We occasionally smirk at the thought of this self promotion of itself. In addition to thinking how dare they advertise as such and who's palette did they actually impress? I like to consider myself somewhat of a Connoisseur of pizzas. Myself being from Los Angeles and visiting this wonderful city and state of yours. I have to say I was blown away. I've eaten pizza across the United States and even at a high-end restaurants within Hollywood and Beverly Hills. I've even paid top dollar $45 bucks for a 12 inch pie. I can honestly say that they don't even match the experience and the quality that I had eating from this hole in the wall. Let me start with how we all eat with our eyes first. Without even tasting it yet the look and smell was euphoric. The crispness of the crust and the ability of it holding its form straight as one holds its beauty prior to taking your first bite was unlike any other pizza I've held. Then upon taking your first bite you stop immediately only to hold the slice back in front of your eye to reconfirm what your eating because your tastebuds just exploded with delight. Its obvious that their attention to the quality of their pizzas in addition to cooking them to a perfect golden crust is at its highest quality. For all of you here living in San Antonio you all are very fortunate to have this pizzeria available to you. This used to be my favorite pizza joint, but the quality has dropped tremendously since they moved to the new location. The past few times, I have ordered pizzas from them they have been super burnt and hard. I miss when they used to do good quality pizza with fluffy crust from their food truck. Best pizza I've had in Texas and would be a top 10% in the northeast like NJ/NY. Crust - technique is unbelievably well executed. Phenomenal gluten development, proofed perfectly. Seems to be a higher hydration dough and might be something a little out of the ordinary as far as the flour blend. Sauce - tastes like a lightly cooked sauce, and I say that as a compliment. AMAZING customer service: call/text you when your pizza is ready, friendly in person and on the phone even though they are busy, voluntarily gave me a sample of spicy honey and a discount because it was my first time. Prices are good for what you get (14 dollars for cheese pizza but it is way better than any chain). Parking is easy. Reasonable wait times (30 minutes for my cheese pizza but I called my order in and then went to pick it up and by then it was ready). Fresh basil on the cheese pizza! They do take credit card. All you need to do is start heading North on I-35 towards Austin and put 15939 I-35 Selma in Waze and you will find the place. Read the positive Yelp reviews for this place so I decided to give it a try. Bottom line: this pizza is Delicious. I give them an 8.6/10 (Barstool pizza scale). I decided to try the basic "Da Cheese" since it won an award. After numerous call attempts to place an order (a major downside to this small pizza joint) I finally got someone on the line and was told it would be about 35min. While driving to pick it up, I received two helpful text messages from them: "pizza is in the oven," and "pizza is ready." It was actually two minutes early from the phone call, which was a positive. The pizza truck/stand is right off of I-35 on the outskirts of San Antonio in a church parking lot (kind of odd place but it must work). This pizza reminds me of New York style in quality and taste. Each thin slice has just the right amount of cheese and sauce, neither too overpowering. The only drawback is that they were a little skimpy on the basil. Some of the slices had a chewier crust than others, and some (the ones that were closer to the flames) were more crispy. I also ordered a small side of Hot Honey for $1. Game Changer. It adds a sweet, yet spicy kick to each bite. If you're like me and like to dip the pizza crust ends in ranch/marinara sauce, this honey will definitely be a new addition to your dipping sauce choices. Locals may not think it's very spicy, but for those not accustomed to this type of tang - your tongue and mouth might be in some heat when indulging. We drove from Houston to Selma, Tx to try out this pizza food cart, after reviewing all the customers' compliments on social media. We, including my wife, daughter, my best friend, were all delighted by the authenticity and tastiness of four different pizzas we ordered. Executive chef Joey Hernandez even offered us, free of charge, a new pizza called "San Antone", which was out of this world. My daughter who recently returned from study abroad in Florence, Italy, claimed the pizzas were as good if not better than what she had experienced in Italy. We had read about this place some time ago and went to try them, but the wait was too long. That indicated that the food must be really good. Fast forward a few months, and we decided to try them again. A couple of tips: 1. Check their Facebook page to see where they have their truck parked today 2. Call your pizza in to eliminate wait time Even doing those things, we had a hard time finding them. They were located behind Old Main Ice House in Cibolo. Parking was across the street. We walked through the Ice House to get to the food truck. We only had to wait in line for a few minutes, and we're then warmly greeted. Our family loves pizza! We've probably tried every spot in town, not kidding. After passing the Mia Marco's food truck on the IH-35 access road many times, we finally decided to give it a try. The pizza was good, yes. It's definitely got a thicker crust than we prefer (only because there's less room for toppings when the crust is so big).
