Chef Michael is a fantastic instructor who breaks down the culinary process into steps that are easy to follow but feel professional. I also loved the experience of watching Jesus the owner and his chefs making the 2 big paellas , as my paella pans are smaller and -in my experience-it is really tricky to make them so big.
