The octopus was not as I would have expected and in a rich cheesy sauce but still very flavorful and tender. The empanadas were perfect as well. There are also smaller tables around the restaurant, but you would miss much of the theater of watching the chefs at work. Another advantage of sitting at the counter was the remarkable pacing: as we finished our plates, they were often cleared within seconds and the next course arrived within minutes. In addition to the Miami Spice menu, there was a four-course seasonal Summer Menu, which we ordered, and an eight-course Evolution Menu, all with optional wine pairings. The Miami Spice and Evolution had fixed courses. For each of the four courses on the Summer Menu, we had several choices. There were also additional courses, including bread and butter, a foie gras starter with Parmesan foam, and a cantaloupe sorbet palate cleanser. Since we were celebrating our anniversary, we were also presented with a stunning raspberry and white chocolate heart dessert to share. I normally avoid foie gras out of compassion for the goose, but there wasn't an alternative offered. I have to admit, however, that this one was delicious. The essence of Maury "Vieilles Vignes" gave it a faint caramel-like flavor that paired beautifully with the richness of the foie gras. And the hot cheese bread is not to be missed. One bite with the softened, creamy butter and I was already thinking, "Okay, I'm glad I came." For our first courses, we both chose the Japanese hamachi with toasted almond emulsion and winter citrus. It was beautifully presented and a light, gentle way to begin. For the second course, I ventured further outside my usual comfort zone with the Japanese sea urchin, served with onion custard, asparagus, and coffee essence, while my husband chose the leeks braised in wasabi with radish, dill, and egg yolk. After snorkeling and seeing sea urchins in their natural habitat, I appreciated the opportunity to finally taste a really good one. The leeks were also amazing. I was still a little hungry when we reached the main course, but that was about to change. I chose the olive oil-poached halibut with clam-vermouth broth and a spring vegetable bouquet. My husband had the Mediterranean branzino with lemon balm emulsion, crème fraîche, and a caviar-stuffed tomato. The halibut was an exceptionally delicate fish in a light and genuinely delicious broth. I had been worried the clam-vermouth broth might taste overly fishy, but it didn't at all, and I savored every drop. The signature mashed potatoes served alongside the meal were decadently rich, buttery, and filling. For dessert, we both chose Le Chocolat Sensation -- Guanaja chocolate crémeux with white chocolate ice cream and Oreo cookie crumble. It arrived beneath a beautiful, thin disk of chocolate concealing the chocolate, cookie crumble, and ice cream below. If you had any hunger remaining, it was certainly cured by this point. Our anniversary raspberry and white chocolate heart complemented the flavors beautifully and made for a lovely photograph and memory of the evening. Our waitstaff, including Oriana, was absolutely outstanding. Service was attentive and polished and each dish was carefully introduced as it arrived. Combined with the extraordinary choreography of the open kitchen, the pacing made the entire dinner feel seamless. This was our first two-Michelin-star restaurant in the United States, and I'm glad we experienced it. It wasn't simply dinner; sitting at the Chef's counter gave us a front-row seat to the precision, creativity, and teamwork required to produce food at this level.

The space is a small but welcoming room in the interior of the hotel. There is a bar outside for all hotel guests. We had the 2024/2025 winter menu. The menus change with the seasons, and sometimes the main Course will change depending on product availability. As of now there are no add-ons or supplements to the menu. We started off with some candied pecans dusted with curry. Our group was presented with the wine menu (the tambourine room only serves wine ) and were asked if we wanted to start with a glass of champagne. We selected a Charles Heidsieck Rosé ($60 a glass) . We brought our own wine for dinner (corkage fee was $75) We were presented with a shooter of bone broth shAmuse Bouche were three individual bites, one shaped like a taco, a square croquette, and a foie Gras round bite that was delicious. Next was an oyster with ikura. Clean and bright. The Shrimp & Caviar was excellent in taste and presentation. Sashimi style with Artichoke one of my favorites. Next came the Striped Bass with Mushroom a Tarragon sauce and Leeks, which had a crispy potato chip over it. The bass was a good balance of firm and tender. A good hearty course. At this point we were provided a mango / passion fruit Palette Cleanser. Next was the final course, squab. Presented as two separate dishes. First the leg, perfectly Crisp with a cherry glaze. I joked I wanted a dozen of them! Great. Then tender slices of squab with a German turnip Kohlrabi, mashed potatoes and truffle. In a squab jus and espuma. It was an excellent main course. Delicious! For desert pastry chef Sevanna Caban described some of her methods and reasons for her flavors. Our pre-desert involved some cryogenics ice cream and this "tuile" that was delicious and resembled the circle of a tree The main desert was a Bomboloni basically an incredible gourmet donut hole. It was "to capture the flavors of Florida" it was citrusy and bright and delicious the hot donut with the cool flavors accompanying it. We finished desert with, MORE DESERT! Bite sized Petits Fours including a chocolate square with crème fresh and caviar, a key lime pie, and my personal favorite, a toasted sesame dumpling, reminiscent of Chinatown, it was not overly sweet, and simply a perfect bite. Dinner came to just under $400 per person for just the food. With our one glass of champagne and our party of 3 sharing a bottle of wine we added another $80pp to the bill, so set your wallet expectations, or take a client! I can't wait for the menu to change to spring for another visit. This will definitely be a restaurant in my rotation. Maybe this time I'll actually take in some spa treatments ahead of time relax at the pool or the beach and then go in for a delicious dinner.

Curated by the very knowledgeable owner and sommelier Alegra. I don't personally know her but her staff's adoration of her only ingratiated the event that much more. It sounded like she really took time and care into curating this lovely event. Overall there were 16 tables with anywhere from 4-10+ wines to try from all around the world. I think it's so cute how they also have a scavenger hunt and loved that the first table was a spin-the-bottle. Very creative. The special prices for the wines were also a great touch along with tags describing the wines as, "old school," or "delicioso." The selection of wines in the store was just as impressive as the ones being showcased for the event. All in all, this is a great establishment that also holds wonderful events.
