They have all the items to make a better version of this, but the execution whoever designed this menu just either didn't think this through or didn't taste it. I think that sauce works well as a topping, but perhaps as a flavor booster for a salad or poke bowl rather than these dumplings as they are already light to begin with and definitely needs something like a ponzu or wasabi soy to drive the flavor. (Black Tonkotsu Ramen: D) - The main part, the broth of this Tonkotsu actually has some nice pork development that gives the soup a powerful richness. There are some specifics that could be improved such as the color of that pork as it just looks underdeveloped in color, and in turn, flavor. However, the biggest issue is the poor packaging of this , where the broth does not stay in its container, making this quite messy for takeout.
