But sushi is about precision, which Kabuki seems to have forgone completely. The sushi rice's flavor was nowhere near right, and it was sloppily formed around the fish. The fish quality was okayyy, but they use so much of it here that the proportions are just completely off. One positive, in terms of quantity for price, it is an absolute steal. I think I got 4 rolls (of varying complexity/quality) for about $30. It's probably closer to 3.5 stars, but these over hyped reviews needed to be counterbalanced. Give it a shot, if you are looking for several pounds of alright fish on the cheap, but not for what I would consider a quality sushi night.

The dish is incredibly refreshing, packed with fresh sashimi and crisp veggies, perfectly nutty from the sesame oil, and balanced with that addictive sweet-spicy kick from the chojang sauce. Hands down one of the best Hwe Dup Bop I've ever had. Think bibimbap but a sushi version. I haven't seen any other restaurant in the Portland metro area serving this dish anymore. Truly a hidden gem. We were also tempted by the udon, tartare and crudo but ran out of room, so they're already on the list for my next visit. I have the salmon-cucumber-avocado roll all the time, so I went with the spicy mayo roll since this was just my go to roll with spicy mayo, and it really fell short of expectations. First, the salmon looked a bit gray, but that happens sometime (fish market inject dyes to make salmon look more pink, and undyed salmon can turn a bit gray in just a few hours) and it tasted fine. The wasabi was a really unnatural neon green color (wish I remembered to take a photo) The spicy mayo was oddly bland and the whole thing just didn't have the bright flavor of super fresh ingredients I've become accustom to living next to the Puget Sound. I would give this place another try next time I'm in Portland, and I think I would try one of the more unique dishes he offers.
