We ordered the Italian sub with sun-dried tomatoes instead of the standard toppings, along with the chicken cutlet sandwich with vodka sauce. Both sandwiches had excellent flavor and tasted fresh. The sun-dried tomatoes were a great addition to the Italian, although I do think it could have used a little more meat. Considering the price, I expected it to be a bit more generously filled. The chicken cutlet sandwich was delicious overall, but the cutlet itself was a little dry. I asked for extra sauce, and initially the employee seemed reluctant and tried to charge me for it. After I showed him how dry the sandwich was, he gave me the sauce, which made a huge difference and brought the sandwich together. That interaction was really my only service-related critique. Overall, the quality of the ingredients is excellent, the sandwiches are satisfying, and the market has a unique charm you don't find at most sandwich shops. I will be going there after every Saturday hike forever more. The lists did not lie. Stasio's delivered the best sandwiches I have had in Florida. Walking in, I must have looked confused because I heard a knowing voice ask if it was my first time in. I admitted that it was and a delightful employee walked over to me to show me around. Stasio's has a deli counter, a coffee counter, and several shelves with Italian foods. I quickly learned that sandwiches are ordered at the deli and brought out to the waiting area when ready. Coffee is ordered at a cash register and the coffee is poured or prepared after purchase. Any prepared foods, together with sandwiches and fresh bread, are paid for at one of two registers. Despite the crowd -- and it was crazy busy -- everything was remarkably efficient and the staff showed no sign of stress. I ordered an Egg and Pepper sandwich and a Caprese Sandwich. Bread is made onsite and it was as fresh and delicious. (I ordered a loaf of Semolina/Italian bread and brought it home, where it was eaten within a few hours. At $4.99 for a loaf, it is an amazing value and a great treat!). Both the egg and pepper and the Caprese were prepared simply and to perfection. Fresh ingredients pack a lot of flavor and my mouth is watering just thinking about it. Amazingly, I don't think Stasio's adds any fats to their sandwiches -- The egg in the egg and pepper, and the mozzarella in the Caprese do all the work. There are seats at a bar along the front window and a few tables outside, but I chose to eat in my car. At a peak time (like Noon on a Saturday), there was not a lot of available seating but it did seem that chairs opened up fairly quickly. After a 10 mile hike, I just did not think it was fair to anyone who might be seated next to me to have to sit next to me! The soups are enjoyable as well and you can get half orders on the sandwiches - which I learned today when I got the Reuben. Delicious! Quite a few co-workers come here in the mornings because the food and coffee are good deals for the price. We have a cafeteria in our building and the food is not as good, but it's still more expensive. I rate the Deli 4 out of 5 stars in particular because the family that runs it is absolutely charming. Not only do they remember my faves but they always great me with a smile. The orders are prepared quickly and accurately. Excellent customer service!

Today, though, I noticed them selling Japanese Wagyu as: Sake Infused Dry Aged A9 Kobe Strip. This is a very scammy way of selling a product. First, meat is graded broadly on three scales - USDA (choice, prime), BMS (beef marbling scale - common in Aus), and the Japanese grading scale. (A1-A5, with most high end steaks being A4 or the gold standard, A5). https://meatnbone.com/blogs/the-clever-cleaver/meat-beef-grading-system-understanding A9 doesn't exist. A BMS 9 could be an A5. But this is mislabeled. They have also used the term A11 in their instagram account. Maybe they are confusing BMS for A-scale, or maybe they are intentionally trying to make their product seem better than competitors. Furthermore, not all Japanese Wagyu is Kobe beef. Kobe beef refers to Tajima cattle raised in Hyogo Japan. The export of this beef is highly regulated to only certain restaurants and purveyors, who will display a seal and certificate certifying the origin of the beef. It is rare, expensive, and most importantly, Bush Brothers (Local Butcher's wholesale purveyor) is not certified to sell, nor do they use in any way, the term Kobe Beef. So it is incredibly likely that this product is mislabeled. Is it referring to the myth that Kobe cattle are massaged with sake? Is it referred to the use of koji (fermented cooked rice) which is often used as an aging accelerant? This product is likely a A5 strip loin (which Bush Bros. does carry) that has been aged. Market price would be somewhere around $175-185/lb. (An unaged cut would be around $150/lb.) When I asked for more information on the most expensive cut of meat in their shop, I was treated with disdain and a dismissive attitude. Neither member of the staff could answer my questions other than to say "It's the highest grade of Kobe beef." To charge $215 dollars for a grade that doesn't exist, for a steak that isn't from Kobe, with an aging method that seems dubious at best, is disingenuous and plays on a lack of consumer knowledge. If The Local Butcher themselves don't know the differences here, they shouldn't sell this product. If they do, they should be ashamed of themselves.

It has never been anything less than perfection, not once, in all the times I've ordered it. It begins with the lettuce--the crisp, delicate shred of it, giving just the right amount of crunch. The tomatoes: ripe, bright, and cut to an almost mathematical thickness, each one scattered with everything seasoning like little constellations of flavor. And then there is the bacon. Not too thick. Not too thin. Crisp, but never brittle. Fresh, but never greasy. It doesn't overwhelm the sandwich. It simply knows exactly what it is supposed to do. But the true revelation is the bialy. That bialy--the jalapeño muenster bialy. Warm, chewy, savory--the perfect vessel for everything that comes before it. And baked into the top, a slice of muenster with just enough jalapeño to arrive somewhere in the middle of the bite, a little flash of heat, a reminder that perfection need not be predictable. I still remember my first time, thinking--what was that!!! It is, somehow, still a BLT. And yet calling it a BLT feels insufficient. It is breakfast when I wake up from dreaming about it. It is lunch too, because I cant finish it in one setting. It is the sandwich against which I measure other sandwiches, knowing full well that they will all fall short. Some sandwiches are meals.
