I attempted to walk in on a Tuesday around 10:30 in the morning. (Has trouble with door) Hmm. Maybe I used all my strength up in the gym this morning. (tries again, to no avail) The woman at the front counter saw me and let me in. "Yes, we're open." Well, yes, you definitely are! Your signs say "OPEN," and the hours posted on the door said you're open from 8 in the morning on weekdays! Not much eye contact or smiling from her throughout my short visit. Having read Chuck B.'s review on Yelp, I also went with the Koyote Burrito ($6). Steak, potatoes, salsa, cheese, egg, bacon, and sour cream. A hefty lineup of ingredients for my grumbling stomach. I 86'd the sour cream, as usual. I did get two small containers of sauce, one hot and one mild. The flavors are good. I mean, there's diced bacon in this burrito, so that should be an auto win. This pork product was largely soft jerky-like in texture, with perhaps a bit of the remaining bacon fat offering some lubrication. The eggs were minimal in my burrito, but fine for what it was. The diced steak was fairly average, a majority if it on the overcooked side. If you didn't tell me there was salsa in the burrito, I wouldn't have noticed. Just heavy item after heavy item canvassed my mouth. I doubt the sour cream would have made a significant positive impact. The potatoes were seasoned well, with a browned exterior and soft interior. Perhaps the best thing in the burrito. I didn't find the hot sauce spicy. I added the mild sauce anyway because it was there -- and perhaps I was a desperate panda. A good life lesson can be applied here: "Never settle, Aaron. Never settle." For six bucks, it could still sorta be deemed on the reasonable end. Other burritos are around $4.50 or less and may be more worth my buck. Combo plates (with rice and beans) are anywhere from $6.50 to $7.25. Overall, the prices are very affordable. It seems they have only been in business for a few weeks, so I'll still consider returning. It would be a bit a more positive experience if the front-of-the-house staff smiled more and promoted some top menu items. Err on the side of too much smiling and friendly promotion, instead of silently standing there like a robot waiting for the order to come in. read more

If you're looking for a cheap meal near the Western Oregon campus and are in to traditional Mexican/tacos, this is your place. Generous portions, a wide selection (including tortas, tamales, etc.), and great adobado/chorizo. Pretty sparse interior but you prolly didn't come for the decor . . . you came for four tacos for a five spot! If you don't want the bland Americanized Mexican found at many places, come here and order individual items. The horchata is pretty tasty, too. All and all a budget meal that's close to campus. Wow, this place was a train wreck on our visit! We walk in and the first thing we see is an overflowing trash can right inside the door with trash on the ground around it. We arrived after the lunch rush, but still. You order at the counter and they yell your name out when your food is ready. You can grab bottled/canned drinks from one of the coolers but the fountain drinks and waters are done behind the counter. Maybe the students had previously disregarded the no free refill policy? The food was not very different from that national taco chain that wants you to Live Mas. You do get a lot for your money but it's a lot of blandness. One of us got a nice hair right in the middle of the burrito. Yum. My Chorizo breakfast burrito had virtually no taste. The single restroom was nasty and creepy. Black plastic haphazardly taped to the window was a different look. The TP was sitting on the floor next to the toilet and the trash was overflowing. All that and the person at the counter looked at me like I was crazy when I asked if they had a recycling container for my can. Ugh! read more

Way better than the Muchos in Monmouth! The door didn't stick either. When I pulled up, it seemed as if a Zumba class was going on across the street and a Western class had just finished. I wasn't the only one there. Thank you Koyote Tacos for being here in Monmouth. On the drive home, it gave me a refreshed feeling for my small hometown. Oh and they were quick also and great menu selection. Very generous serving sizes as well. I think that someone else mentioned it also. If you are looking for delicious authentic tacos then this is the place to go. I have eaten here several times and I just love their tacos. Their fish tacos are scrumptious. To be honest there isn't anything I have eaten here that I didn't love! The place is a little divey, kind of a little hole in the wall but very authentic Mexican food! Took my son and his friend here today for lunch. Yes, the door stuck for me also but I got in:) Two of us ordered the Koyote burrito (they changed the spelling on the menu) and the other ordered the pollo burrito plus chips/salsa. The chips are made there- hot and fresh. The burritos are huge! The other half is in the fridge now. If you want spice (like we do) you must add some...ok a lot...of sauce. The salsa (pico) is tasty. Awesome bean burritos. Like, something special. The creamy beans are perfectly flavored, tortilla is cooked up just right. I always order them with onions, so there is my tip for ya. Being from So Cal, I can be picky. So far, I have been happy here. Chile Relleno was great, rice was delish, and carne asada fries were ok. Needed a bit more 'stuff' (a dollop of guac would have been nice...) At least the fries seemed real, not like the processed ones at M*chas... Now I am hungry! read more

