Been a grip since I've written a review, but Proof Pizza is worth it. This cart in Breakside's pod was seriously good. Chicago style thin crust pie recommended by a co-worker who is very familiar with the style. Yep, thin crispy crust with quality ingredients and a dynamite tangy sauce. Pizza's got more than a few similarities with Oregon style pizza, if you know what that is. By all means ensure you try the sausage if that's your thing. Fresh, zingy fennel puts it over the top. Can't recommend this highly enough if it's a nice day to sit outside and have a beer. Looking forward to returning! read more

Not gonna lie, I wasn't expecting to like this pizza this much. I was hoping for good, but for me, this pizza was really great! Thin crust - but not too thin, still substantial enough to hold the toppings and stay crisp. We got the Wolff street, great amount of toppings, flavor of the sauce was right... overall this was a pretty great pizza! Will definitely be back! Prob try some other stuff too! read more

There are not many places that offer tavern style pizza here in town. I'm glad that these guys are around and also in a convenient location for me. I ordered the Wolff Street- pepperoni, sausage, mushroom, onion, and green peppers. The pizza did not take long to come out. The texture and crust of the pizza were perfect. I ordered this pizza at 6:30. My pizza wasn't ready until almost 8pm. This place should have a beeper system to let you know when your pizza is ready. I went up when they texted me my pizza was ready but when I went to get it, they said it needed more time. I went back to check on it and they told me someone took my pizza. When I asked for a refund, they said they couldn't refund me because they didn't have access to the computers to give me my money back. I finally got the pizza at 8pm and it was like warm. I will never order from this food cart again. Go to Fabos Tacos because they will have your order ready in 10 min or less. Get it together Proof Pizza! Really enjoyed our first couple of visits here. The thin crust pizza- cracker crust- was outstanding. Very light and crispy. The cheese sticks were fine, nothing extra special, not bad either. Good. The cheese stuffed breadsticks were amazing. Good with marinera or ranch. Met the owners first time. Really nice friendly people. They were not there the second time. This was technically my first time having Chicago tavern-style pizza, but it seems very similar to the pizza I grew up eating in Ohio. We had a sausage pizza and a cheese pizza delivered. This is definitely a pizza style that you're going to want to reheat in a skillet to re-crisp the bottom. Bumped it from a 7.0 to 7.8. I think Proof did a good job with this style of pizza, I just think this style can't really get above an 8/10. It's a good party pizza or pizza for watching sports, but imo it can't match up to the other pizza styles. read more

Very disappointing. We've been missing Chicago Thin crust Pizza ever since we moved to Portland OR in 95. So, when I heard there was a new food-cart that was from Chi-Town and making Chicago Style Pizza I was so excited. This may have been a bad night but this wasn't even close to being a true Chicago Thin Crust Pizza. First of the crust was disgusting, yes it was thin and it was cut in squares instead of pie shape but that's where the similarities ended. It was under cooked and was so "floppy" I had to fold it (like a New York Pizza) and there was a river of grease on top. The sausage was OK but missing that fennel flavor the a true Chicago pizza has and the sauce was flavorless. Like I said this may have been an off night but I'm not likely to give it another try. read more

We were SO excited to have a Chicago thin crust pizza place in town. We were hoping the pizza would be decent but we were blown away by how much it tastes like the pizza we grew up in the suburbs of Chicago. Their Bosco sticks are on point and the mozzarella sticks are so good! HIGHLY recommend their homemade hot gardinera (another food we have been unable to find in the PNW). I'd just like to say WOW!! My wife accompanied me on a business trip 2 weeks ago to the Portland area from Chicago and we decided to venture out and explore. We found ourselves in Beaverton at the Breakside Brewery. We had grabbed a couple beverages and decided to grab some lunch as well. Amongst all the food trucks there was one in particular that caught my eye. Right off the bat the fire engine red Proof Pizza trailer appealed to us the most. Come to find out, the lovely couple backed by smiles that owns this truck are from the Chicagoland area and being from the windy city we were all in to see if they brought that specific midwest flavor to the Pacific Northwest. THEY CRUSHED IT!! Their pies are out of this world! We ordered some Mozzarella/Boscoe sticks to start and topped it off with the Wolff Street Pizza which left us utterly speechless. The flavor of the sausage, veggies and marinara was undeniably Chicago style. Such great owners and such a fantastic experience.
