We visited Pablo's about a year ago and vowed never to return again. We were urged by friends to go again. What a mistake. The margaritas were undrinkable. I sent mine back and it returned undrinkable. We ordered guacamole and it tasted artificial or processed. Definitely not what should be served in a Mexican restaurant. When the bill came the "fixed" margarita was changed to top shelf margarita which it was clearly not. When there is a decent Mexican restaurant a few blocks away, why would anyone go to this awful place. Never again. read more

I visited Pablo's recently with my daughter. I don't know if it's a change in management or what, but service was prompt and food was delicious! The restaurant is very cute, it was nice and clean. The Baja fish tacos are a must try if you're into that. So good- My daughter had the brisket enchiladas- Both dishes were very flavorful. The waitstaff is kind and willing to help, even if it can be slow at times, and Pablo is a really nice guy, but... What happened to the food? It used to be really good, some of the best Mexican food I'd had in this area, but now everything is full of what tastes like chili powder (salsa, charro beans, and black beans), or it has no flavor at all (chicken pipián) in the tacos. I brought my mom here for the first time with my kids because I'd been wanting to come back, and because I wanted her to enjoy it. I even told her the salsa was really good... I've had multiple good meals here in the past, but the food on this night was simply disappointing, and it was oddly loud and hard to hear, especially for my mom. The waiter was apologetic. Maybe it was an off night for the chef, but I do not plan to return. If the food quality could go back to the way it was when it first opened, I'd be here a lot. Please fix this. I'm sad to say this restaurant has gone downhill since it's opening year. When it opened, the margaritas and the food were great, then they started watering down the drinks and we stopped going there. We have ordered takeout from Pablo's twice in the past month and both times it was a disappointment. Ordered a strawberry margarita and when I got home and opened it up, there was barely a drizzle of strawberry, basically a standard margarita, the food was good. Placed a to go order this afternoon and looking at the to go margarita thru the lid before I left, again, was white, barely any strawberry. Had the hostess send it back to fix it. The mole enchiladas I ordered were ok, nothing to write home about. I want this restaurant to succeed, hopefully they can get their act together again. read more

We were in the area one morning and decided to get brunch. Service was friendly, but slow, despite the restaurant not being busy at all. The inside of the restaurant is very cute and trendy. I love that they have an outdoor seating area! It was a perfect Texas spring morning, so we decided to sit outside. I ordered the eggs with chorizo. I visited this location for over 2 years and became a regular. Love the staff but now it is way different. I work in the industry and I know catering to the guest . I didn't get the opportunity to get the managers name since I only see him seated at the bar . But the one time he came to our table it was to say we have 7 min to finish our drinks and go . He wanted to make sure his staff were out on time and to close the restaurant which is great, but wrong way to address your customers. I do not live in Fate, but I drove past by this restaurant one day and thought I need to come by to try. I am so glad we finally did. We got seated right away on a Saturday night. The restaurant is actually pretty big inside. The salsa for the chips was very good compared to other restaurants we have been to. We did try their margaritas and they were very good. First time ordering and had it delivered (still recovering from a stroke). The food arrived early and still hot! I had the brisket nachos and would definitely order them again. Let's start with what we liked. The restaurant is furnished beautifully, it showcases a huge bar and colorful paintings including this nice signage with Frida Kahlo's look. The staff was very friendly and the food was absolutely delicious. We loved the chips and salsa. I enjoyed their take on brisket enchiladas and my husband's carne asade steak was cooked perfectly medium. The only complaint is service. There are a lot of young staff that seems to need more training on making sure they are more attentive with checking on the customers: getting our order in a timely manner, drink refills, getting us to-go boxes, and getting our check. We had to constantly hail different people for help. For our first time here, it was disappointing. I even saw somebody just standing and looking at his phone.... Lots of potential. The menu was very limited, the drink menu was actually more comprehensive. The parking was very limited. The bar stools were uncomfortable if you are tall, short folks are probably fine. The chips were not fresh or just really thick. The food was okay. The iced tea was perfect. They do use jasmine rice (not really a Hispanic thing). I was supposed to get a jicama salad with my enchiladas, but I got purple cabbage instead. It was obvious but the server wanted to argue that jicama was purple. We did not linger. There are two fairly large TVs playing sports that no one was watching. I honestly detest tvs in a proper restaurant. Personal preference. The menu really needs help. The Resturant is very tight and the servers will constantly bump into trying to slide past you if you sit at the bar, seriously annoying. I eventually just stood up and ate my dinner because I was tired of being bumped into. The restaurant looked clean. We did not stay long enough to see the restrooms. The food came out hot and reasonably quick. We might try this again in about 6 months. The upstairs patio looked inviting. read more

