For my entree, I ordered the Truffle Carbonara. The carbonara was rich and creamy, made the traditional way with eggs, pecorino, guanciale, and pepper--no cream-- the way it was intended! I'm not a big pork eater, so I had no idea guanciale was pork! I wasn't sure how I'd feel about it in my dish, but it's nothing like the typical bacon bits you get in the states.
