I had scallops with each one placed beautifully on top of of really interesting wild rice and finished with toasted coconut. The pineapple salsa and the Hoja Santa Fe Oil were placed in small rounds in the middle of the dish because they had some kick to them. What was especially impressive, is the gentleman who brought out my meal leaned over and said that the Chef wanted to let me know that the two items in the small dishes had heat to them, but I was encouraged to give them a try for the full flavor.
