    The inside of this place is super cute and they have nice big windows with natural lighting. The service was great, and everybody was very nice. The food was fantastic, one of my favorite spinach artichoke dips I've ever had and the burrata appetizer was also delicious. I got the pesto pasta and added fried chicken and it was AMAZING. Also got the empress drink and it was quite tasty. I will be coming back

    We came here for a happy hour and we were very impressed. Our drinks were delicious and the spinach dip was really yummy as well. The bartender was really friendly and it's a beautiful location. Will definitely be back!

    Ill start with our favorite dish, the chicken parm. We subbed the red sauce for vodka sauce. It was heavenly!! Covered in cheese and a large portion. The Caesar was really good, they add fried capers which adds the perfect crunchy salty addition. I'll be trying to replicate that at home. Meatballs were great as well, three to an order. The cheesy focaccia was just ok, ended up being a little oily and heavy. Service was great. Place was packed. Reservations needed. But its getting warmer so patio seating will be a big plus.

    Such a cute little spot in a wonderful location. We had amazing service and all the food so was delicious. I had the Italian nachos and what a great spin on a classic dish. Would definitely recommend.

    Let's start with the good stuff: Maida Trattoria is located right in the heart of old town. The indoor seating area is cozy and the outdoor seating option makes it a great place to enjoy the beautiful Fort Collins weather. We were seated pretty quickly on a Wednesday night around 5pm and the service was great. The not so great: The food is okay. My friend ordered the prosciutto Capra sandwich that comes with shaved prosciutto, whipped honey goat cheese, fresh arugula, caramelized onion, tomato and balsamic on a toasted baguette. The bread was really hard making it difficult to eat. Price was reasonable at $15 for the sandwich and a side. I ordered the full size of the bolognese which is pappardelle pasta tossed in a hearty, slow-simmered beef and tomato ragu with italian herbs, parmigiano reggiano and whipped ricotta. It was a good portion of food, but the overcooked pasta with the ricotta cheese was too mushy making it really unappetizing after a few bites. The artichoke dip was the best part of the meal. It's covered in cheese giving you the ultimate cheese pull. I'd say Maida Trattoria is okay, but with some tweaks to the food execution, it could be great.

    Underwhelming panino, the sausage is perfect, but I should've just ordered them on their own. Most of the panino is a rough baguette with the occasional sauce & onion.

    The kind of food you could just make at home, without the price tag. The service from some staff seemed good, and others seemed too "cool" to actually be helpful or make the experience enjoyable. I sat at the bar, and took quite a while to get a water or menu, although the bartender kept getting new drink orders and fulfilling them. He the. Started loudly washing glasses in front of me and put all the dripping wet cups 6" from my dinner plate. Beyond not sanitary, that's definitely not acceptable protocol for any kind of decent restaurant. I ordered chicken parm sandwich and it was 85% bread and 15% chicken. A couple think slices of chicken in thick focaccia bread is NOT a proper chicken Parmesan. Until they can understand service and fix the menu, I don't foresee going back or recommending to anyone.

    My wife and I recently visited this relatively new Italian restaurant for a late lunch. The interior is quite nice with a variety of seating options, including the bar, stuffed chairs around a low table, four-tops, and two-seat hightop tables. We were very pleased that we could order half plates. My wife's main choice was the vodka sauce ravioli and mine was the pasta Bolognese. Both were very good and I was especially impressed by the ragu sauce in my dish that had a nice depth to the flavor. Service was excellent and the prices were very reasonable for the portion sizes of our meals. We plan to return to sample some other delicious looking items on the menu.

    Celebrated our anniversary here with dinner tonight. Everything was excellent. From being greeted to being seated the service was great. Reservations required on a Saturday night. Might be a little loud but able to have a conversation. LOVE the little table lamps! They give so much light so you can read the menu and see your food. Great call on whoever brought those to the restaurant! We started with the bread and spread. 3 types of bread and 3 types of spreads. Then we shared the beet salad. The beer purée was great. Husband had a cocktail and I had a glass of wine. I had the vegan/vegetable lasagna. Eggplant, zucchini and hazel Dell mushrooms stack with vegan cheese and a tomato sauce. Portion just the right size. Husband got the full size Bolognese pasta with goat cheese. Both were excellent. This is a definite return here to eat.

    Great food, and service!! Excellent Happy Hour! Different drinks and a beautiful space! Homemade pasta -they do cook it very al dente but you can always ask for it to be cooked more as I did. Jeff, Austin, Hunter, Kian and Sarah, behind the bar phenomenal!!!! everything I've had there is very tasty. You should check it out!

    We were recommended by our hotel that we should try this place. Wow!! Amazing and so delicious. We had Shannon as our server and she did such a great job directing us to order the perfect dish. We will definitely be returning when come back to Fort Collins.

    The only reason I'm giving this a 3 and not lower is because they did try and make up for the issues by comping one of the meals and giving a discount because of the poor food. I'm also giving them the benefit of being a new restaurant and we were also not sat until 9pm and they close at 10. However I'm not sure I will be back unless I hear of vast improvement. I was very excited to try this new place I walked by a few times and it looked packed and the food looked delicious but that was not the case for us. The drinks were ok I got the golden and it was very strong with ginger and no peach flavor. We started with the whipped goat cheese which the 4 (for 3 people) was burned and tasted like day old bread, the goat cheese had a strange flavor and there was barley any honey to the dish as described. The beet salad was good but heavily over dressed but probably the best thing we got for the night. The 2 pasta dishes we got were terrible the pasta was way overcooked and mushy. The shrimp scampi pasta had so much butter that the overcooked pasta just became mush, but the shrimp were perfectly cooked. The bolognese had the same issue over cooked pasta and the sauce was under cooked, the carrots & celery in the Mirepoix were still crunchy and the flavor didn't develop like a good bolognese should. The flat bread was one of the others dishes we got that was pretty good the homemade sausage was good but the crust was a little too crispy. We were sat outside and it was so dark with absolutely no lightning not sure if lightbulbs were just out that was the ambiance they were going for.

    Another great experience. Probably the best in Foco. Austin is a skilled and awesome bartender and a good catch too ask him about it. No food this trip but coming back for dinner. Great vibe too thanks Sam great job.

I usually order the avocado toast on focaccia because it is consistently fresh. The bread looks oversized at first but is airy and soft, and the avocado and radish topping feels simple in the best way. The matcha made with water has also become a go to since it tastes smooth and well-bodied without that chalky, thin finish some places have. My partner and I visited during their Dia de Los Muertos weekend and tried a few themed items. Everything was good, and they were quick to suggest dairy free choices. Prices seem fair, even with the general bump everywhere lately. The only thing I wish they had more of is outlets. It is still a nice place to work for a couple of hours, but coming with a charged laptop helps. The overall vibe is calm with just enough energy to keep the space from feeling sleepy. It works well for coffee dates, casual catch ups, or solo work, especially for anyone who prefers a relaxed atmosphere without too much chaos.
