My son ordered the miso. All broths still did not have any depth to it because their base broth had not substance. -Takoyaki was a bit underdone and you could taste the flour. The izakaya is fun with Japanese rock music playing- which loosely reminded me of Kill Bill's 5.6.7.8's scene. Tanma's owner was thorough and gave hubs and I a crash course on bowl+spoon placement, aligning the wakame to be at the front, sipping the broth first, pulling noodles high and dipping them in and out the broth. And then just then you move your head closer to the bowl, so that you can take in the delicious ramen combo without spilling any and slurp it up. I've had ramen in Scarsdale with a clear veg broth, topped with crispy tofu, grilled tomato slices, Napa cabbage and other grilled veg. So getting an all-veg broth with a splash of coconut cream to mimic pork broth here wasn't what I expected. Getting an all-clear veg broth here isn't an option either- but what's important is we were assured it's a herbi-broth that's used.
