Some salt, some pepper (and for me, some Tony Chachere's Cajun seasoning), put 'em on the grill on low heat -- internal temp is 145º - 150º, put it on a plate, and then let it rest for a good 5 minutes. I've had tears a joy rolling down my cheeks from these pork chops. There've been times when one week's chops are better than the previous week's but they still always, always, always beat every other chop I've ever had from any other source, hands down.