I just moved here from the south and have been searching for great mexican food that i've grown up with- which is really hard to find in Oregon. Everyone told me to try this place here in Monmouth. I walked in and was the only customer, yet I waited like 6 minutes before someone took my order. The cook kept just staring at me through the window and continued laughing with the other staff. I tried being friendly with the person who took my order and explained that I was excited to finally get some good mexican food here, just like home in Texas, but she seemed to hate talking to customers I guess. I ordered a tea and the ice machine was behind the counter, but everyone just stayed in the back laughing and that same cook kept staring through the window. So I drank it with no ice. The tacos came out on a real fancy looking platter, yet they tasted bland. The beans were basically water and there was a whole ass bush of cilantro on everything, I couldn't eat it. I've never seen so much cilantro on something in my life. In Texas and Mexico we just sprinkle it on. read more

I had shrimp enchiladas, they were not on the menu but they have shrimp tacos so I asked and she said yes. It was very good. My wife had a half order of nachos and said that they were good also. My friends and I go to koyotes at least twice a week. The woman working there is so nice and helpful. The menu is a bit overwhelming so I just stuck to the good basics (4 mini tacos with carne asada and carnitas). They have a good location being right off of downtown Monmouth and on the WOU campus. I hope that they stay in business for many many years to come! I'd recommend this restaurant to anyone that loves a good meal. I will for sure go there many years to come! read more

Can't get orders correct. No matter how many times I go in and order No Cheese, I still get cheese. Either that don't care about customer's food allergies or worse, they do this on purpose to spite their paying customers. No matter the times I complain or mention it, nothing changes. Fast, cheap, delicious Mexican food. Right off of the campus and open most of the night. What else could a college student ask for?

As a first-generation Mexican American, you should be aware that this is the type of Mexican restaurant that I'm actually embarrassed to admit that I've been to after going to other area restaurants with better flavor. To start, I ordered a Carne Asada plate ($7.75) and was given a disposable paper plate with a quarter of it with chopped up cold carne asada meat and the rest with refried beans, rice and lettuce/pico de gallo along with microwaved corn tortillas. It looked somewhat appealing but after 2 bites, I just could not taste anything. There were no spices or flavor in the meat and the rice/beans just lacked any flavor whatsoever. I gave the rest of the food to my dining partner who also could not taste much. I threw away the rest of the food. This place might work for a starving college student looking for any type of nourishment (especially after a night of drinking) but believe me that there are better Mexican restaurants in the Willamette Valley that actually have flavor. read more

I live within walking distance of Muchas Gracias, Burrito Track, the Roth's mall, and now Koyote Tacos. Never was completely satisfied with Muchas or BT next door, but Koyote has brewed iced tea with free refills, and sturdy forks. Well spiced and overall surprisingly good for the price. ALSO HERE'S AN EDIT: OK, ... Also I did an occupy event yesterday and a bunch of locals took notice. ... I strapped on a pair of angel's wings from a child costume I bought a few days ago. ... I played a bunch of songs on my knees facing the Oregon Military Academy. Literally I rode circles on the sidewalk to the hill overlooking the South side, then got on my knees like a tortured prisoner, then played random indie songs. Then I rode around front and kneeled in front of the Signage, at the Northwest Corner of the block, opposite Public Safety. Then I rode back to (MY MOM'S BASEMENT). Then I rode back over to Oregon Military Academy and did the exact same solo Occupy again. Today I was at Coyote Taco and WOU's Public Safety car pulled up to the driveway access between Coyote Taco and the Church immediately North of them. Public Safety peep turned on his/her left turn signal, parked the Public-Safety-mobile in a parking space. When I got up to leave, Public-Safety-mobile was still there, but Public Safety peep had exited the vehicle. Today I wore my red-gray stripe shirt, and red shorts. I'm unable to walk a mile uphill, so I'm using the tricycle as a hobby horse. Rosie will love her dog food, and in fact I'm bike-limping to town with her tonight.
