My husband and I visited on a slow Winter Sunday afternoon and had a lovely time. We had about a dozen tastes and received a great welcome by Danny in the tasting room. He introduced us to their setup and provided strong recommendations once he knew our preferences - lovely service. I love the idea of visiting Once as convenient or at the beginning or end of a trip to the finger lakes. There are several wineries we did not get to visit on our trip. I kind of wish we went sooner to inform our final winery visit choices. I'd definitely go back first on our next visit to the finger lakes. They have snacks available. We stopped by Once Finger Lakes during our day trip, and it ended up being one of the absolute highlights. The space was stunning - outdoor patio, sweeping views, and a magical card system to try different wines from all across the Finger Lakes! Jess was incredible - super knowledgeable, friendly, and just radiating the kind of contagious wine enthusiasm that makes you want to quit your job and become a sommelier. She answered every question we had like the true wine wizard she is. Our favorite was the 2022 Cabernet Franc Appassimento from Six Eighty Cellars. Heavenly experience! Summertime at the Finger Lakes is something to dream of! Their deck outside overlooking the lake was in the shade and was perfection for our afternoon wine tasting tour! Visited the location prior to a wedding rehearsal. Design inside is clean and the ability to get your drink using the cards is neat. Staff was friendly and helpful. I only got myself a beer but was able to enjoy it. Big drawback was that they had the doors open, but it was hot. OMG! This is a gem and not even a hidden gem. This place is a wine geeks utopia. First of all, it's very unassuming when you drive up and then when you walk in your greeted by two of the most gracious hosts and one of them by the name of Jessica. Jessica is a wine geek much like myself and when you speak the language, it's incredible. This is a concept that I learned in California where you take a card it's linked to your credit card and you could have a taste or a full glass. Pour that goes onto the card and you pay at the end which is an incredibly smart concept. You don't have to wait for somebody to come by their own leisure to pour your sip of wine when you're just trying to taste things and not wait an hour to have four different wines. Let's not forget about the incredible view of Lake Seneca, which adds to the ambience. Dog friendly? Oh hell yes! out of all my stops today this was the pinnacle of all of them and I will come back simply because they've got your wine gambit covered. Amazing place!!!!! By far my new favorite winery in the Finger lakes. We were greeted with such a warm friendly Hello and sat outside enjoying the beautiful view of Seneca lake. The menu is really through and has a variety of options. The white wine was very good as well as the champagne. You can get a flight or by the glass, even half glass pours. I've been here before, but let's do an update. Once or pronounced ON SAY is not a vineyard but a place to try local FLX wines from a myriad of vineyards around all the lakes. They do by the glass, flights, flights with food tastings, charcuterie boards and more. The inside is light and bright with art done by local artisans. My friend and I like to come here before we end our little self guided wine tour for a flight and a nibble. The view is lovely and during the warmer months sitting outside on the deck or in the yard us a must. We got to talk to the owner and his staff, lovely and all very knowledgeable. You can just come in for a tasting but if you have a bigger group I'd call in so they can appropriately accommodate you. read more

This place is really cool. Firstly, it is pronounced the Spanish number 11 not once upon a time. It's is because there are 11 lakes total in the Finger Lakes region and they showcase a variety of wines from the region. They don't produce wines here but they have lots of flights that highlight different varieties of wine. They also offer food pairings with them. One of the cool things about the food pairings is that none of them require heat so even the worst cook can potentially remake them. We really enjoyed this place on our recent visit to the Finger Lakes. It was a great location to have a glass on the patio and just enjoy the view. They also had some really great snacks like the brie with crostini. We stopped here multiple times during our trip because it was an opportunity to try some of the wineries or varietals that we were not able to visit otherwise. I definitely recommend. read more

I had a glass of wine and melted Brie with crostini and lavender honey($18.00!!!). My friend got a glass, chorizo and the Hedonist Truffles (4 pieces-$10.00) it was a bit pricey for sure!! The small plate of Brie and glass of wine with a 20% tip ran me $33.00-more than my lunch in Hammondsport! think the Brie would have been better priced about $13.00 and the Hedonist chocolates were $2.50 a piece-we got rose, lavender, lychee and raspberry. The food was presented beautifully but I could have done without the peanuts on the Brie. There was a nice view of Seneca Lake and a deck. We were inside because it was chilly. Lovely service and presentation. Now, my June visit, was automated wine dispensers. You get a card to swipe your choices and pour your own from automated dispensers. What?? Choices were more average. I just wanted a glass of sparkling rose. I was told I could not get one without doing a flight. My friend wanted a glass of white wine and there was nothing under $18. Ugh-that's the most disappointing experience we've attempted to even have while visiting the finger lakes. Their website says they have small plates and a variety of wines, beers, etc. we walked in and there was no one working that we saw. It was definitely a self serve and there was no food-even the little fridge off to the side had no food in it. And the tastings looked like you just hit a button on a soda machine to pour. This was our first stop on a recent trip to the Finger Lakes. Our original plan was to eat lunch here, but we left later than expected and arrived at 4:30 which is when the kitchen closes. This is a very interesting place to stop for some local wines. The selection is really well curated. I have to say though, I feel that the value fell short for their flight experience. My fiancée and I both got the sparkling flight and bite and although the wines, for the most part, went really well with the bites, I was a bit surprised at how little food you got with the flight. It very literally is a bite, so you get four approximately 1.5 Oz pours and 4 bites of food for $24. The bites were delicious but I just didn't feel that it was worth the money, especially considering that you go out and taste these wines locally for a fairly low cost. I also disliked the final wine pairing with chocolate. The chocolate tasted way sweeter than the wine and the flavor of it overpowered the wine and made it more bitter. I feel like this is a good restaurant for tourists who weren't able to get a reservation at the wineries and wanted to try some local stuff. But you can go to a lot of wineries, do a tasting of sparkling wine with a pairing for a lot less. read more

