It was served hotter than a Gibraltar should be, which made it difficult to pick up the coffee's sweetness and flavor nuances early on. The heat overpowered the cup and muted much of what the coffee had to offer. As the drink cooled, more character started to come through, but the body and texture began to thin out through the middle of the cup. The drink became noticeably more watery and didn't retain its crema and microfoam particularly well, causing it to lose some of the structure and richness it had when first served.
