The lady at the counter seemed like she couldn't be bothered. The coffee tasted like it had been burned and sitting for a while. Pass.

Persephone absolutely lives up to the hype…read more The bakery is beautiful inside and has such a charming European feel. It's one of those places where you immediately want to order one of everything. We tried a few pastries along with the quiche, and everything was excellent. The Kouign Amann was buttery, flaky, and beautifully made, while the quiche was decadent without feeling heavy. The flavors in the quiche were amazing and the crust was perfect. Definitely one of the best quiches I've had. The breakfast sandwich was also an amazing savory item on the menu, it was served on their croissants so you get the best of both worlds. It does get busy, especially in the mornings, but it's worth the wait. The line moves fast and there's plenty of seating on their lovely patio. I'd consider this one of the must-stop bakeries in Jackson Hole.

I'd read about Persephone before our trip and marked it as a "must try" while in Jackson Hole…read more We walked over early (8am) on a Thursday morning to grab a cup of coffee and peruse the pastries. We were very surprised to find the line already went out the door! The line moved fast and boy you better be ready to order when you step up, because it is a fast moving, no messing around system. In addition there were at least three employees taking orders at the counter so the pastry case is extremely crowded and it's difficult to view what the options are. The employees weren't un-kind, but they there were no niceties like "good morning". They wanted to move you through the line quickly, so we didn't feel we could really peruse the pastries and so we skipped it and we just ordered a hot coffee and a large hot almond milk latte. People were already more than crowded inside waiting for their items so we stepped onto the patio. It was a chilly morning so the small fire pit was welcomed. For the giant crowd waiting we received our drinks within a reasonable time frame. They call names from inside behind the counter, so if you are not within 4 feet of the counter you will not hear them. We sat on the patio near the garden and the view was beautiful. My "large" latte was the same small size of my husband's drip coffee and both appeared to be around 12-14oz. Disappointing. The drip coffee was okay, but not worth returning for and my almond milk latte was also just okay. We maybe would have given Persephone another try, but in the end we chose to try the many other coffee/bakery shops in downtown. I'm not saying 'stay away', I'm just saying it's not as amazing as the hype. Other tips -look at the menu BEFORE you get in line, especially if it is buys -if you happen to snag an indoor seat realize there will be little to no privacy as the line will form right next to your table. -the birds outside are cute, friendly and will absolutely eat your food if you leave it unattended for even a moment - we saw a pack of small birds try to fly off with an entire egg croissant sandwich in the 1min the owner stepped inside for napkins. *don't worry, we stopped them

They also have a nice selection of pastries including these massive donuts and breakfast options if you're looking for a quick bite. The location is just a block off the main square with the Wort Hotel just across the street and some art galleries which is a great place while roaming. I recommend if you are looking for a unique dessert with coffee! The French Dessert/patisserie has a variety of goods--not all shown. On the far left there is flavored chocolates (bonbons?) with a range of flavors (when I went) from Huckleberry + Vanilla, tea, etc. it looked like you had to buy a minimum box of 6 for 24$ but I could be incorrect on that. Next case had a variety of desserts, which is where the huckleberry chocolate out of (abt 9$). They do run out of pastries as the day goes on so something specific from yelp might not be in there. Next case has about 10 flavored of gelato. The following case has savory pastries like feta cheese-mushroom or ham croissants in addition to sweeter goods like croissants and cookies. There is indoor seating (about four two tops), a bench outside, and takeaway pastry or chocolate boxes if to go. When I walked in it was pretty crowded but the service was efficient. Luckily there was enough space for me to dine-in with a comfy spot against the wall. (Note: The other side of the table had soft and wide stools but with no back). (Note #2: When eating in you get ceramic plate + silverware with a plastic cup for cold drinks; there is a little station near the entrance for trash and plates). The chocolate-Huckleberry dessert was delicious. It had chocolate roses (with texture!!!) on top and a marbled silver-purple chocolate surrounding the cake and huckleberry filling. Very beautiful and I really enjoyed the sweet but also tart huckleberry with the chocolate. It was a bit of a mess to eat but I am more than okay with that! I would recommend it! I was able to get the feta-something-mushroom croissant warmed for lunch, which was pretty tasty. Nice flakiness and the middle with the filling was a nice mix. If you are stopping for lunch/breakfast and want something a little more substantial to your meal/snake then I recommend. They also had a ham-something-Jalapeño but I wasn't sure on how strong the pepper would be. Lastly, I had a matcha latte. It can come in a variety of sizes and I believe with the option of cold or hot. It was good-decent but not my favorite matcha-- the flavors were more milk heavy. But that is likely just my current preference--some places I have gone recently have it stronger and some have it sweeter; so take it as you will. It did have the nice crushable ice which I munched on with the concentrated matcha at the end though. As for the drink menu they had more non-coffee options like hot chocolate, turmeric latte, etc along with (what is maybe standard? coffees---don't drink them) like cappuccinos, mochas, etc. along with drip and affogatos.

I perused the merch and the pastry case. I love that they call muffins "cupcakes", because really they are. I settled on ordering a hot almond milk latte and a drip coffee for my hubby. I know this is mountain town and things aren't as rushed as they are in the city, so I intended to wait. However, it took a good 3-4nin of me standing alone at the counter before anyone acknowledged me to take my order. After ordering I took a seat outside to wait for my latte. I waited, and waited. Thinking they called my name and I missed it, I headed indoors to check. Nope. They were finally calling the name of the couple who was seated outside when I arrived! Four or five minutes later they called the woman who was in line before me. There was another girl who walked in after me and was pacing, she finally asked about her mobile order she had placed 20min prior, they had no record of it, so they began making hers. I waited some more. When my latte was FINALLY ready it was placed on a counter & my name called. No "sorry for the wait". I grabbed it and booted out the door so we could get on the road. The drip coffee & latte were fine, but definitely not worth the wait. With so many other coffee shops steps away, we opted to visit the others for the remainder if our trip.

I also ordered a sweet bagel with mountain berry cream cheese. I was excited to try something sweet, but was immediately let down. The bagel even looked different. It was small, kinda burnt, and seemed to not be baked well. The cream cheese also had no flavor. We both tried bites of it, but felt it was bad enough to throw away. What a let down. The inside is not too big but enough spots for a group to sit if you get 2 tables, just keep a look out people come in and out pretty quickly. They were out of their Lox Bagel with actual salmon and we accidentally ordered the bagel with salmon but just in the cream cheese. Make sure to clarify when ordering this as we were confused and never heard of it before. The salmon cream didn't have a strong flavor, maybe the cream cheese was pretty overpowering. I did prefer the sandwiches over the cream cheese bagels. There is a thick layer of meat but not much sauce on either sandwich so I would recommend asking for either extra or on the side. The bagels itself were a little on the thicker side, they were toasted but not much as seen from the pictures. They were pretty doughy, not a personal favorite. The workers were nice and gave recommendations for favorites. They also were pretty fast so it didn't take long to go in and out.
