We stopped here while traveling through Wyoming after seeing all of the positive reviews. We were not disappointed!!! Our high expectations were exceeded. It is awesome to find something on the menu besides all the typical pizza toppings. We did 1/2 and 1/2 Firecracker and Gardener which were both delicious!!! Neither had the typical marinara sauce base or were your typical go-to pizza. Unique flavors that blended together splendidly. The Firecracker had a little bit of sweet and smoky from the cream cheese and bacon, a little kick from the jalapeño and topped off with a fresh taste from the lime and cilantro. We also ordered salad and a vegetarian soup of the day which were both a little different from the norm and very good. The "icing on the cake" were the cinnamon roll bites - warm and gooey and just the right size!! Yum!! The 14 inch pizza is a good size for two people, especially if you get an appetizer or dessert to go with it. If we were in the area again we would come back! read more

Gillette, you have redeemed yourself. What a treasure in downtown. This place has no signage at all and if you don't know where you're going or who to ask, you wont find it easilly. It is located inside the brewery in a little corner in the back. You place your order at their little register and they take your pizza outside to their wood fired oven, even when it's 1F outside. The owner that I spoke with who made my pizza had excellent interaction with me, very professional and excited about their business. A trophy sat next to their register for Best Entrepreneur, and I personally feel that it is an award well The two I got are the Mushroom Bianco, which uses a garlice infused olive oil sauce and the Classic Sausage with your classic red sauce. This pizza is, to put it mildly, fantastic. It is hard to beat a wood fired pizza no matter where you go, but Carrello's really delivers on a beautiful, 9 inch, truly artisan pizza with a thin, light crust that is baked to perfection in their oven. The bottom gets that crisp texture and subtle smokey flavor that can only be found in a wood fired hearth oven. Both pizzas are unique with their own flavors and they are both perfectly balanced with crust, sauce, cheeses and toppings. Not one of them was too much or too little and the 9 inch size (they also have 14" which they call family size) is wonderful, especially for those of us who are known to down a big chain family size pizza by themselves. This particular aspect of the artisan foods movements is awesome to see, reduced protion sizes with a focus on delivering quality in every bite, not quantity through gigantic overloaded, over salted, fat people makers. The ingredients, from the dough to the sauces to the toppings are fresh and full of flavor and textures expected. Their menu is massive and they have different sauces and toppings to choose from, which is really nice to see and a wide array of toppings. Thereis no way you can't find a pizza you're going to love. Now, I love my classic sauce on pizza, but the bianco with the mushroom pizza was divine. The great thing is that you can eat one of these, a whole one, and not feel overloaded, bloated, or sogged down by 12 pounds of big chain pizza shit, so this would be a great place, with the brewery inside, for a nice casual date. And of course, they make them to go too. If you're ever in Gillette, WY, I cannot recommend this little gem more 5 stars! read more

This place is amazing! The service was top notch and the eats were delicious. I took a suggestion from a yelp reviewer and ordered the bacon wrapped jalapeño poppers and oh my goodness they were hands down the best I've ever had. I asked the waiter his recommendation for a beer and for our pizzas, and he didn't disappoint on either end. The pizzas were delicious (the firecracker was our favorite)! I was shocked to see I had not left a review for this place on Yelp, so need to do it. How is this for what I think of this place? I have had pizza in 48 states, 14 different countries and 3 different continents....and THIS is the best I have EVER had! Wood fired, high quality ingredients, excellent service, great choice of beers, fantastic and unique selections of pizzas. My youngest sons favorite is the Firecracker: Garlic infused olive oil, cream cheese, mozzarella, bacon, jalapeños topped with cilantro and lime. My older son loves the Steak and Spinach: Garlic infused olive oil, spinach, feta, mozzarella, mushrooms, flank steak. Me, I go for the Carnovire: San Marzano tomato sauce, mozzarella, ham, premium pepperoni, house-made sausage, and Montana bacon. I travel to Gillette about once a month on business and will try a pizza I have not had each time. Only about 4-5 of them left that I have not tried yet. If they ever franchise, I will be talking to them about owning one of these. You will not regret eating here. read more

Awesome food! The bread is amazing. Perfect crust and so soft inside. Had the artichoke & spinach dip which can highly recommended. That dip would make cardboard taste priceless! Able to order 2 different pizza types in one called the 1/2 & 1/2. Flavors did not mix and the we all got what we wanted. Server let us know everything was made from scratch and it definitely showed. One of the best pizza I've eaten in the US so far. The real thing, true Neapolitan style. Perfect crust, light and crunchy, ideally baked, with right amount of topping. We had the margherita and the MyHeart, both delicious. Order the large size, the small one is a bit too small. Great tap beer, try local Snake River Pako's IPA, an ideal match for pizza ! Was in Gillette visiting from Colorado this weekend and we are so glad we found Pizza Carrello! We tried 4 different pizzas and wings and we were very impressed with the flavors and combinations. The locals all highly recommended this place to us as well, which I think is awesome for the community. Busy on Friday night, but what restaurant isn't that is serving amazing food? Last but not least, we sat at the bar both visits and received top notch service from Clay the bar tender. This place is amazing! Their Mediterranean menagerie salad is absolutely delicious and fresh, and this is coming from someone who hates salads. There is enough tomato/ cucumber/artichoke/ olives/chicken in relation to salad greens that makes every bite perfect. I get that with their jalapeño poppers and a small pizza and split it all with a friend. Their adult drinks are really creative and fun too. If there are two things that matter most to me in this world it is my family and my pizza. I was looking for a quick place to eat after a long day on the road. I didn't know I was in for such a treat. As usual I asked what was good and my server Valerie ( we will get to her later ), replied " I know you came in for the pizza but do you like wings?" You crazy ?? I am from the area that invented wings!! After a little persuasion I ordered the dry rub wings and a pepperoni pizza. This wings were unreal! They were so tender and they had a subtle smoke flavor and the crisp level was on point. The rub was amazing. I def am going to try the dill rub next time Now onto the pizza. This pizza was so good you might slap yo mama if she took the last slice . The sauce and the cheese were just the right amount for my taste. The crust was amazing and I got a side of the homemade Mediterranean dressing to dip the crust. I am Italian and we don't play with that ranch nonsense in my house The service is what truly made my experience over the top. My bartender was so polite, so attentive and you could tell she actually cares about your experience. I noticed how nice she was to all the other guest. Often times these nerd ass posers post on yelp about how poor the service was at a place after they got home and could be passive aggressive behind the comfort of their computers. I am a pizza enthusiast, I traveled extensively and usually hunt for a pizza restaurant in most places I travel. I really have wanted to like this place. I have rooted for them since they started. I like their story. I would love to have a great pizza place in Gillette that I could go to and recommend to out of town era, but they just can't bring the entire dining experience together. I give them a shot once or twice a year hoping for a better experience than the last but they continue to disappoint. The pizza is OK at best and the service is consistently terrible. There has been once or twice when the pizza was "OK+" but still far less than great, but the service has always brought down the experience.
