Stopped by this modern steakhouse in Bend to celebrate my partner's birthday! We had a reservation and were quickly seated. Our server was not personable at all, which was a bit uncomfortable at times. Inside is very chic and it felt like the right setting for an intimate birthday dinner. We started our meal with the hush puppies, and we each ordered a steak and side. I opted for the hangar steak while my partner went with the Kansas City, both of these cuts were new to us. The hangar steak was nice and tender with a meaty flavor. It was delicately topped with finishing salt and each bite was decadent. For our starter and sides, we both raved about the hush puppies and corn ribs - so creative! We'd skip the papas bravas next time - nothing special. I also ordered the cowboy butter but honestly the steak was plenty flavorful on its own. No enhancements needed. Overall, I'm glad that we got a unique steakhouse experience. RBC will nickle and dime you for everything on the table, which is understandable for the quality, but the service is so lackluster and stall. Storytime: my husband, tallest son, and future DIL were in Bend this weekend for a concert Friday/Saturday (WSMFP!) and on Sunday they were having trouble deciding where to go for a nice dinner. So much trouble that my men got hangry... naturally they called mom for assistance. Yelp led me to RBC, so I called to see if they could accommodate a last minute reservation. JoJo answered the phone and we laughed about how motherhood is never-ending (in a good way) and she managed to slot them into an immediate table. By the time they arrived, she had bread on the table and made them feel like VIPs (thank you lady!) Garrett came over as they were perusing the wine list and helped with selection (thank you sir!) & chatted with them for a good while. All three of them said it was the best meal they had on the trip, and my hubby told me this morning that he thinks it was the best restaurant he's ever been to & the most perfectly cooked steak! High praise indeed. They also shared (and loved) the escargot, salad with blue cheese, popovers, squid ink linguini, and the mixed grill. A lovely family-style experience. I was jealous from afar! I hate to make this update and remove a star, but I think I restaurant of this caliber needs to be good at just about everything. I've had mostly great meals here, but recently I tried their shrimp dish, and I have to say it was not tasty and very underwhelming. It's presented as a main entree, but the portion size was TINY... just 4 medium sized shrimp on a wooden skewer and a lemon wedge. Even if there were an appetizer, the presentation was lacking to me and almost a little silly. RBC is better than this... from their steaks to pork and their salmon (delicious) and popovers. Third visit--we bring all of our friends and family here when we're in town. The service is exceptional! I mean, exceptional! The sommelier, the hostess, the server and entire staff. Exceptional! We brought a friend for his birthday because he wanted a great steak. They ordered the porterhouse because it would feed the 3 steak eaters and had the cuts they wanted. Unfortunately, despite the med rare order, the filet was well. The other side was med rare and tough, but for $90, you kind of expect perfection. What was perfect? Brioche popups, radicchio salad (I could eat this daily for the rest of my life), salmon (mouth is watering thinking about it), corn ribs (pretty good but I won't get them again). We shared the lava cake--perfection--and the butterscotch pudding cake. Cocktails and wine were sublime. I hate to withdraw a star, but a $90 steak should be perfection. We'll be back for sure! Just dropped into RBC right off my flight from Reno and it seemed like best choice in the area for a travel day dinner. Man was it.... Food and service was absolutely incredible, the Bavette blew all of my expectation out of the water. That was an incredible meal and the scallops specifically easily rivaled my favorite Michelin recommended Japanese favorite in San Francisco. The brioche popup was fantastic in itself as a starter and I had it side by side with the bacon wrapped date. The friggin date was even spectacular. This was a knockout meal for being all the way up in Oregon. Not only can I not wait to come back, I think I'm comin back in 2 days... Overall, great experience. Our server, Cody was great. Very knowledgeable regarding pairings and was great with the timing. The food was delicious and they were thoughtful in accommodating us with a good table for our disabled toddler in his stroller. We were celebrating a special event and had a $400+ meal between 4 adults, still finishing our food and drinks and were waiting for our check when a female hostess (blonde with glasses) proceeded to rush us out and essentially tell us we needed to wrap it up and get going because the next group had just arrived. Wow! The food here is a 10/10. It's pricey but worth it for a celebratory evening. They'll even offer you a complimentary glass of bubbly! It's quite busy so be sure to make a reservation ahead of time. Rancher Butcher Chef is a classic steakhouse, offering