It was more the handling the raw fixings without gloves and noting that the lettuce (as beautiful as it was), and I'm assuming the other vegetables, we're not washed prior. I don't think many restaurants do for the reason of preparation speed and ingredient longevity. That part bothers me everywhere because all I can think of is pesticides and germs. I don't typically end on a less than positive note but, I knew this one was going to be lengthy and people's attention spans short.
