But after seeing the amount of fat that they took off and had already weighed and charged me for I wanted to see what that dollar amount was. So on my next visit, I opted not to get it trimmed and to do it myself at home. I weighed everything before, and after how much meat I received to how much fat was trimmed off, and it was staggering. He recommended the ranchero bisteca preparado, which is basically the uncooked version of carne asada, I think? They sliced it fresh and seasoned the meat in front of me so I was very excited to grill it at home! We just finished dinner and it was absolutely fresh and delicious! I also got their house made pork chorizo, which we haven't cooked yet but I'm sure it is fantastic like the rest. So far I am very impressed by the spectacular flavors and quality of meats.
