I am visiting Chama for a few nights. I stopped by Outlaw BBQ Company for takeout tonight. The BBQ did NOT disappoint! The chopped brisket BBQ sandwich was delicious. The French fries were seasoned well and crispy. The BBQ beans were perfectly smokey. The older gentleman at the door was helpful, the waitress was friendly and fun, and the food was prepared and packaged quickly. You can't go wrong! read more

Chama is a quaint town, but you wouldn't think "tiny town" if you were judging on this restaurant alone, I think you would think you were in a much bigger town. The population of this restaurant was amazing and yet we were seated within 30 minutes with a party of 6. While we waited we were encouraged to grab a drink from the bar and a seat on the outdoor patio. The weather was amazing! The smells were delightful as we waited building the anticipation. It was clear that the Outlaw BBQ Company is a local favorite as several hard working folks in various uniforms representing the myriad of employers were also there with their families. The staff was hustling to be attentive to all their guests and those arriving who were learning they were going to have to wait for a seat. I didn't see a single person turn away in frustration and when I took the first bite, I knew why! The brisket and ribs were cooked to perfection, the amazing mouth watering smells were finally meeting our taste buds and all conversation at the table stopped as our party all dug in. Had dinner tonight. The brisket is excellent. The 45 dollar steak was so bad I couldn't eat it. It may be a one off but disappointed. I told the manager and she seemed to be angry at me because my steak was bad. I paid for it but won't order steak again. Stick with the brisket. It was really good. read more

Oh my goodness... what a pleasant surprise! This place is so worth the stop! We stopped here while in town to catch the Cumbres-Toltec train. We had both had the one meat plate of sliced brisket. We are Texas people and this brisket was the most tender we've had! It had little to no fat and the smoke flavor perfectly done. The selection of sides were pretty tasty as well. Larry, an older gentleman escorted us to our table. I'm not sure why, but I was tempted to ask for a Shirley Temple from the bar, and the bartender provided me with a generous serving. For dinner, we ordered one each of Brisket and Pulled Pork, and were presented with a giant spread with sliced Texas Toast. Carlotta took excellent care of us! After we finished eating, hubby wanted to go see the fireplace, and while we were there, we struck up a very lovely conversation with Loyd, one of the co-owners. The food was hit or miss. The smoked turkey, ribs and steak sandwich were edible. The dry rub on the burger was too spicy for most the table to eat. The burger is thick but dry as a bone. The potato salad is the premade mustard one from any grocery store. The beans were more like bean soup. We visited on a busy weekend so we figured service might be an issue but it was far worse than we thought. We were completely neglected. I will never return. read more

We drove up and down main street looking for something open on a Wednesday. We saw the Outlaw sign but also a "for sale" sign in front and weren't sure until a "Open" flag appeared on the Hwy. We had the smoked hamburger with green chile (double YUM!) and the chopped brisket plate (yum). The sides were fried okra (good), elote corn (okay if you like street corn), and bbq pintos (good, but not thick broth). The selection of draft beer was VERY good and the wines they had were above expectation for a small town. Wish we had room for the cobbler, but, alas, no such luck and no way to keep it cool as we were camping at Heron Lake. We WILL be back as long as they are there! read more

We are visiting from north Texas and our Chama-local friends suggested Outlaws BBQ. I was skeptical but these are some of the very best ribs I've ever eaten. EVER! Smokey, moist, well seasoned, tender but not TOO tender. Absolutely awesome. We had good sides of slaw, okra and street corn; all were delicious but the ribs were so good (and so many) that we really didn't have much room for the sides ... then came dessert: a delicious black berry cobbler with vanilla ice cream. It was another hit that was on par with the ribs. Our waitress Carlotta, provided us with great service and made sure we had everything we needed and kept checking on us for drink refills. Had to give this a think for a while before writing a review. First, I totally get staff shortages and longer wait times since the whole pandemic thing but I still feel badly when there's only one person having to handle the entire dining area and yet other staff not pitching in to help out. That said, we anticipated the wait and would have waiting in the bar area for a table to come open if there would have been room in the bar. Alas, it was standing room only so we opted to wait in the restaurant along with several others who also couldn't get into the bar. We were told 20 min which turned out to be more like 35 min - we were told this is the popular "newer" place in town and one of only two restaurants to eat at here. After being seated, we waited another 20 min before we could order. Then, shortly after placing our order The only waitress returned to let us know they were out of sliced brisket, ribs, and corn. The restaurant is open from 3 to 9 and it was only 7:30. waitress explained that the night before the Cook had made too much food and didn't want to make the same mistake the night we were dining. While waiting for order we had a chance to admire the layout and decorative touches. The restaurant has a bit of an industrial rustic vibe, exactly what you would expect from a barbecue place. We were able to try the pulled pork, beans, potato salad, and coleslaw. The pulled pork was amazing! Probably the best I've ever had and the beans were tasty. The potato salad and coleslaw were okay but nothing special in our opinion. Are understanding is the restaurant has only been open since July and it has potential. The food is good and reasonably priced. Just need to work on getting more table side help and food quantity. read more

First, let me say..... COME TO THIS PLACE! The wife is a BBQ nut. She would travel 500 miles for phenomenal Brisket. We are fans of Texas, Mesquite Smoke, Dry Rub and this place makes us very happy. We were traveling from Texas, back to Colorado and we came through Chama about 5pm one evening, looking for some take-out, that we could eat in our RV. A quick Google search and Outlaw popped up. We ordered a Two-Meat plate with Brisket and Sausage. Then I added a couple lbs of Pork Ribs. Everything... and I mean everything was just awesome. .... some of the best BBQ we have had in a long time. Even the Potato Salad and Cole Slaw were awesome. We will be back and may even sculpt a trip to Chama for all the adventurism... and BBQ!!!! read more

I noticed the servers are not very welcoming to locals which is weird but if you want hot food stop on by.

I was starving having just skied in the deepest powder imaginable. Yelp steered me here and I was beyond satisfied. The staff are friendly, the drinks are smoked individually at the bar and the BBQ was the best I've had since touring the south 4 years ago. Only regret is that it was a weekday and the large live music stage wasn't booked. If you are in the area, this is the best decision you can make for where to stop and eat and drink. read more

I went in and asked if they had salad and was told they could put a grilled pie of chicken on top to meet my diabetic needs. However, the waitress and cook(owner's husband) refused to do so because he was too busy. To do this, it would have been a matter of putting the chicken, cheese, and chilis on top of a side salad of a pre-made sandwich which would have taken all of 5 extra seconds. I even offered to pay for the sandwich. I talked to the cook, and he asked where I was from, made a snide comment, yelled at me, and was quite honestly, rude.
