While visiting Fort Collins, I'm so glad my sister made a reservation at this restaurant! Our server was named Ali, he was great! We tried a few things from the happy hour menu, including the artichoke dip- I like that it was served with veggies, the Buratta was delicious with the sweetness from the fig balsamic and the Caesar salad was beet good. We also got the vodka ravioli and shrimp scampi. The pastas are homemade and delicious! Shrimp scampi is never anything I order because it's not flavorful enough at most restaurants, but here I wish I had more! It was flavorful and buttery, but still light. It was perfectly salted and the bed of argula it was on had this delicious pesto drizzle omg. And don't even get me started on the tomatoes!!! Then we split the Bolognese and the vodka ravioli. The server came around and gave us freshly grated parm and freshly cracked pepper omfggggg!!!! The bolognese was good but the ravioli blew it out of the water it was sooo cheesy and the vodka sauce was unreal. The tiramisu was delicious. Ill start with our favorite dish, the chicken parm. We subbed the red sauce for vodka sauce. It was heavenly!! Covered in cheese and a large portion. The Caesar was really good, they add fried capers which adds the perfect crunchy salty addition. I'll be trying to replicate that at home. Meatballs were great as well, three to an order. The cheesy focaccia was just ok, ended up being a little oily and heavy. Service was great. Place was packed. Reservations needed. Let's start with the good stuff: Maida Trattoria is located right in the heart of old town. The indoor seating area is cozy and the outdoor seating option makes it a great place to enjoy the beautiful Fort Collins weather. We were seated pretty quickly on a Wednesday night around 5pm and the service was great. The not so great: The food is okay. My friend ordered the prosciutto Capra sandwich that comes with shaved prosciutto, whipped honey goat cheese, fresh arugula, caramelized onion, tomato and balsamic on a toasted baguette. The bread was really hard making it difficult to eat. Price was reasonable at $15 for the sandwich and a side. I ordered the full size of the bolognese which is pappardelle pasta tossed in a hearty, slow-simmered beef and tomato ragu with italian herbs, parmigiano reggiano and whipped ricotta. It was a good portion of food, but the overcooked pasta with the ricotta cheese was too mushy making it really unappetizing after a few bites. The artichoke dip was the best part of the meal. It's covered in cheese giving you the ultimate cheese pull. I'd say Maida Trattoria is okay, but with some tweaks to the food execution, it could be great. read more

Super cute space and very friendly (initially) service. Martinis are great. They understand celiac (separate pot of water, etc.) The food however....is just ok. I ordered carbonara, even though it had peas, fully expecting an American version. What I got was some weird cross of carbonara and cacio e Pepe, that tasted VERY egg forward. Please stop calling this dish carbonara, just because you use guanciale. The gluten free tagliatelle was fine. My husband had regular chicken parm. He said his pasta tasted more like egg pasta that you would get as a kid and put butter on, than Italian pasta (and we eat a lot of Italian-in the states and in Italy) The chicken was fine, according to him. The true stand out was our pistachio martini. Also, not sure if our waitress started having a bad night-she was super friendly at first, but ended sort of sour. Not sure we would go again, next time we are in town. Maybe just for a snack and martini. I'm not sure I would call this modern Italian...just call it your take on American Italian. read more