My husband and I have been eyeing this place for quite some time and finally decided to check it out on a Saturday afternoon. We got there around 3ish and it was pretty empty but the place quickly filled up. Our server Louis was awesome and made great recommendations! I ordered the brisket enchiladas, Mexican martini, and ceviche! The ceviche was fresh and light! Very good and well made even though I don't normally eat or like tilapia. My enchiladas had wayyyy too much sauce on them! Drowned in sauce! It was good but next time I would get light sauce or it on the side for dipping instead. I was disappointed by the rice. It's regular jasmine rice.. not what I expected at a Mexican restaurant. Would highly prefer Spanish or Mexican rice.The black beans were pretty good. My Mexican martini could've been colder but was still delicious , next time I'll opt for a sugar rim! We also got the sopapillas (not pictured) which were delicious! Explored to downtown Fate at the recommendation of a neighbor and we are so thankful. The restaurant is soooo cute. Great feel inside. They also have updates coming for a heated rooftop and can't wait until they do. The salsa was tasty. Queso with brisket was great. Sometimes I think the queso overwhelms meat - not this one. Instead, it was so good we wanted to try more. We got the nachos as well. Totally over indulging. For dinner, he got shrimp diablo. I wanted it but was afraid there would be like 3 shrimp. No sooooooo good. Spicy. Delish. Well cooked. I am soooo getting it next time. I got Marcos special. Poblano pepper stuffed and wrapped in steak. Huge. Yummy. We will totally be back. So flavorful. Tried this place for the first time today for Cinco de Mayo. It was busy but there was no wait. Everything we tried was very good. We tried the queso with brisket, shrimp enchiladas and salmon. Dear Pablo, We will not be coming to you anymore. 3 strikes and your out. We ordered food for pickup, you would not provide plastic silverware. We didn't have any at home because we just moved here. You told my wife to go to the gas station on the corner. We came in one evening and your staff got the order all wrong. You did even offer to comp anything, to get it right took so long, I just cancelled my dinner. Tonight was National Margarita night. We sat at a table for 20 minutes and got a nice bowl of chips and salsa. We asked the hostess for a server, after another 5 minutes we just left for good. Pablo's is an almost great Tex-Mex place; from menu to decor they are on-point! But the intangible aspect that sets it apart from most of the other local hotspots is that the 'Who's Who' of Rockwall Elite is currently crowding into Pablo's! If you have lived in Rockwall for a while - you WILL see people you know! Food & drink menu is simple and short. The Brisket Queso was excellent, as was the Chicken Quesadilla's! Brisket Enchiladas were good, and the Salmon Salad was excellent! The Carne Asada was good, if basic. Good Margarita's, and limited beer selection, with only two 'house-wines' at this time. Our server was super-friendly, and in general - service was fairly speedy considering the busy Saturday crowd. They kept forgetting my wife's drink, but hey - they are new. Service should improve over time. Similarly; the menu may evolve with time. Because they are new, I'll go 5 stars for now. Worth another visit to find out how it goes. read more

This restaurant was surprisingly good. Came here with friends after going to FRESH supermarket. The exterior of the building looks like an old cantina, really cute outdoor sitting area and also an exterior deck at the second floor. Would've loved to sit outside but it was too cold. We were sat immediately and were able to order drinks quickly. They give you free chips and salsa (really does have a kick to it) and we also ordered the queso (it was sooo very good. Highly recommend it). We then ordered our entrees. My husband got the enchiladas and I got the chicken mole. The enchiladas were delicious, it had a nice combination of brisket with traditional Mexican flavors. The chicken mole was disappointing. The meat was too dry and the mole was bitter. The sweet plantains were a nice touch to a traditional Mexican dish. Other dishes that our friends recommend is the Camarones a la Diabla and their seasonal special. Definitely coming back here when we're back in Texas visiting friends. read more

The food is a cut above the standard Tex-Mex; closer to what one would experience in Mexico. We visit Pablo on almost a weekly basis and enjoy it every time. We love to get their guacamole for an appetizer and I thoroughly enjoy their chicken quesadillas for an entrée. 3.5/5 I'd give this place 3.5/5 stars simply because there aren't many places like it in the area, and it's a cute spot. If it was Dallas it would probably lose a star. We had a group of 4 and came around 6pm on Saturday The food: Our appetizer was the brisket queso and some free chips and salsa. I ordered the Baja (shrimp) tacos, and my party ordered the Baja (red snapper) tacos, southwest tacos, and carnitas plate. We also ordered a house margarita frozen/no salt, as well as a house math on the rocks. To be fair- everything was just okay. - Margaritas: the house margaritas are huge (yay) but there's a definite cheap tequila or perhaps everclear flavor. They're strong but not nearly as drinkable as somewhere like Gloria's. - Apps: the brisket queso was okay, it was pretty runny and had a cheese flavor. It didn't taste like stadium nacho cheese, but probably was more of yellow velveta and some cheddar. I wish it was thicker and I wish it had more flavor to it. The house salsa is also very watery and wasn't very spicy. - Mains: The tortillas were unfortunately store bought mission tortillas, very soft and just room temperature. At a minimum I wish we would've been offered a choice of corn or flour tortillas, but really I think this place could benefit from some house made tortillas. All three tacos had some type of grits style cheese/onion filling, along with some cabbage and a slice of avocado. The only difference was the protein. The rice felt like it was microwave steamed white rice. It had no seasoning whatsoever just water, my ranchero beans were undercooked. The vibe: This place is so cute. The music could've used some help but the decor and style is great! The service: Our waiter was really nice and attentive. The staff is clearly new and young, so I give them a pass for any mistakes. They spilled salsa on our table and at least grabbed us one new water glass, I ended up cleaning the table with some napkins. They had some weird timing with refilling chips, but again, they were learning and attentive. I didn't mind this In sum: 3.5/5 This place is really cute and I hope they don't close, since there are few places out this way that deliver their vibe. There are some things I think they could work on that could really improve their food and dining experience.
