The commercial ones go from stovetop to oven. Are balanced. And, are reasonably priced so you don't feel so bad when it has to be replaced. Bintz has Vollrath. They are good, and I've used them, but I do prefer the Tramontina's that I've gotten elsewhere. They are only open during "business" hours, so you have to make a bit of an effort to get here, but if you like visiting kitchen stores you owe it to yourself to get here. Oh, on this trip, I got the 1/8th sheet pans I needed for just a few bucks.
