I would give this place six stars if Yelp would let me. After a morning spent hiking The lower falls trail at Calf Creek, we needed food. I saw Magnolia's five-star rating and was sold. Fresh chips and guacamole, a piccadillo burrito, and two tacos--one pork and one to-die-for sweet potato and goat cheese--later, and we're back on the road. This food is definitely a highlight of our trip! PS: Thanks to the museum for providing restrooms gratis. Found this cute bus/food truck when we went to the Anasazi Museum. It wasn't lunchtime, but the menu items looked so good, my friend and I decided to split a Piccadillo Burrito. It was the best burrito either of us had had in ages, maybe ever, and served with a smile! Lots of the good stuff in it, like meat and veggies, not a bunch of filler like rice. Always wanted to write a review on yelp but never had that extra something to write one until today. We were visiting the Anasazi museum and came across a cool looking food truck located right in their parking lot. My fiancé and I were so hungry that we had to check it out. We ordered the picadillo burrito. Probably the best burrito I've ever had. Although the flavors in the burrito were on point, the special salsa and hot sauce complimented the burrito perfectly. Amazing fresh food and their ingredients are local sustainable food. We also had company of their two cute dogs Frank and Serena. Definitely coming back here when we visit Utah. read more

We first ate lunch here in '18 and having been dreaming of the Piccadillo Tacos every since then. We finally got back up to Boulder (which is a very cool little town) and we were not disappointed at all!!! We had a mix of both the tacos (Picadillo and The Carlos), fries, and the Loaded Fries with a side of kimchee. We loved it all! Try The Carlos taco with kimchee added to it, so tasty! You can't miss the turquoise painted bus at the Anasazi Museum (which is awesome to visit too, don't forget to check out the ruins behind it). There's a nice grassy area and plenty of picnic tables to enjoy your breakfast or (and? because I could definitely have two meals in a day here!) lunch on. Everyone was wearing masks, social distancing and they have hand sanitizer for everyone to use. Oh!!! And they sell their hot sauce in bottles so you can take some of the love home with you! This place is amazing! We found it two years ago on our drive between Bryce Canyon en route to Moab and were so happy to see it was still there when we did the drive again. Everything looks amazing on the menu, but since most of my family needs gluten free we went with the loaded fries and the garden fries. The garden fries were my FAVORITE! Magnolia's would be excellent in Salt Lake; in Boulder it's simply shockingly excellent. Magnolia's is a strong contender for being the best restaurant (if it qualifies as such) in all of southern Utah. It's definitely worth the stop. The bus is permanently located in parking lot of the state park. Like everything else in Boulder, Magnolia's is open seasonally (closed during the winter). read more

Much better than I thought it was going to be. The blend of goat cheese mushroom and sweet potato actually made me consider becoming a vegetarian, but I like meat too much for that nonsense. Rice and beans are good. The salsas are fresh and good but garlicky. Stays with you for a spell. Must try the freska punch. Today was watermelon peach. I will have dreams of that. My friend and I were driving from Capitol Reef down to the Grand Staircase-Escalante National Monument, and we wanted to find a unique and locally sourced eatery. We hit the jackpot with this place! It's a converted school bus located in a parking lot of a museum/park area. They make to order breakfast burritos and a few other staples. We opted to build our own burritos. I dislike eggs, so breakfast burritos can be tough, but here they let you pick your protein (eggs, sausage or beans). They also have an array of veggies to add into your burrito, so many that I ended up adding on a side of kimchi. The burrito was so big, it held me over through a 6 mile hike and a 5 hour drive. We stopped here while at Escalante. This was such a surprise, and probably the best food we had while on our week trip of National Parks. We had the highway man burrito. Stopped on our way from Bryce to Capital Reef. Best food truck food I have EVER had. I had the sandwich with eggs, goat cheese, greens, and sausage (the name is escaping me!) and my boyfriend had the highway man burrito. The food was hot, fresh and outstanding. We got the peach lime agua Fresca which was refreshing and worth $4. The sandwich and burrito were about $10 each and worth it. Kind people, quick service and an awesome stop !! read more

Some might think the price is high for a food truck but I think the price / value equation works.
