If you follow me on Yelp, you would know I consider myself a barbecue connoisseur. I've tried barbecue from Chicago, Texas, Kansas City, California , New York to Nicaragua. There's always a debate over prep and cooking times. I'm on the other side of the argument, I believe everything starts with the quality of the meat. Fatty meat will ruin the best prep and smoke. I've visited this location three times on my visits to Colorado. The meals are always fulfilling. They do an excellent job on the flavor profile. I always order the rib tips, it's a Chicago favorite. They sell them by the pound, which was new to me. I would suggest two pounds for two people if you care for leftovers. The tips are not 100% Chicago style however they are a slice of home. I coupled the tips with a slab of Spare ribs. I home the bring in Baby backs soon. The ribs were cooked extremely well. The meat did not fall off the bone, it needed just enough pull to come apart. Over cooked ribs fall apart and the meat right off the bone. There's a thin line between just right and over cooked. It takes skill to get it right on a smoker. The first visit we ate in, the ambiance is cool. Very laid back place. The last two visits were take out. Either way, eat well my friend. The ribs are waiting.

The air smells like bacon or earthy and slightly sweet! BBQ pulls me in with the smell of hard wood burning and the smoke billowing through the air! It's a true sensory experience. If you are a bbq fan, then you get what I mean. Then this place is for you! We travel the country trying bbq and so far anytime we are in the Denver, CO area (several times a year), Rolling smoke BBQ is always on our List for dinner at least one of the evenings. I'd recommend the smoked ribs and south side rib tips. Delicious! There is also a wide variety of bbq sauces to choose from that will stand up to a variety of the most discerning taste buds. The team here are always friendly and welcoming. Medium sized restaurant will bar top and tables. They also have a small bar and TVs if you need to catch a sports game on. Thanks to the team for feeding us tasty food! Until next time - keep smoking!

Brisket is dry, coleslaw tastes grass with pepper on it, but the greens were pretty good. Two out of five stars.

I think I hit the holy grail this week! I found this place while 1/2 way enjoying a hotel dinner when a patron came in for a night cap and couldn't stop raving about Rolling Smoke. I am a BBQ snob so you know I had to try it. Located in a strip mall and as soon as you get out of your car you smell heaven. Got a chance to go over to the heaven and saw the pit master hard at work. Inside the restaurant is very clean and the staff here is awesome. We did come a little later so they were out of some key items but I don't blame them once it's gone it's gone. We asked the staff member and he put together and amazing platter packed with pulled pork, sausage, rib tips, chicken wings and jalapeño corn bread. Side that were coleslaw, potato salad and baked beans. All I can say is everything was amazing and we left in a meat coma. I absolutely loved this place and with how picky I am about BBQ this was the spot! I will for sure be back.

Obsessed with the pulled pork mac and cheese! I wish they sold the bbq sauces to go because I LOVE THEM ALL. Some of the best sauces I have had and so many options!

Amazing food! Super delicious. Friendly and attentive staff. We came to Denver to visit family and decided on barbecue for our first night in town. We had a group of 7 so we ordered a ton of food and shared everything. The ribs and chicken were everyone's favorite. We had chicken wings that were cooked to perfection. All the different BBQ sauces were great but personally I loved the habanero it had a great depth of flavor and a nice kick. The gumbo was delicious too! We walked over to the smokers and the friendly chef explained the process of smoking meats. My kids loved that part the best! It was very interesting. Great art work on the walls too. We will definitely return! 5 stars!!

Alas, I should have heeded more the rating than the enticement of the business' name. And then we…read morewalk in on a Sunday night and it's completely empty, not one table with patrons. I would have walked out and gone somewhere else except I had two disabled folks with me and one ornery sibling who would have balked. That being said, the place itself has been designed pretty great. Excellent tables and chairs and even some high top ones. Very, very clean. Area where there was BBQ sauce and some garnishes was alone by itself and coulda been dressed up a bit more to look more enticing. Now, the food. The burnt ends, unbelievably, were not true burnt ends, at least in my book. They were cubed meat with either side burnt but they were not ends. Burnt ends need to be almost all burnt around except one edge. There were only SOME of them like that. But, ok, fine, how's the meat, how's the cut? Most of my pieces were very tough. Cut wrong or with some gristle. Not a tender bite. But I also ordered brisket. Although not as good as I'm used to, at least it was tender and flavorful. But it was sliced thin and shoulda been thicker slices with more burnt edges. My sister liked.her chicken although it looked a bit dry, my uncle seemed to really enjoy his ribs. My brother didn't seem to be as picky as me about his burnt ends, he said it was good. So perhaps my standards are too high. Sides of Mac & Cheese, creamy Cole slaw, rustic fries, and loaded mashed potato were decent, but the charred corn wasn't at all as I was expecting, just corn in a lot of spicy sauce and I would skip it. The toasted bread on the side was altogether uninteresting. My uncle did like his Breckenridge Beer Amber Ale. And the fellow at the front was really nice, although interesting it was just him, and then two cooks in the back, not what I'm used to at most bbq places which usually have a bustle of people behind the counter. But then, again, the place was empty, although had a decent amount of "to go" business. This place feels like it may not last -- it's in a great location and should have had way more people dining in -- and I think the owner needs to invest in another bbq chef who can bring a bit more magic to the food, especially the burnt ends, the brisket and the sides. I was torn between 3 and 4 stars -- were it just me it would be 3, but with the rest of my party, a 4 -- plus the cleanliness and bright atmosphere and great service, a 4 is deserved.

Darn!!!!!!!! I really wanted this place to be outstanding....... There was a line of 10+ people…read morewaiting to order. However, there were only a few people sitting at tables. Um??? They seemed really overwhelmed and it was almost 2pm (way after lunch). I noticed one person in the kitchen, one delivery food to tables, and one guy on cash register. Pretty sure he was the manager because he often left the register to deal with little problems (yes, we all still in line waiting). Well, I waited 15 minutes for my to go bag and left (without checking the bag... Dah!!!!). ALL 4 of the sides I order didn't make it to the bag?? Ugh!!! Wanted to try them!! The food was not bad but seemed expensive for what I got (a bit cold). I sure hope this place figures it out. I'd like to try again but don't want to be disappointed and hungry on next trip.

Even though every table was full by 12:15, the staff was hustling. Our server checked on us multiple times and our Hoffens Burgers were excellent. There was plenty of goat cheese, avocado and roasted red pepper. Definitely crave worthy! I loved the curry crema dipping sauce and ate it with my fries and burger. It was very loud for about an hour and then the place began to empty out and the noise level was more tolerable. I noticed they had some specialty cocktails that were new so I'll be heading back soon to try those. Quick additional tip: We tried to go to dinner at 5pm tonight (granted it's a Saturday) and even though the restaurant looked almost empty we were told it would be an hour wait for our party of 6. I feel like we could have eaten and been out in that time but we weren't given a chance. The hostess didn't seem very sorry to see us leave so I'm rethinking coming back any time soon. First time not being welcomed there. So my tip is - even when you think a restaurant is casual - MAKE A RESERVATION. (I really didn't want to eat there twice in one week anyway ;)

Which is a little misleading, cause the meatball section of the place has more menu options since they merged together. That's not a bad thing, cause their fancy sodas and sausage sandwich are pretty good, reasonably priced for the place, too. The only real hiccup here was constantly waiting for service. It was like the workers are not well adjusted to the dark and we end up hiding in plain sight.