high quality meats, seafood, and sides. Their cocktail and drink menu is impressive as well! Portions are large and meant to be shared with the table. We ordered the rib eye steak medium rare and the cedar plank salmon with papas bravas and brussel sprouts as sides. The steak was perfection; you don't even need the à la carte sauces! The salmon was also yummy with a crispy outer layer and the salsa verde. You also can't go wrong with the potato and veggie sides. We will be back to try more off the menu. We had a team dinner for 10 and struggled to find a spot in Bend that could accommodate a large group. A friend recommended RBC, and from the first interaction, the team was incredibly responsive and helpful -- they secured our reservation three weeks in advance. We arrived on a Thursday evening for a 5:30 reservation and were seated right away in a great location. The atmosphere was lively and fun. Shelley and the staff took excellent care of us -- attentive, friendly, and always checking in. We enjoyed cocktails, wine, and shared a variety of appetizers and entrées family-style. Everything was delicious and well-prepared. One issue we encountered was with a dairy-free guest in our group. Despite noting the restriction, several dishes arrived containing dairy. While the team corrected, it was surprising that the oversight happened multiple times. Overall, the food was flavorful, the service was strong, and our out-of-state guests loved the vibe. It doesn't get any better than Rancher Butcher Chef. And I'm not even a meat eater. Our party of 3 were all blown away by the ambience, service and food. When you entered you are greeted by 3 large coolers filled with steaks in various stages of the aging process. When you step around the corner you enter a room so filled with upscale rustic charm that you feel you never want to leave. In addition to the many tables, there's a long chefs table where you can watch the masters creating their art. The menu has a very broad and interesting selection of appetizers and salads, making it difficult to narrow it down to just a few. We tried the burrata which surprisingly was served with broad beans. It was good but probably the only item I wasn't enamored with. The little gem salad with citrus and a sprinkling of blue cheese and hazelnuts was delicious. For mains we had the scallops which came with 4 plump scallops, and the crab cakes. Our third person had the Teres Major steak which was a huge hit. I tried it and it was tender and delicious to the point it almost converted me from a pescatarian to a carnivore! For dessert we had the hot chocolate lava cake with ice cream. Wowza! We kept being told we just HAD to eat at RBC when in Bend-and now I know why! From stellar service to the chef counter seating it's a great experience. Watching the magic that takes place in the kitchen is amazing. What a beautiful dance they performed in that kitchen! We began with a refreshing watermelon cucumber salad. Our sides (family style) were a corn rib and loaded baked potatoes. I had never had a corn rib and now don't think I want to eat corn any other way! The barbecue and spice wa the perfect amount of tang! I opted for the scallops as my main. Hubs had the salmon. Both 10/10. We tried the lemon curd dessert which was light and flavorful. This was my fourth time visiting RBC and they always deliver. Hands down a must try when visiting Bend. Reserve a table well in advance because they book up every night. This was my first time without a reservation, but it was only two of us and we were lucky to get seated right away at the bar (fist come first serve at the bar). I would recommend the broccolini caesar, forgot to take a pic before eating it, but this was probably the best Caesar I've ever had, bacon wrapped dates (not pictured) - can't miss, potatoes bravas are a must and one of my favorite things on the menu I get these every time they're somehow crispy but also soft and dunked in the sauce. We also ordered the ribeye med rare which was great and tried the burger for the first time. It was one of my favorite burgers I've ever had. The chocolate lava cake is always good and I'm not even a big chocolate cake person. 20 stars out of 10! Looking for a quality steakhouse while on vacation in Bend & found this place. Showed up without a reservation and luckily they had two seats at the chef's bar and what a treat that was! My seat was next to the expediting area which made watching the finishing touches of each plate happen along with a great view of all the workings of all the line chefs - a foodie & food lovers dream. The food: from start to end, we weren't disappointed or let down with each bite. We started with the bone marrow appetizer - the foie gras butter rubbed toast was a nice addition and the onion marmalade gave a nice contrast to the bone marrow. The steaks the range of selection is impressive and every steak I saw cooked and the two I tasted were perfectly cooked and needed no sauce (they have an impressive steak sauce selection, but I enjoy my steak on its own). For our side, we go the corn ribs and I no longer want corn any other way. Dessert included limoncello