There are not many places that offer tavern style pizza here in town. I'm glad that these guys are around and also in a convenient location for me. I ordered the Wolff Street- pepperoni, sausage, mushroom, onion, and green peppers. The pizza did not take long to come out. The texture and crust of the pizza were perfect. The pizza tasted great and was well seasoned. The people working their were super friendly. I would come here again when craving some tavern style pizzas.

I ordered this pizza at 6:30. My pizza wasn't ready until almost 8pm. This place should have a beeper system to let you know when your pizza is ready. I went up when they texted me my pizza was ready but when I went to get it, they said it needed more time. I went back to check on it and they told me someone took my pizza. When I asked for a refund, they said they couldn't refund me because they didn't have access to the computers to give me my money back. I finally got the pizza at 8pm and it was like warm. I will never order from this food cart again. Go to Fabos Tacos because they will have your order ready in 10 min or less. Get it together Proof Pizza! Show me some PROOF that you have better hospitality than you showed me tonight.

This was technically my first time having Chicago tavern-style pizza, but it seems very similar to the pizza I grew up eating in Ohio. We had a sausage pizza and a cheese pizza delivered. This is definitely a pizza style that you're going to want to reheat in a skillet to re-crisp the bottom. Bumped it from a 7.0 to 7.8. I think Proof did a good job with this style of pizza, I just think this style can't really get above an 8/10. It's a good party pizza or pizza for watching sports, but imo it can't match up to the other pizza styles.

Second time here, went out of my way to get a pizza for dinner. My 5 yr old daughter loves pepperoni pizza and we tried this just bc she saw pizza. Her we are for round two. A true chicago style pizza (not deep dish yall) this cracker crust and cheese over the pepperoni. Bravo. I believe i met the owner and she was awesome answering my questions and sharing their journey to open this spot. Please come and buy all the pizza. You will thank me later

I was personally not a fan. It had a good crust but the ingredients felt low quality especially the cheese.

Very disappointing. We've been missing Chicago Thin crust Pizza ever since we moved to Portland OR in 95. So, when I heard there was a new food-cart that was from Chi-Town and making Chicago Style Pizza I was so excited. This may have been a bad night but this wasn't even close to being a true Chicago Thin Crust Pizza. First of the crust was disgusting, yes it was thin and it was cut in squares instead of pie shape but that's where the similarities ended. It was under cooked and was so "floppy" I had to fold it (like a New York Pizza) and there was a river of grease on top. The sausage was OK but missing that fennel flavor the a true Chicago pizza has and the sauce was flavorless. Like I said this may have been an off night but I'm not likely to give it another try.

I think both had their pros and cons. The green curry felt like it embodied green curry on a pizzal however it was a lot of the same flavors. On the other hand the char siew had many different components, but felt less like a cohesive dish. Althoug hits hard to say what exactly makes char siew a dish, since it's usually just a meat. I want to say that the food is genuinely enjoyable and I think they bridge the gap between pizza and asian food well. However, while we were there they did forget our order and it was about an hour in when every other table started getting their food that we started getting concerned. That being said, the staff was friendly, and apologetic, and did comp our meal, but I thought i would mention this incident.

The food is much the same - you get something that looks like Nonna was at the range all day with her sauce (it's not gravy - no meat) and you came home looking like you haven't eaten in weeks: "I'm gonna fatten you up before you leave" and you walked out the door with a sub (sandwich, that is - not a submarine) that weighed the same as a newborn. We got three of those babies: a Chicago Beef (seal of approval from the orderer - only 'complaint' was that they had to eat it all in one day because the bread was quote too soggy to make it to lunch the next day - travesty), an Italian sausage (just as delicious when 1/2 was reheated the next day) and a Chicken Parmeroni (I thought somehow even better when 1/2 was reheated the next day) and I could have absolutely gone back the next day if it weren't for A. the leftovers 2/3 of us had and B. the meal planning we'd done for the week. I also grabbed a side of giardiniera because I will get it anytime I see it available and I inhaled it - I need to know if I can by it by the vat instead of the side cups because it too was similar to what I can find at home (about practically nowhere out here) and amazing!! I'm still upset I didn't take pictures though!

The other ingredients were solid as well...the cheese was smooth, the sauce was perfectly balanced and the small pepperonis had just a little more spice to them (we got (1) pepperoni and (1) pepperoni and ham). I hate to be "that guy" but we used to live in Brooklyn, NY (we loved Totonno's and Grimaldi's) and Massachusetts (we loved Regina), and we've struggled to get GREAT pizza in the 6 years we've been out here...now we have a go-to for slammin pies. I feel bad that this post doesn't include photos, but one of the pizzas didn't make it home and the other was attacked before I could get a good pic. Pro Tip: Each pizza feeds 1.5-2 people but if you're hungry, you could probably house a whole pie without regret.
