Like most hotel bars, the drinks and food can be expensive, but the bartenders are on point with the cocktails. Their smoked old-fashioned drinks were good, the Negronis were very crushable, as was its bourbon cousin, the Boulevardier. The shrimp appetizer that my wife ordered was also very good, and a nice starter before we had dinner at the English Pub. It's a good spot to experience sunsets as you knock back a drink or two, or watch the night sky, so long as it's not overcast or raining. If you look closely towards the ceiling-length windows, you can see the Denver skyline in the distance in front of the Rockies that dominate the landscape from afar.

I ordered the bison meatloaf and wow... it practically melted in my mouth. The wine mushroom reduction brought everything together perfectly. The roasted cauliflower and Brussels sprouts had the best crunch, and the mashed potatoes were so creamy and delicate there were no leftovers. My dad ordered the roasted chicken and said it was incredibly moist and flavorful. My mom's bison burger was juicy, tender, and cooked perfectly. The double fried French fries absolutely stole the show though. Somehow they were extra crispy without being overdone. For dessert we shared the skillet cookie, and it was the perfect sweet, indulgent ending to the meal. After a full day of traveling, this was exactly what we needed. Reclaimed metal sheet walls, concrete floor, a nice looking bar and good 80s/90s music piping in. The menu offers many taco options, which you purchase a la carte. I took a risk and got the ahi tuna taco, and a steak fajita taco. Both were good - but I was most impressed with the Ahi. It was better than the sushi I have had at a sushi restaurant since moving here to CO. Nice Asian sauce with sesame seeds throughout. Super good. It's light, though. It is in a butter lettuce "taco shell", but honestly I think putting it in a true corn or flour tortilla just would not mesh well. The service was very very pleasant and attentive. We even had to move a couple times because our party number kept changing, and she was as pleasant as can be. I look forward to heading back and trying something else. For my meal, I enjoyed the Whiskey Wings that were fried well and had a lovely sweet glaze with buttermilk ranch for dipping. The picked Fresno peppers were a nice touch as well. I washed it down with a couple of Bees Knees cocktails that brought me to a place of enormous well being. The Fortunate Prospector is a good option to enjoy food and drinks if you are staying at the Gaylord Rockies.

I'll start by saying the service is absolutely incredible. I came in here 35 minutes to closing and was never rushed for hurried along. My server, Haylie, was an absolute gem and was very engaging in conversation. The ambience is definitely Denver meets Lodge meets rustic meets current and is a little shtick but definitely warm and inviting. The pricing is a little bit higher than normal but this is a resort and as far as Resort pricing goes if it's completely normal. Haylie recommended the cottage pie and it did not disappoint. The mashed potatoes or soft and flavorful the slash beef underneath was tender and seasoned well. All in all is really good take on a traditional Shepherd's pie.