and the cheesecake that rivals the lightest and fluffiest cheesecake I've ever had (from Cascones in Kansas City). The "burnt" portion also complimented the light sweetness of the cheesecake. The house made limoncello was amazing. Our waitress Stefanie was attentive and always ready to provide insight. My husband and I have had the pleasure of eating here 3 times now in the past few months and I promise you, they will never disappoint! It is definitely our favorite dinner spot in Bend! I would recommend making a reservation if you want to be seated at a table, there is usually a line at the door for walk ins when they first open. With that being said, you may be sat at the bar if they reach capacity but that is NOT a bad thing - this last time we sat at the bar and had a wonderful experience! The food is 10/10 - our favorite is their hangar steak! If you are in the mood for an appetizer the poutine fries are also 10/10 ! The prime steakhouse of Bend, OR, and did NOT disappoint. As a tourist or local, RBC is one place you have to visit, whether it's for the sustainability, vibes, or renowned Portland chef. Reservations are highly recommended because it seems everyone in Bend is absolutely loaded. The dining environment felt modern and spacious, yet with a cozy feeling from the intimate lighting and warm wood colors. Service was very friendly, as our server was able to describe and recommend the different cuts of beef to us, and which ones fit our taste buds. It seems like every server in Bend is so nice, and this restaurant topped the list. For starters, we ordered olives, hush puppies, little gems and apples salad, potatoes bravas, and 2 steaks, ribeye and bavette, both cooked medium. The hush puppies are essentially cornbread that's been fried. I would order this, but only as a first timer here just to see what it's about. They are crispy and a little sweet, but would not order again. The salad is a really good starter before the big steaks. The vinaigrette is sweet and sour and refreshing. The potatoes bravas are were warm and soft, and serves as carbs to fill you up. The ribeye was a very soft and tender cut, something people who have trouble eating harder foods will be able to enjoy. The seasonings were perfect, by far the favorite of the 2 steaks. The bavette was a little more tough and dry, but still really good. It was my favorite as it was better "value" with a similar taste and texture to the ribeye. The sear was a little too salty for my taste, but was easily solved with a drink or potatoes. As long time fans of six time Beard recognized Chef John Gorham in his days as owner / partner / operator of several Portland restaurants like Toro Bravo, MEC, and Shalom Y'all (our fav) and others, we knew food and hospitality would always be top notch. And so it was our expectation at this Bend located eatery which he opened, along with wife Renee and a partner, after they departed Portland after pandemic times. Before I say "ditto that" to all others who left 5 star reviews here, I want to insert that while John makes sure the kitchen hums, it is Renee who is the genius-at-large for the stellar hospitality and service that has been hallmark of the Gorham enterprises. So it is here and I was happy that she was in house, behind the reception desk, when we were at RBC for dinner so I could tell her thank you for the RBC experience and all the others she contributed to over the years in our many dining experiences at Gorham eateries. Many because we lived in Bend for about 18 years and often went to Portland to eat, often celebrating happy events with a meal at one of the Gorham's Toro Bravo Hospitality family of eateries. TIMING IS EVERYTHING because we moved away from Bend (to flee winter snow and tourist hordes in equal measure) just a couple of years before RBC opened and during our years of coming back to town it was for sad situations of helping care for or visiting parents who were both in their last years and ill. So it was never the right timing to get to RBC for a dinner. On our recent trip we were grieving my dad's death of a few weeks prior and taking care of things in Bend and we so appreciated the healing of spirit that can come from warm, professional service and great food combined. RESERVATIONS are essential to be sure of a table. They do take walk ins but I'd say unlikely a table is easy to get even early on. Our reservations were for 5:00 and it seemed full not long after that. NOISE levels here are substantial with hard surfaces and high ceilings. If there was a magic wand I would wave to address just one thing, that would be it. My husband and I were sitting at a two top near the open kitchen (fun to watch) and even at a small table it was sometimes difficult to hear each other. PRICE points are high for menu items but it is still possible for a couple to eat really well for about $130, before tip and after the modest 3% health & wellness fee applied to the total, if our experience was typical. I can also see how it would be possible to spend that or more per person ordering different things. SERVICE was so splendid that it was easy for us to add a 30% gratuity. I worked in this