An authentic cheesesteak is made with: * Thinly sliced ribeye steak (or shaved steak / minute steak as an acceptable substitute) * Cooked on a flat-top grill * Lightly seasoned (usually just salt and pepper) * Chopped and folded together while cooking * Served on a fresh hoagie roll (Amoroso-style if you want to be authentic) * Topped with either Cheez Whiz, American cheese, or Provolone * Optional additions: sautéed onions (this is traditional), sometimes mushrooms or peppers depending on preference The key element is fresh shaved steak cooked to order, not deli-style roast beef placed on bread. There's nothing wrong with roast beef sandwiches -- they're great in their own right -- but calling it a cheesesteak changes the standard of what people expect, especially for those of us from Philadelphia where this sandwich originated.