My wife and I recently visited this relatively new Italian restaurant for a late lunch. The interior is quite nice with a variety of seating options, including the bar, stuffed chairs around a low table, four-tops, and two-seat hightop tables. We were very pleased that we could order half plates. My wife's main choice was the vodka sauce ravioli and mine was the pasta Bolognese. Both were very good and I was especially impressed by the ragu sauce in my dish that had a nice depth to the flavor. The kind of food you could just make at home, without the price tag. The service from some staff seemed good, and others seemed too "cool" to actually be helpful or make the experience enjoyable. I sat at the bar, and took quite a while to get a water or menu, although the bartender kept getting new drink orders and fulfilling them. He the. Started loudly washing glasses in front of me and put all the dripping wet cups 6" from my dinner plate. Beyond not sanitary, that's definitely not acceptable protocol for any kind of decent restaurant. I ordered chicken parm sandwich and it was 85% bread and 15% chicken. A couple think slices of chicken in thick focaccia bread is NOT a proper chicken Parmesan. Celebrated our anniversary here with dinner tonight. Everything was excellent. From being greeted to being seated the service was great. Reservations required on a Saturday night. Might be a little loud but able to have a conversation. LOVE the little table lamps! They give so much light so you can read the menu and see your food. Great call on whoever brought those to the restaurant! We started with the bread and spread. 3 types of bread and 3 types of spreads. Then we shared the beet salad. The beer purée was great. Husband had a cocktail and I had a glass of wine. I had the vegan/vegetable lasagna. Eggplant, zucchini and hazel Dell mushrooms stack with vegan cheese and a tomato sauce. The only reason I'm giving this a 3 and not lower is because they did try and make up for the issues by comping one of the meals and giving a discount because of the poor food. I'm also giving them the benefit of being a new restaurant and we were also not sat until 9pm and they close at 10. However I'm not sure I will be back unless I hear of vast improvement. I was very excited to try this new place I walked by a few times and it looked packed and the food looked delicious but that was not the case for us. The drinks were ok I got the golden and it was very strong with ginger and no peach flavor. We started with the whipped goat cheese which the 4 (for 3 people) was burned and tasted like day old bread, the goat cheese had a strange flavor and there was barley any honey to the dish as described. The beet salad was good but heavily over dressed but probably the best thing we got for the night. The 2 pasta dishes we got were terrible the pasta was way overcooked and mushy. The shrimp scampi pasta had so much butter that the overcooked pasta just became mush, but the shrimp were perfectly cooked. The bolognese had the same issue over cooked pasta and the sauce was under cooked, the carrots & celery in the Mirepoix were still crunchy and the flavor didn't develop like a good bolognese should. The flat bread was one of the others dishes we got that was pretty good the homemade sausage was good but the crust was a little too crispy. We were sat outside and it was so dark with absolutely no lightning not sure if lightbulbs were just out that was the ambiance they were going for. read more

Starting off with the good - the service was good. The manager had a lot of positive personality. In general, the service staff is trying their best and there's no negative attitude. Great ! The ambiance was nice. Business appropriate , date appropriate. Nice night out level. However, the food. The most important part of dinner. Sadly, it was a bit disappointing. - meatballs: tasted processed. Not made from scratch. It may be the blend or the seasoning or both, but this was not something worth ordering at all. 3 small meatballs. A bit on the dry side. - the mushroom appetizer. Hardly any mushrooms on the middle of the fried outside. Really it was a shell of fried outside breading and very little of what resembled the taste or texture of mushrooms. Pass on this. -fungi pasta - this wasn't bad, but not a standout. 3 stars. Probably the best thing I ordered. - short beef ravioli - I'm not trying to be critical or harsh but this tasted like something I can buy as a microwaveable meal at Trader Joe's. Huge disappointment. If I needed a nice place to discuss business , I may go in to get drinks and light food. But if you're a foodie , or remotely emphasize food as an important part of a meal, I would probably pass, at least for now. read more

We had a lovely evening out here last night for several reasons, but sadly, the food wasn't one of them. The atmosphere and service was outstanding, and efforts to rectify issues well warrant mentioning! I just wanted to love this place, and may even try it again, but have to say I left disappointed. To start, 3 different pork dishes arrived appearing severely undercooked. Two of us opted for refires, which improved the sausage portion of the dishes, but despite lovely flavors, the pastas were so overdone they were mush. I swapped my still oinking chop out for lasagna bolognese, which arrived just as everyone else was finishing their meals. Again - lovely flavor, but NOT bolognese. There was absolutely no bechamel at all, and when I asked about it the manager apologized for their not being enough ricotta. Hmmm. Bolognese doesn't have ricotta. The menu doesn't state ricotta. It states bechamel - the foundation of a good authentic lasagna bolognese. Instead I got a decent piece of meat lasagna, and it was hot, which was a huge plus, as very few of our other dishes were, so that was a plus. The Caesar salad was delicious, the bread, nice. The brownie dessert - DELICIOUS. I'd go back for a big salad and that brownie any day of the week. But I'd hoped for a spectacular meal, and it just really missed the mark. One final word regarding the "Pasta Room" the appeal of which is what brought us there in the first place. Super disappointing. A few tables tucked at the front alongside a long window where you're supposed to be able to watch them make pasta. Well unless you happen to be sitting closest to the window, there's nothing you can do see anything all. I lucked out with that seat and all I saw was a lot of breaking raviolis apart and filling some cannolis. Really cool idea, but misleading, to say the least. read more