Once doesn't produce their own wines - instead they serve a curated selection of wines from 12 different local wineries from the Finger Lakes region so a lot more to choose from than your typical wine tasting at a local winery. They offer tastings grouped by either Sparkling, White, Rosé or Red and have a kitchen on-site for food pairings to go with your wine flight. The menu looked quite inspired and eclectic with small bites as well as platters to pick from. Unfortunately the kitchen had closed by the time I got there, but their Rosé selection was the best I've had in the region so far. On a friend's suggestion I stopped in for a wine and bites pairing, and I'm so glad that I did. I was greeted warmly by Danny and another young lady (I missed getting her name but I was there 10/21 around 2p). I opted for the Best Sellers flight and bites and wow was it incredible. The wine, food, and views were divine. The table next to me did a blind tasting which sounded very fun. They tasted the wines and tried to guess which ones the staff chose for them (I got the impression they had been there a couple times before). Danny was top notch. He clearly enjoys his job, was friendly, professional, and very knowledgeable about the wine. I have been here many times and have always enjoyed the wine & beer and the ample selections; the atmosphere is great and of course the view! However, this time I was disappointed in the new method they employ for serving your wine or beer, the serve yourself process itself is okay however the way they have chosen to price it is downright misleading, so buyer beware! When you look at the machines, you'll see what you think are prices for each size pour however, this is not the case, they price it in "units" and the prices per unit are not displayed, with that said, we had 2, 6 oz glasses of wine and a 6 oz beer and paid 32.00+ dollars and that does not include a tip!! That's basically $12 per drink plus tax! With all the other winery and micro-breweries in the area I will NOT be returning to Once to be fleeced... Upon leaving we went up to Billsboro Winery and paid $22 for an entire bottle of wine, we received service from a winery employe who explained all the different wine selections and we enjoyed the beautiful outdoor patio and the beautiful view.. read more

We looked forward to trying this tasting room as we were told they stocked from multiple wineries in the area and we thought we could easily sample several wineries' offerings in one convenient location. The service is fully automated with the wine being dispensed from machines that you use with a card they give you in exchange for your credit card which they hold til the end. The card keeps track of your tastings and you pay when finished. The personal touch and the explanation of the wine, which you normally get at other tastings, was missing which further emphasized the "automated" experience rather than the personal. Additionally, the tastings are quite expensive compared to any other winery we visited at $5.00 per individual taste, compared to anywhere from $5.00 for 6 tastings to $12.00 for 5. The concept is a good one but they need to reevaluate their pricing and introduce a more personal approach, particularly for those wanting to learn about the wines they're trying. read more

Once Finger Lakes is a welcome addition to the wine tasting scene on Seneca Lake. It is one of only two places I know of where one can taste wines from different small vineyards. The location, on the west shore, is lovely, and staff members are very friendly. The wines we tasted were excellent, and purchasing was straightforward (almost - more in a minute). Being a new establishment, they have a few glitches to work out, but most of them are minor. For example, their price discounting on wine purchases is confusing, as is their choices of flights vs. a la carte tasting. One not-so-minor glitch came when I went to buy wine. They rang it up correctly, I paid with Apple Pay, and my card was charged $300 more than the amount of the sale. I brought this to their attention, and they promised me they'd follow up. I called a couple of days later and talked to Antonio (the owner) and he got it fixed right away. He was courteous and friendly in so doing. Again, I don't blame the original error on them; rather I credit them for their willingness to work with me to get it fixed. I come to Seneca Lake at least twice a year. Once Finger Lakes will be a regular stop. I highly recommend it. read more

Stopped by after noticing this new place and looking at their website. We didn't have a reservation but they were extremely accommodating. Person assigned to us was very knowledgeable about each wine he served during the tasting. He even took time to walk over by the wine displays, go over each vineyard and the pro and cons of corks versus screw caps and all the new screw cap developments that allow the wine to breathe (didn't know that, I've always been biased towards real cork). Later we had glasses of wine and a charcuterie board and he was just as attentive explaining what was on there. As we later checked out, he was busy with new guests so we didn't want to disturb him and asked the original person who sat us if its OK to check out. She said sure, oh that's the owner. That was fantastic, he never was pretentious or gave any hint of his position there. Great guy and knowledgeable beyond comparison. Wine selection was great, food was great.
