Tender octopus, great texture, and that creamy botija olive sauce was the kind of thing you want to bottle and take home. All three were good, but the ají amarillo version was easily my favorite; bright, tangy, a little spicy, and the one I kept going back to. The only dish that did not really land for me was the Scallops a la Parmesana. The scallops themselves were fine, but the Parmesan, garlic butter, and creamy ají amarillo combination felt a little heavy and seemed to mute the scallops rather than highlight them. Not bad, just the one thing I probably would not order again. For my main course, I had the Lomo Fino en Salsa de Soya. Very good cut of beef, cooked exactly the way I asked for it, with a rich soy, onion, and tomato sauce. Straightforward, well executed, and very satisfying. We also had a traditional Pisco Sour and a maracuyá Pisco Sour. Both were very good, although the maracuyá version is dangerously easy to drink. Dessert was the Helado de Lúcuma, which I had never tried before. Apparently lúcuma is one of Peru's classic ice cream flavors. It has a distinctive, almost caramel-like, slightly earthy sweetness. If you are Peruvian, you probably already know exactly what this tastes like. If you are not, it is absolutely worth trying at least once. Service was excellent. Marcelo took great care of us on our first visit, and one of the co-owners greeted us when we arrived. The place was packed and lively, but service never felt rushed or inattentive. I'm not local to Frederick, but I pass through often. Lima Soul has now given me a very good reason to stop. I'll definitely be back, partly because the food was excellent and partly because there is still an unreasonable amount of that menu left for me to investigate.

You watch them cook it fresh on a large stove/ grill and bring it to you in baskets. The cheese they use is salty and delicious and we reallly enjoy the lorroco, jalapeños, and spinach add ins. Don't skip on the sides, their yuca fries are super crispy and thick and I love the crema and plantains. The plantains are almost caramelized and have a decadent sweetness to them that goes so well with the crema. The refried beans are also amazing!