industry during the long ago of younger years and appreciate how extraordinary it is. The main server knew the menu, could answer questions (including mine for ingredients in chicken liver mousse), make recommendations and perfectly timed the delivery of each item, most delivered by runners. Service like this makes food even more delicious. MENU is steakhouse'ish focused and while we don't eat beef there were lots of things from us to choose from and each was perfect. Endive salad ($12), Chicken Liver Mousse ($13) - outstanding, don't miss it, Mussels Frites ($24), Gambas ($19) - shrimp in Spanish style, Corn Ribs ($11), Pedro Ximinez Sherry Affogato ($14) for dessert. All shared plates. Glass of Cava for me ($15) and Prescribed Burn cocktail for hubby ($16). Total with 3% health & wellness fee, $131.84 SEATING OPTIONS include a few tables outside, high seats at bar, looked like some tables in bar section, high but not bar height seats at chef's counter (where you sit side by side) and standard height accessible tables and chairs as well as banquette seating along walls and in middle of room. ACCESSIBILITY: I have had multiple sclerosis since college years and these days I am on wheels when a diner at a restaurant. When I made our reservations I talked with someone who assured me the chef's counter was chair height for me to use. It's not. So once I arrived and they could see why it didn't work for someone who can't boost themselves up onto the higher chair seating, although they were busy they quickly provided a regular height two top for my husband and me near the kitchen so we could still enjoy watching the kitchen at work. If you also need to consider accessibility you'll want to know the front door has ramp up, the space is all level inside and there is ample clear floor space. LOCATION & PARKING: West side of Bend near NW Crossing neighborhood in The Grove food hall complex, outside access anchor. Street parking and it can be a bear at busy times. NOTE: Sometime in late summer or early fall of 2024, the Gorhams will be opening a sort of tapas bar in downtown Bend. Sides were sautéed spinach and baked potato. Really good radicchio salad with shaved Manchego and lardons to start. Loved it. If you're looking for a really nice dinner in Bend, this is somewhere that I would recommend and tell my friends to check it out. I thought they did a great job with the layout with having a beautiful bar and being able to see a little into the kitchen. I thought the food had great flavor and was presented very nicely. My only critique would be with the sides. I thought they would be more "family style" but the portions weren't really made for that. A little small for 2 people. What we ordered / if I would recommend: RADICCHIO Salad / yes. Very light flavor and the bacon was awesome. 7 DAY DRY AGED BAVETTE / no. Not bad but preferred the Teres Major TERES MAJOR / yes. Great taste, flavor, and value. HORSERADISH CREAM sauce / yes but not necessary for the steaks. Great steaks don't need sauce. R.B.C. 'BAKED' POTATO / yes. I'll start by saying you MUST make a reservation - probably 2-3 weeks in advance but maybe even 4 weeks. In our case, we made a 7:45pm reservation 4 weeks in advance, with dining seating (not bar or butcher table) because we had a date night we were really looking forward to and they are infrequent with two kids at home. On the day of our date night, a beautiful 85 degree day, I received a text that said "Are you looking for an outdoor patio table tonight? It's looking like a beautiful night out there! Outside is first come first served so I'll get you a patio spot closest to [your reservation time] as possible." This leads one to believe you're guaranteed a space inside and if one of the 5 outdoor tables is available, you may have it. Upon arrival, as the Oregon weather can be quite sporadic, it was thundering, drizzling rain and occasional instances of heavy showers. We obviously thought it's a given that we would be seated inside. Not exactly the case. A quite awkward situation occurred where nobody was being seated outside except for us because there was "no availability inside" yet we still had a 4-month reservation for dining seating and should have some kind of priority correct??? Thankfully one table outside is covered by an overhang so you only get hit with parts of the rain when it's really coming down, which is what we ended up doing and the rain thankfully let up for the 2nd half of our meal. Overall, we got the vibes that we were an inconvenience to the restaurant and they did have a large 16-top party that came in as we arrived so it was a bit of a zoo and the staff seemed overwhelmed. Our waitress was terrific and I think made the best of a very awkward situation. The food was also delicious and amidst the chaos, it did get served in a reasonable time frame. Is it the best restaurant in town - which is what we were expecting based on making a reservation a month out and all of the glowing reviews - no it is not, and there are a multitude of places in Bend, OR where you can have a more seamless dining experiences, with terrific food, and probably for a fraction of the price. Our