I went with a grilled chai tea latte and an order of French toast. The chai had a layered spice profile -- hints of cinnamon and cardamom came through clearly without turning sugary. It had a comforting warmth and a smooth finish that made it easy to savor slowly. The French toast was beautifully prepared. Lightly crisp on the outside with a soft, custardy center, it had a subtle sweetness that didn't rely on drowning it in syrup. You could tell care went into the preparation, from the golden color to the balanced texture. The café itself has a modern yet welcoming design, with a calm atmosphere that makes it a great place to sit and relax. The team behind the counter moved efficiently and were happy to answer questions about their roasts. Ruby Coffee Roasters left a strong impression -- thoughtful drinks, well-made food, and a space that invites you to linger a little longer.

I predict it is something that will eventually be viewed as a timeless treasure of the community, and it should be celebrated, cherished, and most importantly utilized. You are instantly greeted by a friendly face behind the counter the moment you walk in the door. Sometimes, that person is the owner of the Edgar Grind, an entrepreneurial mother of a local family who decided that Edgar deserved something nice. And boy did she deliver! The coffee is outstanding (I recommend the lavender latte personally). The food - let's just say they are constantly trying new ways to entice you into having a snack. One scroll through their Facebook posts and you'll instantly be hungry. Once you get your food and your drinks, you have plenty of places and environments to sit in. Tying back to the beginning of this review, the shop is decorated with many historical photos and captions of what has made Edgar great in the past. It is truly fitting, as the Edgar Grind is doing great things today and will undoubtedly join them in the pantheon of what has made Edgar such a special place to live, play, and drink coffee.

Our Specialty Lattes are inspired by our barista's favorite drinks as well as some local legends. The Sweet Sinz is a delicious local honey and cinnamon latte named after our very own football Coach Sinz who has lead the team state for years. We also have the Sammy Special and Eternal Lattes which are named after our loved ones who are no longer earthside with us. Food-wise, we also have our eggers (Sounds kind of like Edgar, right) these are amazing breakfast sandwiches that are ready for you to customize.
