The izakaya is fun with Japanese rock music playing- which loosely reminded me of Kill Bill's 5.6.7.8's scene. Tanma's owner was thorough and gave hubs and I a crash course on bowl+spoon placement, aligning the wakame to be at the front, sipping the broth first, pulling noodles high and dipping them in and out the broth. And then just then you move your head closer to the bowl, so that you can take in the delicious ramen combo without spilling any and slurp it up. I've had ramen in Scarsdale with a clear veg broth, topped with crispy tofu, grilled tomato slices, Napa cabbage and other grilled veg. So getting an all-veg broth with a splash of coconut cream to mimic pork broth here wasn't what I expected. Getting an all-clear veg broth here isn't an option either- but what's important is we were assured it's a herbi-broth that's used. The kimchi, bamboo shoots and shredded cabbage toppings were nice- but I opted out of the vegan chashu instantly. Again, I was assured it's vegan- but no thank you. This was an experience for both of us- and we liked it.