bill was around $320, we tipped well, and I still just can't get over the fact that we were treated as a wrench in the operations of the restaurant from the moment we arrived. You only get one chance to make a first impression when it comes to dining and speaking as a couple that really hopes their dining experience goes well on the few date nights we get out, I think this place royally dropped the ball. When you get the bill and realize you've been charged an additional fee so that the employees can have health insurance, you have to ask yourself if the owner simply doesn't understand what the term "the cost of doing business" means. What a lovely surprise! I'm a huge fan of a good steakhouse. And although this had the feel of being back in LA (the decor was tasteful but minimalist) the food was even better than most steakhouses in LA. The table had the popups, arugula salad, rib eye, salmon, carbonara, spinach, baked potatoes and kids burger. The pop ups (3-small) were light and fluffy, served with a side of butter. The salad was lovely, although I think the dressing or almonds got lost in the salad, so balance could be improved a little. The rib eye was perfectly cooked and tender as can be! It had that salty caramelized seared outside and succulent inside. The salmon was just as good! Preparation was excellent on both mains! The pasta was not the favorite of the table but was appreciated. Spinach was good, but also not the favorite. The baked potatoes (3 small) were very good and complimented the rib eye well. If I could give it 100 stars... I would!! My husband wanted to try this place, he was adamant. I checked the menu several times and wasn't intrigued, but I accompanied him anyways. The steak was the absolute most incredible, juiciest, mouthwatering steak I have ever tasted. It was seasoned and cooked to absolute perfection. We ordered the baked potatoes as a simple side, but we were incredibly impressed with them. They were baked to perfection with a slight crisp to the skin and perfect texture on the inside. Others at our table had the escargot (which I previously swore I would never try again after not liking them at another restaurant), I got convinced to try theirs and they were incredible garlicky buttery melt in your mouth. And last but certainly not least, the poutine!! My kids ordered it, and it did not disappoint!! Only bummer ish thing is with it being such an expensive restaurant it would be nice to feel a little more secluded with your party, we were seated at a large table in the middle of the restaurant next to other diners, didn't prefer that. While the prices were double what I would normally pay for a steak, I was very hungry and they listed a porterhouse (my favorite cut). When I walked in, I was greeted politely and asked something that allowed me to answer that I wanted a porterhouse and as I was being escorted to the bar, the staff member said they would check to see if a porterhouse was available. The bartender took my usual order for a Tanqueray martini, up with olives and a bit dirty. The staff member returned to inform me they did in fact have a porterhouse. But it was the bartender that took my dinner order. Just the steak. $89. The martini was wonderful. "nectar of the gods.", as my Uncle would say. The steak arrived pre-sliced and off the bone. Bone was on the plate...first time I ever had a steak served that way. Almost made me feel like a toddler. Did I appear unable to cut my own steak? I suspect it is a technique to present the meal, but I've been to Morton's in Irvine a couple decades ago and they didn't slice up my porterhouse. Then again, it was hanging off the plate. So maybe it was as Katie guess over the phone - that they wanted to make the steak look bigger. It was just the right size. As hungry as I was, I can't eat as much as I could when younger. At the bar, you have a nice view of the outdoor patio. The décor is ranch oriented. But a nice, new restaurant in a very modern building. I was very happy with the meal and the martini. Brought the bone home as a treat for our fierce adopted rat-terrier mix. She made about an hours work removing all the meat from that bone. read more

Amazing food experience in Bend. Had reservation for 5 and they were able to accommodate 1 additional person at the last minute. The drinks, food and service were everything I want from a wonderful dinner. The dining area inside was lively and cozy.. and they have seating outside by fireplace. Appetizers were all spot on, salad was tasty and main dishes (rib eye, scallops, pork!!! (best dish and i'm not even a fan of pork), Make reservation and must check this out if you like a proper steak Extra star for service not only throughout dinner service but also, without me knowing.. one kid wondered towards end of dinner to nap by the fireplace and was offered a blanket. Absolutely 5 star. The ambience, service, drinks, and food were simply fantastic. I will be coming back to this wonderful restaurant every time we come back to Bend. You can absolutely tell the chef and the entire kitchen staff takes everything very serious. You can hear and see them work each order to perfection.
