and get orders. Just overall poor place!

I…read morewas enticed to try this place strictly by its name. this lead me to imagining how the place would provide yet another example of how silly texas stuff actually is in today's world. in short, i think texans take themselves much too seriously. they aren't riding the range, or having shootouts (well, not the kind that happen in a corral anyway) or (with air-conditioning everywhere you turn) have much need for a "10-gallon hat". but i had neglected to consider that, all that predictable claptrap aside, this place might actually be enjoyable simply because it's a good "steakhouse". I don't really care much for beef these days, it seems kinda unidimensional flavor-wise, differing mainly in tenderness, cut and age of the meat. there is something to the choice of how "well" you like the meat cooked, and in that regard it's much like lamb to me: flavor gets more complex with time and heat. I prefer lamb braised like the greeks do it, rather than grill-marked with red-pink inside. Likewise with beef, which needs to be carefully broiled or grilled to a point just before the protein begins to dewater from being overly done. well/medium well is a tough call to attain given that the cooking continues several minutes after the heat is removed. So here's the serious good about the redneck grill: go for the 16 ounce ribeye: the cut is about as tender as texas steak gets (don't know where peter luger gets their meat but at one time the old man personally selected the incoming hindquarters off the truck). 12 is mainly thinner and has a bit more fat. forego any additional seasoning on anything (french fries included) as there is more than enough salt and etc already. order it cooked to your taste, the kitchen will make a good effort to deliver it that way. this has been my best restaurant experience in this little town, for whatever that's worth. but of course there's plenty of the old texas-texas-texas claptrap to amuse you: the ever-popular cowhide on the wall, exposed brick behind broken terra cotta, creative use of corrugated metal siding as wall covering, expired texas license plates decorating the walls, antiquey kinds of lamps emitting low level light, etc etc etc. ok, i give up on this, texas is still mostly texas once you're outside the perimeter of one of the hopelessly overgrown metroplexes. if you're planning to relocate here to buy a cheap house and avoid state income taxes, enjoy it. i'm going home tomorrow.
