I thought the breakfast burritos were really good, but they did not compare to the lunch ones. After having lunch, I knew I needed to leave a review. One item of note, the burritos are pretty small so I would recommend ordering at least 2. My wife on the other hand was satisfied with just one. The 3 burritos with extra cheese totaled $16 and change, so I think that was a fair price for lunch. especially as good as it was. They have a great selection of different meats. Both my wife and I had a Chili Verde Burrito with extra cheese. The Chile Verde had a good kick to it but was not too hot. The meat was super tender. You could tell it had been cooking all day. Great flavor and like I said the spice level was just right. The burrito was wrapped in foil, so when we got back to our RV, it was still blazing hot and had given the cheese time to fully melt. Delicious. I also had a spicy Chili Guisado. For those not familiar, it is a beef slow cooked in brown gravy. While it did not have the kick that the Chili Verde did, it still had a little bite, and with the salsa it was perfect. But the flavor was spot on. Another delicious option. We are here for another couple of days so its entirely possible that I might be back to try a different selection. They also have chicken, ground beef and potato and a brisket offering. And I'm sure I am probably missing something, so check their website for the latest menu. Other than that, their menu is pretty limited so don't expect much, they are after all called "Mingos Burritos". I always say, if you do one thing really good, you don't need to do a whole lot of things somewhat good, and they make a really, really good burrito.

But, in all fairness, I've eaten at no fewer than 200 different Tex-Mex restaurants in my lifetime. First, as one reviewer stated, this is very much a New Mexican-style restaurant, although they try to get there with the Tex-Mex. What does this mean? Quite simply, this place uses red sauce (vs. chili gravy) for enchiladas. It also offers stacked enchiladas with an egg placed on top, which is true New Mexican. Beyond that, the menu is quite varied. I'll start with my cheese enchiladas with red sauce. The sauce was spicy as hell, which was wonderful. The enchiladas themselves were a disappointment because they used two corn tortillas to roll them with the smallest pinch of cheese I've experienced in a while. -- I'm not sure about my dad's chile relleno and beef enchilada with green sauce, but he really enjoyed both. The rice and beans were pretty much par for the course. Not bad but nothing special. The salsa here is phenomenal. There's just enough onion and cilantro to make it memorable. It's served cold, which is a must for me, and it has some serious bite. Service here is really friendly and efficient. The atmosphere is old school: cheap paneling and trite "Mexican" decor. The men's bathroom is almost as dark as a movie theater. I don't get to this area often, but I would certainly eat here again any time I do.

Since the weather was nice, we were able to sit outside and take a break from driving. The tables are located under a large awning that provides plenty of shade, which made the experience even more relaxing. The food came out very quickly, and the pastor tacos were delicious. We also ordered a pastor quesadilla, which had great flavor but was a bit too cheesy and heavy for my taste. The tacos were served with onions, cilantro, limes, a jalapeño, and salsas, while the quesadilla came with lettuce, tomato, and pico de gallo. Overall, this was a great stop during our road trip and a refreshing change from the usual chain restaurants along the highway. The service was quick, the outdoor seating was comfortable, and the tacos alone made it worth the visit. I would definitely stop by again if I'm passing through the area.

The man at the front, who I assume is the owner and chef, was super friendly and helpful. He had a great energy. Tacos were also pretty good. I had a preference for the regular tacos, as the Birria tacos were a bit heavy from the cheese. The accoutrements (onion, red and green salsas) were delicious with the tacos.
