We were visiting from North Carolina and celebrating our anniversary, and the entire experience made the evening incredibly memorable. From the moment we arrived, the host team was warm and welcoming. Although we were about 15 minutes early, our table was already prepared--a small detail that showed genuine care and attention. Our wonderful server, Teagahn, was full of smiles and positive energy. She took exceptional care of us throughout the evening and made us feel completely at home. The food was spectacular and far exceeded our expectations. We've experienced everything from hole-in-the-wall gems to high-end restaurants such as Michael Mina, and Skogen ranks very high on our list--honestly, even better than Hell's Kitchen. Every plate placed in front of us was thoughtfully prepared, beautifully presented, and full of flavor. The lobster salad and lobster bun were delightful starters. Our swordfish and filet were cooked perfectly, with balanced flavors and well-proportioned servings. What elevated the experience even further was watching Skogen's remarkably talented young kitchen team--mostly in their late teens and early twenties--handle a very busy dinner service like seasoned professionals. They were focused and polished, yet still friendly and personable. A special shoutout to Dominic, Teagahn, Rosalinda, Lance, and Joseph, the executive chef and owner. The combination of amazing food, genuine hospitality, and an outstanding team made our anniversary dinner one we will not forget. Our entire experience at Skogen was exceptional. (But if you're looking for only bison, don't have any kids with you and willing to wait a hot minute, check out my review for Buffalo Dreamer.) If you do have kids with you, are willing to work your way around the crazy construction, or just want to try the coolest tap room around in addition to a bite to eat, the Mercantile & Taproom is your place! Firstly, I went there for the kombucha. It did not disappoint! Ask for the kombucha flight... it was incredible! Second, we each had the bison-elk burger and the cranberry stuff on it was... Oh. My. Word. I can't say what my tastebuds were doing to the food in my mouth and keep this review PG. The gluten-free bison/elk burger could have featured a GF bun, but I just wasn't feeling the extra bread so I got it without. The cheese sauce on top was just oh-so creamy delightful. And while broccoli salad may sound weird, it was actually freaking delish! The only issue I had with the burger was since I didn't get a bun to soak up all the juices, they disintegrated the paper lining in the basket. Pretty sure I ate a little extra fiber. Hubs got a non-alcoholic Margherita (although they can make it fully loaded if you wish), the bison-elk burger with all its gluteny-bun goodness, and the soup of the day, which he said was easily hands-down the best soup he's every had in a restaurant. (That's high praise considering the potato soup experience we had in Knoxville!) If you're in Hot Springs, passing through, or just want somewhere awesome to eat dinner, go here. Go early, as other reviewers have noted they may run out of ingredients. That tends to happen when a restaurant makes everything from fresh ingredients.

Understaffed, in need of refurbishment and upgraded carpeting and furniture and when staff is present, they spend too much time chatting with each other, keeping their faces glued to their phones and inattentive to customer needs. On the night I ate at this location, I arrived at approximately 8 PM and the restaurant and bar areas were DEAD! While I was seated quickly by the hostess, it took a while for my server to arrive at my table to take my order. I added the salad bar to my meal and asked the server to wait till I'd finished my salad BEFORE bringing out my entree. She did not. After I ate my entree, I had to hunt my server down to get my check, This last part was annoying and I decided to not leave my usual 20% tip and instead, left 15%. I may or may not eat this RUBY TUESDAY location again when I am next in Rapid City. It's OK if nothing else is open, but it won't be anywhere near my first choice.
