HOWEVER, buyer beware if you order the ramen with rice noodles. So many rice noodles were put in the ramen that by the time it came to the table all the broth was gone. Mama Ramen is one of the better ramen houses I've been to within the greater Kansas City area. It's on the older downtown side of the city and parking is on the street. The place does get busy but they're fast with bringing out the food. The entrance is misleading because of the Boba signs. There's a non-alcoholic bar area to sit at along with 8 sit down tables. There's a checklist for the ramen with many options, be warned that the extras could easily add up. The broth is tasteful, the meat is tender, the noodles and vegetables aren't overcooked. I've been here in the past 6 months and it tasted better (4 stars) but lately it's been 3 stars, so I'm unsure what happened. I was craving some ramen on a cold, rainy night and decided to grab some takeout from Mama Ramen. The food was ready on time and was packaged perfectly to avoid spillage. We started with crab Rangoon, eggs rolls, and Takoyaki Octopus Balls. The egg rolls were pretty average but good. My favorite was the crab Rangoon. They were pretty basic but sometimes that's perfect. I also went out on a limb and tried the takoyaki aka octopus balls. To be fair, this was a first and I wasn't sure what to expect. But those are definitely not for me. They may be really good but due to the texture, I couldn't make it past one bite. I also did the Create Your Own Ramen Bowl with pork belly, Tonkotsu broth, wavy noodles, bamboo, bean sprouts, corn, and extra broth. Definitely get extra broth! The pork belly was pretty lean but I prefer that to the fattier cuts. There was a good amount of noodles and the broth was delicious. The rest of the toppings were a little lacking. I feel like they were a little stingy on that. Also it said it came with an egg but mine came with half an egg and my partner, who got the same thing, ended up with no egg. I really wanted to like this little hole-in-the-wall. From the beginning the staff weren't very welcoming. Didn't really communicate with me much. The cool part though is their menu is basically a checklist. Super easy to order. What went wrong.... 1. I asked if the hot option was ridiculously hot and the waitress says, "yes very hot." So I opted for medium. When the soup showed up it was extremely mild. I had to put siracha in it to spice it up. I would have normally used jalapeños but it was an up charge and the soup was already a little high for my liking for a basic ramen soup. 2. I ordered the pork belly which is my absolute favorite (normally). When it came it was 1.5 slivers of overcooked and dry pork. Not very palatable at all. 3. The ramen itself was actually nice but the broth was far from authentic in flavor. It tasted like salted broth with milk. 4. I ordered shrimp shumai. It was blatantly previously frozen and it was more like microwaved then steamed. I frequent the area for work and my go-to is ramen. First Impression Pretty hidden away restaurant and easy to walk right past. Not the biggest place, but quaint with ample seating if there isn't a dinner rush. Quickly was sat and given a ordering card. Sometimes can be a bit overwhelming to pick all the ingredients in your Ramen but was well worth it. Food Nice, hearty ramen. I got the pork broth with pork belly and several other ingredients (can't remember them all haha). It'd be hard to go wrong though so don't sweat it too much! I got medium spice which is just perfect. Not too spicy at all, but still has the zest. The wavy noodles were perfectly cooked. Not too soft and not too rigid. Broth had a punchy flavor and allowed the add on ingredients to stand out. Pork belly was above average and cooked well. I wish the egg yoke was a bit less dry as well, but with the broth it wasn't a big problem. I usually add sriracha or other spices to my ramen, but this one was so nicely balanced I felt it would've been a mistake to add anything else. I seriously could not stop slurping! The dumplings were solid too, nothing special, but a nice side dish. Final Verdict I've been looking for a go to ramen suggestion in KC and now I have it. I think I like the thought of build your own ramen which probably is an insult to true ramen but it's good for me since I'm funny acting about some things.
