We started with the crispy salt and pepper chicken, which was everything it was promised to be. Not over breaded, it was perfectly crispy and wonderful with the spicy dipping sauce. My husband got the imperial rolls ($4.50 for 3) and the fried shrimp wontons ($11.99 for 10). I really enjoyed my soup, especially the thick noodles. They were chewy and the right amount of softness. There were chicken pieces in it, mushrooms and a delicious "tofu sausage." It also had 2 pieces of baby Bok Choy and some pieces of kelp. I wished there was more vegetables. The soup also had green onions and cilantro. The broth was a tiny bit spicy from the chili oil. I am happy that this soup does not have sesame seeds in it, so I didn't have to ask them to hold the sesame seeds. Lol. The open kitchen is right at the front, where you can watch a guy stretching fresh noodles by the window, which is fun to see. Once seated, ordering is super simple. They ask you three things: bowl size, noodle thickness, and spice level. We ordered three medium bowls and one large, and let me tell you, the large was ginormous. Portions are extremely generous. The noodles were perfectly cooked al dente, and the soup was light yet flavorful, not overly salty, which I really appreciated. Each bowl also came with a decent amount of thinly sliced beef shank, a whole marinated egg, and generous amount of scallions and cilantro. We also ordered the combo sets so we can try their appetizers too. My favorite was the spicy tofu strips. The chewy texture and bold flavor were excellent. There's a burly guy in the front window making the noodles, which includes loud slams as he stretches and pulls the dough. Please check them out if the other eateries look crowded. It's hard to find Guilin food in general since most cuisines are Szechuan, Lanzhou, Cantonese, or Northern China. Therefore, I'm glad a small family business has done this will. You will all know Guilin food for its ubiquitous snail noodle made popular in the media in the past few years, now sold in instant packets at the grocery store. I promise the real thing is better. You must order a hand pulled noodle here, and yes, these actually are hand made by knife and hand. Some places call themselves hand pulled but use a machine in the back which I argue should not be calling themselves hand pulled but maybe handmade. I recommend calling a soup noodle and a dry noodle to compare the flavors. We ordered a fried pig feet- this is actually not common because most places braise their pig feet. My husband attests it's very good and that's a rare statement from him since he has had a lot of pig feet in his life. Snail noodle soup- way better in person. The flavors are milder and toppings are way more. Soup is way salty though, so I don't recommend drinking but rather seeing it as more of a gravy. Call this if you are a noodle soup person looking for some spice and comfort. Dry noodle- ok we called one that was vinegar based and then we called the double fried pork belly one. Both had incredible noodle base. Double fried pork is probably the one most people will like better because of the chili oil, meat, and garlic flavor. Personally, I actually thought the vinegar base one was more refreshing although that is an acquired taste. Ask your waitress ahead of time to clarify the "base" flavor of the dry noodle before you order so you don't get a flavor profile you didn't expect. The waitress/staff here are friendly and don't look hassled. The environment was clean and does not feel greasy despite some of the dishes definitely needing a higher smoke point. I like the multiple plants botanical vibe here with contrasts with its smokier and heavier dishes.
