Mac knives are not bad knives but what they aren't is the type of quality, art or precision you will find in a hand forged Japanese knife. These are commercially produced stainless steel knives. Unlike most knives in this category, they do not have a lifetime warranty. I personally had a Mac knife break out of warranty and was not only told it was out of warranty but for some reason I should be happy about it. As a knife collector and chef this certainly seemed quite odd. The best knives from Japan are available from MTC Kitchen, Hocho Knife and Burrfection who also has a very informative YouTube channel on Japanese knives and sharpening. If you really want to know what people are talking about and the art and perfection of Japanese knives do yourself a favor and purchase a hand forged Japanese knife. I prefer high carbon steel but they require a little more upkeep but then again they will amaze when you approach challenging tasks in the kitchen like breaking down a chicken into all its cuts for yakitori. Metallurgy is an art form in Japan and it is no more important than in the forging of hand forged knives. There are many other alloys which are rust resistant that produce an excellent edge and you can learn much more about that subject on Burrfection's YouTube channel and if you want to study this topic further I encourage you to search YouTube under hand forged Japanese knives. read more

I was a line cook in a former life and these were the first higher end knives I purchased. I own three knives from the Professional Series 9.5" Chef's knife 6" Utility knife 3.25" Paring knife These knives take a hold an edge very well and are well balanced. I have bought quite few knives since then, but the MAC Chef's knife will always be one of my workhorses. I visited this place a few times, make sure you call ahead so they know when to expect you. There is also not a huge sign saying, "MAC Knife" so you might drive right by the place. They have all their knives on display and you can "test drive" the knives. What an incredible find! We are so lucky to have the showroom of one of the worlds best kitchen knife makers right here in Sacramento. Very cool experience. I bought myself a knife for my birthday and was able to have it laser etched before walking out with my favorite new knife! Another great part of the experience was getting some helpful hints on how to better cut with Japanese steel. I thought I was a German knife fan (I have Henckels and Wusthof Ikon). Now I find that I'm a fan of German and Japanese knives made with Japanese steel, which means my knives are lighter, thinner and stay sharp longer. I'm a pretty advanced home cook and love to experiment in the kitchen. My experience with knives mirrors that of another Yelper. I've tried a myriad of them--commercial, top of the line department store knives, ceramic. Most were gifts, well intentioned friends and family. And, I tolerated them, even professionally sharpened a few. Finally, I had enough. They just didn't feel right or cut right, and I wanted knives that I chose for myself. Last year, as a birthday present to myself, I bought my first MAC knife. I did the research and found that the brand is highly rated by folks in the business. And, I actually spent some time ensuring it had a good feel in my hand. Here I am, a year later, the proud owner of several MAC knives. I love them. They slice so smoothly, retain the edge and feel solid and comfortable in the hand. I have relegated all of my old knives to the back of the drawer (still trying to figure out how to dispose of old knives without endangering the gen pop). Well, all of them except my 12 inch butcher knife. I love that thing, just don't use it much. I am extremely happy with my MAC knives. They can be difficult to find but are well worth the effort. Fifteen years old: started as dishwasher in a hippie restaurant, and soon I replaced a guy who was kind of drinking too much or partying late. He was always saying inappropriate things about the waitresses; one of them was my sister. Mac Knives are the absolute best! I received a chef's knife as a gift and I was amazed at the sharpness, handle comfort, and sturdiness of the knife itself. After receiving one knife as a gift, I decided to purchase a few more and went to Mac Knives on Kiefer Blvd. I was assisted by Brian, who was very helpful and knowledgeable on the different models and the various uses of the different knives. After losing custody of a full set of Wusthof (long story), I decided to try Mac knives to solve three problems I had with the Wusthof knives: the bolster went all the way to the edge, too thick, and heavy. I was never able to get the whole blade sharp due to the bolster getting in the way. The thickness of the knife would sometimes cause it to get wedged in what I was cutting. These are heavy knives; although that added some heft to cutting, it seemed the weight made it hard to move quickly. When I received my PKF-30 - Professional Series 3¼" Paring Knife and MBK-95 - Professional Series 9 1/2" Chef's Knife I was amazed at how sharp they were. The balance is perfect. The sharp edge and thin blade make it easier to cut than with a heavier European style knife. I've just now ordered a bread knife and utility knife to round out the first two knives. read more

I'm so glad I did! I thought I would want a heavier, German-like knife. It turns out I really love the forged Japanese style knives. THE BEST KNIFE IN THE WORLD!!!!! I tried a TH-80 Mac Knife 20 years ago and I have been buying more ever since. Someone said it was really sharp and it definitely did not disappoint me. It slices through a tomato without any effort because the blade is so sharp. Sharpening is minimal, because the metal is so hard and durable. I tried Henckels and Wusthof knives, and MAC is soooo much easier to glide through whatever you are cutting. You got to try it....You too will be pleasantly surprised. The company representatives are well versed on the manufacturing process and can advise you as to what knives would work best for your needs. They supply many of the top chefs in the United States. We got our first, and last, set of MAC knives in Okinawa, Japan in the 1970's as part of a promotion ... wow what a deal did we get. I say last because we still use them as our main set. We bought the 6", the 7" and the 9". We sharpen them against the grain of the underside of a china plate. They are, hands down, the best knives I have ever worked with. My husband is an 'at home' chef and he loves them for their sharpness, versatility and consistency; it's like cutting water. If no other knife will work we pull out the one of the MAC's.