I'd been meaning to try Maida for a while, and finally had lunch with a friend on my birthday. I love what they have done with the interior - it is airy and bright at lunchtime, but still somehow cozy. We were seated promptly and service was attentive without being overbearing. We started with the cheesy foccacia - how could we pass up garlicy bread with ooey gooey mozzerella, provelone and parmesan? It did not disappoint. For his entree my friend chose the funghi pasta on the recommendation of our server. I felt like something heartier, so I had the bolognese. These entrees were okay - the funghi seemed a bit over-salted to both of us, and the bolognese wasn't quite as meaty or hearty as I had hoped. Full portions were large enough to take some leftovers home, but I think a half portion would have felt like a pretty light lunch. Since it was my birthday we had to have dessert - pistachio cheesecake was my choice despite not always loving cheesecake (but I do love pistachio!) I thoroughly enjoyed it - it was dense but not too dense, and not so sweet that you couldn't appreciate the pistachio flavor. I took my girlfriend on a date here a few months ago, and the vibe was a little strange. The restaurant labels itself as an authentic Italian restaurant, but the radio was playing pop music and it was very loud inside the building. (So much so that I couldn't hear what my date was saying.) The food was okay, better than a chain restaurant but not what I would expect for the price tag. Additionally, I ordered a Chianti, and when I asked for another, I was brought a Merlot. I am young, so my first suspicion was that my server hoped I wouldn't be able to catch it, but I would hope there is more integrity in the staff than that. Over all? I think this was a decent experience. It is not a lunch spot, speed wise. I don't think you could get out of here in less than an hour. We came at about 3:00 and didn't leave till 5:15. While yes we got appetizers, entries, and deserts, it was a fairly long experience. If that's not a problem then thats good! But I do think if the service was sped up slightly, there might be a better or larger window for lunch crowds with the location of all the local business on lunches. Old town is competitive for sure so something I would consider. I would order most of the food we got again. Apps: - Spinach artichoke dip was great, not too big but was actually good dip rather than something massive with tortilla chips or something that so many restaurants do. gratinated cheese and served in a pan that kept it hot was great! - burrata was a hit for sure, and while I wish it was a dollar or two less, over all worth it. Though 2-3 more slices of bread would be nice with it. We ran out and still had plenty of burrata left. - cheesy focaccia. This one admittedly was the let down of the evening. It was just "fine" and kinda just tasted like an average garlic bread. I wouldn't get this again personally, considering how many other cheese & carb options there are, and are much better. Entrees: We got an assortment, pesto pasta, bolognese, flat bread pizza, and a sandwich. Folks again, overall enjoyed everything. But most of us weren't blown away or anything. No regrets? But also we weren't raving about it like we did with some of the other apps. Deserts: - we again got a mix and so I can only speak to my own, though they were all plated quite gorgeously. An affogato has always been a favorite of mine and I find it here to be quite good! Though I'd love a bit more gelato to espresso ratio. There was a few ice crystals in the gelato as well, and while I'm picking holes so to speak, it is something that would be nice if it could have been avoided. Everyone else spoke highly of the deserts and I love that there was a gluten free and vegan option for folks. Ambiance: - Again, well done. Clean and while a slightly loud environment, that mostly was just folks having a good time. Decor and interior design was well thought out with lots of visual interest, without looking too "busy". When it started to get dark they brought out lamps for the tables that helped keep things lit without blinding folks like some of those led candles do. Service: - our server was great, able to keep up with dishes finishing over the different courses and refilled drinks with little to no wait times. They were friendly and answered questions well, willing to work with the table on alterations. I did observe two tables who seemed to have expected full meals and when delivered only got half meals which might imply an area of opportunity to clarify with guests the specifics of the orders. With that being said, the ability to do partial portions is so lovely and I wish more restaurants would follow suit. I'm fairly sure I will return, though I won't be able to do so if I'm in a time crunch. We were close to pushing the parking limit with the 3 courses we had. Photos of a few of the apps and deserts. This was a nice little spot to get pasta, something I was deeply craving and an establishment that fulfilled a prophecy. This place is nice and clean and modern. A good restaurant but lives on a busy street, some days is harder to find parking, depending. The staff here are friendly and helpful with suggestions. I was torn between 2 pastas but later found out they have smaller portions that allowed me to partake in a second helping of pasta. The scampi and carbonara are just the best. Scampi was lemony and the carbonara was creamy with guanciale. Absolutely fantastic and the smaller portions aren't crazy expensive and the serving is perfect. I indulge in 2 pastas and, no regrets! The Empress cocktail is a good fit as well. Essentially a spiked lemonade. I would come here again if I'm ever lucky enough to find myself in the area. read more
