Its a large open space with a beautiful bronze of Ernest Hemmingway in a central commanding spot in front of the bar with a wall mural depicting the " Old Man And The Sea" as a backdrop which seemed fitting in his honor & set the stage for fun. Floor to ceiling bookshelves are placed strategically throughout the room to give it that cozy library , artsy writer vibe. It was fairly crowded, our particular bartender was rather brusque and neither helpful or that friendly. Because you can't actually see the cocktail menu until you actually make it up to the bar it's hard to know what you want and they want you to order quickly. Anyway, my husband, of course, had to have a traditional daiquiri , which was premade, not chilled and frankly boring and way too sweet. I on the other hand, tried an old-fashioned and it was delicious. Next we sampled a flight of the Papa Pillar distillery Rums , and a couple of them were absolutely delicious. then we moved on.... Quick tip, I guess try to look at their menu online so that by the time you make it up to the bar, you know exactly what you want. And don't order the premade daiquiri It's un impressive.

We walked in and ended up hanging out with a group of locals who worked around the Key West area. Everyone was incredibly friendly, gave us awesome beer recommendation...all of which were fantastic...and then started sharing insider tips on dinner spots and some of the best-kept secrets in the Keys. It felt less like stopping at a brewery and more like getting welcomed into the community. The beer itself was outstanding with plenty of variety, and we'll definitely be back tomorrow...not just for more recommendations, but because the beer was genuinely that good. Let's just say...the American way doesn't compare because the Cuban mojito was absolutely delicious! Crystal showed us how to make one from scratch and even made extra for us to try, which was such a nice touch. The original rum was smooth and delicious, but the coconut rum was next level fantastic. Before the tour, we enjoyed piña coladas and Key lime pie out front, which made the whole experience even better. This distillery is a must stop if you're in Key West. The owners, Paul and Crystal, are an amazing couple fun, welcoming, and super cool. Honestly, I wouldn't trade our visit here for any other distillery. Highly recommend!

We stopped in just looking for a sample and were able to take their distillery tour to learn more about how their rum is made and got to sample LOTS of their rums. Overall, everyone was very kind and friendly. The tour guide was extremely knowledgeable about rum and even taught me some things about rum that I didn't know before!
