    This is a tiny cafe on the first floor of the cancer center. They have great chai tea lattes!

Of all the coffee shops in the area, Instill is the place to go, get coffee & chill. Of course, I always get the ocean latte and my daughter got the strawberry matcha. We also ordered the Caprese Avocado Toast. Sooooo good! This place always has a great vibe to it. The staff are all nice and down to earth. Place is always clean and bright. The coffee beans I am not sure where they are sourced, but I have had these beans before. Very unique taste it made a very enjoyable latte, although it is not my favorite of all time. Unfortunately, the brunch menu left much to be desired. The Sunday menu had very limited vegan or vegetarian options (not even a salad?), and substitutions were not allowed. I was told I "couldn't substitute bacon," not even for avocado. I ordered what I thought would be chilaquiles, but it turned out to be a trendy, Americanized version of the dish. Being Hispanic, I know better than to order dishes like this at restaurants because I expect traditional cooking. So know that the eggs in the chilaquiles are served over easy and very runny, they are not scrambled. Also, instead of tortillas, the dish used Dorito-esque chips. Since I can't eat undercooked eggs, I was essentially left with a bowl of chips for $13 (pictured). Overall, the menu felt like it was trying a little too hard to be trendy or "cool" rather than letting the locally sourced ingredients (which is really cool feature they offer!) speak for themselves. I liked that they care about sourcing ingredients, but the execution felt more focused on creating "quirky", elevated twists versus making dishes that are cohesive or satisfying.
